A bravely accoutred style, from Barringwood's favourite plantings of Pinot Noir, dressed in bright cherry baubles and raspberry robes, framed by curls of cinnamon sasafras oak, underpinned by a bustle of soft taffeta tannins. It's all little vineyard fruit, just a small hectarage of fancy clone Pinot, passionately nurtured by locals born and bred, made to an old fashioned regimen of tranquil winemaking. A measure of whole bunch clusters and extended term in fine French oak, contribute character and complexity to a prepossessing palate of persimmon, plumcot and peacock tails.

Bay of Fires are artfully crafted to achieve the velvety seamlessness adored by true Pinot files. The small but highly accomplished winemaking team are driven by a philosophy to capture and retain a tight weave of the distinctive and intense fruit expressions from individual vineyards, preserved within the very bottle. After many years developing the finest vineyards across the length and breadth of the apple isle's premiere viticultural precincts, Bay Of Fires can collate parcels from the choicest sites, from which to assemble a spectacular construct of Tasmanian Pinot Noir.

The strength behind the Bay Of Fires label lies in the excellence of its viticulture, great vineyards planted to the pick of Tasmania's finest terroirs. Moderate yields and cool growing conditions result in wines with outstanding varietal intensity, elevated fruit spice and mineral complexity. Priority is given to assembling a rich cepage of clones grown to treasured sites along Tasmania's east coast, Coal River and Derwent Valley. Whole bunch pressing and a separate handling of each parcel right through to completion of ferments builds a wine of great complexity. Time spent in a high proportion of new French barrels infuses the wine with a judicous integration of oak.
 
Brilliant deep purple. Complex aromas of sweet ripe red berry fruits feature with star anise, cinnamon and floral spice. Elegant yet supple palate, cherries, rhubarb and spice, a length of remarkable power and intensity throughout, all framed by ripe, flattering tannins, finishing on a flourish of graceful marascino fruits and fragrant spice notes.

Bellarmine is a fully endowed, auspicuously high quality vineyard that yields restrained, savoury wines full of good flavour and fine balance. Since inaugural vintage, Bellarmine has been recognized for its stunning wines which have earned impressive critical acclaim. The property is an elevated site with gravelly laterite soils, established by Dr Willi Schumacher and his wife Gudrun. The couple are passionate about great wine and searched the world for a great site to plant vines before settling on the sensational property which is Bellarmine Vineyard.

Harvested at optimum flavour levels when the tannins are ripe and the seeds are brown, determined by the winemaker taking regular samples in the vineyard. Fruit is managed carefully to ensure a maximum yield of five tonnes per hectare, to achieve even ripeness and maximum quality potential. Crushed and destemmed gently to allow some whole berries through into the ferment, the must is inoculated with a neutral yeast. Once the cap of skins has risen, the juice is pumped over the skins twice daily so that colour and flavour is extracted from the skins as the ferment cools. Once complete, the wine is racked and seeded with malolactic bacteria. Matured fourteen months in extravagantly new French oak barriques.
 
Deep purple red. Rich ripe aromas of mulberry and chocolate with spicy oak and plum fruit characters. Rich and savoury plum and berry fruit on the palate are supported by fine tannins. In the Rhone style, a rich yet elegant, cool climate dry red Shiraz. In Rhone fashion, elegant yet rich, cool climate dry red style, a match to entrecote or fillet du porc.

Bellingham Main Ridge Pinot Noir

Bellingham Estate's Main Ridge vineyards are dry grown and planted to mature, low yielding vines, a wonderful accord of auspicious microclimes and exacting viticulture which creates the most intensely flavoured Mornington Pinot Noir. Hand picked grapes are treated to a cold maceration and wild yeast ferments in open fermenters, followed by a term of age in a mix of seasoned and new French oak barrels. A delicate Pinot Noir of ripe red cherry and freshly milled spice, layered with fine savoury fruit characters and supported by a weave of seamless, velvet tannins.

Good Pinot Noir requires a judicious measure of oak to frame the fruit and provide support, Quercas means oak, a reference to the essential influence of barrel age as it serves to coalesce all parts of the wine into a seamless, velvety experience. Pinot Noir also needs to articulate a sense of place, Bellvale's vines are trained to grow deep root systems, extracting the subtle locution of soil and infusing fruit with the unique expression of terroir. Quercas Vineyard makes a pastoral style, ripe with freshly picked cherry, savoury with barnyard and smoked, seasoned game.
