Circe Hillcrest Road Vineyard Pinot Noir

Dan Buckle and Aaron Drummond are Mornington born and bred. They work at the illustrious Mt Langi Ghiran but find time to share the husbandry on a precious three acre vineyard on an elevated northeast ridge at Red Hill South. The Messrs Drummond and Buckle take a decidedly Burgundian approach to processing their Pinot Noir, ferments of exclusively whole bunches are foot stomped over the course of a week before filling to small oak casks. Structured and eloquent, pastoral and intense, small batch, superior vineyard Mornington Pinot at its finest.

Vines were established on a chilly slope of deep red basalt volcanic soils along Hillcrest Road in 1993. Closely cropped at a little over one tonne per acre, the property yields a frugal harvest of awesome Pinot Noir. The tight, small bunches, physiological ripeness and immaculate skins are ideal for traditional whole bunch winemaking. The fully stemmed fruit is treated to a course of maceration, as ambient yeasts initiate a week of ferment, followed by several days of boots on pigeage. Batches are pressed into a selection of French oak barriques for completion of malolactic and a year's maturation on full gross lees without any racking, to preserve the integrity and eloquence of a tremendous site.
 
Purple scarlet red. Fragrant cherry ripe aromas, red apples and rhubarb notes, sasafras and anise spice. A multi layered palate of wild piquant raspberries, red licorice wick and frais de bois, dark anise tannins and sasafras oak in support of the textural, weight of fruit. Structured, dimensional and refined, its lifted finish resolves on a length of mineral and pebble pastoral complexity.

Mornington has seen over thirty vintages of this bespoke, esoteric wine, redolent of red berries, violets and spice, an experience not to be missed by all adherents of the abstruse, artisanal style. Circe craft a Pinot Meunier of structure, clarity and length, it shares a remarkable kinship with her patent sibling's brightly lit translucence of cherry, sasafras fruit. Match your Meunier with lamb, rare breast of duck, or terrine of offal, walnut dressing and thyme.

Ruby purple colour. Wild strawberries abound, morello, sen-sen and stalk, rose petals and herb. A ripe palate of classy red fruit flavours, cranberries and currant cream, seasoned by undergowth, eucalypt and clove. Elegantly medium bodied, defined by its rich pinosity and pastoral appeal, its exceptionally fine line of yielding tannins in support, all the way to a warm, lingering finish.

Cirillo The Vincent Grenache

Light Pass was one of the first Barossa precincts to be planted to vine. A single Grenache vineyard remains from earliest settlement, still yielding the most precious fruit, it is likely the oldest productive planting of Grenache in the world. Marco Cirillo personally manages each and every vine on this invaluable block, his specialty is Grenache and he maintains a close watch over his priceless old plantings. Much of what he picks off the vine is destined for the mighty Torbreck, he retains a small amount from each vintage to release under his own label.

Marco Cirillo can trace a family tradition of winemaking which dates back centuries. He turned his skills of viticulture to a seminal Barossa site in the 1970s and dedicated his life to old vines Grenache. A second vineyard, established in the 1930s and grown to the elevated aspects of Rowland Flats, is the source of fruit for The Vincent Grenache. Each and every one of the eighty year old vines is familiar to Cirillo, cared and pruned by hand, they yield small harvests of Grenache, almost without peer. Grapes are all hand picked and placed into vessels as whole berries for a traditional open fermentation. Upon completion, batches are filled to a collection of large, ancient oak Foudres for malolactic and a year's maturation.
 
Bright scarlet colour. Vibrant red cherry and black berry aromas, turkish delight notes, supple dusty vanilla, spiced plum and char. A generous, fleshy palate of purple fruit flavours, bramble and tar, a supple textural mouthfeel, the savouryness of olive and vinous bay leaf notes. Lifted fruit characters and splendid length, an exquisite lingering finish.
Clairault Estate Cabernet Sauvignon

Clairault are all about taking care of the little things to build a much greater wine, vineyards are all managed like a wildlife sanctuary and the vinifcations are treated as gently as one can. Berries must be only barely split, to iintroduce just the right amount of tannin while retaining a press of the purest juices. The most exquisite parcels Cabernet Sauvignon, a touch of Cabernet Franc for interest and finesse, are delicately fermented before eighteen months of age in an extravagantly high proportion of new French oak, the fruit of Margaret River at its finest, graceful and most eloquent.

Deep crimson black. Aromas of cherry blossom, mulberries and aniseed, cedar and cigar box, blueberries and cassis. Highly focused, west coast Cabernet of amazing precision and drive, fine grain, mouth coating tannins in support of the dark fruit core, held in perfect balance by genteel acidity and perfectly framed oak, a luscious finish with yet more cherries and simmering French vanilla pudding oak.

Clairault Estate is situated approximately ten kilometres south of Yallingup, within the superior Wilyabrup dress circle of Margaret River. The property contains four dams, forty hectares of grazing land and eighty of remnant bush. The vineyard itself has been cultivated with a commitment to local flora and fauna, it yields harvests of small but intensely flavoured grapes. Merlot and Petit Verdot are assembled around a solid backbone of Cabernet Sauvignon, a stately wine of penetrating bramble fruit characters and refined, tensile tannins.

Bunches of Cabernet Sauvignon grapes are de-stemmed and each berry is split, to ensure minimal degradation and encourage fresh, clean flavours. Merlot is crushed to fully expose the delicate flesh, for a more refined and elegant textural development. A fortnight of cool, gentle vinification on skins, allows for slower, more controlled extractions of tannin and flavour. Ferments are pumped over thrice daily over the course of a fortnight and judiciously backed off as the juices evolve into wine. Upon completion, batches are gently pressed into a selection of French oak barriques for ten months maturation, followed by clarification and the final assemblage.
 
Bright garnet colour. A compelling bouquet of vibrant cherry skin and dark berry characters , mintiness, dried herb and vanilla. A bold palate driven by blackberry and mocha oak, fleshy plum sweetness followed by a herbal savoury length. The tannins are fine grained, almost silky in texture, in fine balance before a dark chocolate allspice finish. Match with lamb, steak or eggplant, a superb accompaniement to rare, gamey duck.
Clairault Margaret River Cabernet Sauvignon

Margaret River makes mighty Cabernet but Clairault make a priority of gentle winemaking. Parcels are cannily crushed so that each berry is only, barely just split, affording the ferments minimal berry degradation, encouraging the retention of fresh, clean varietal Cabernet characters in the finished wine. Vinified on skins for optimal extraction and treated to a timely ten months in nothing but the finest French oak, a vivid articulation of Margaret River Cabernet, brimming with dark blue currants and cassis, its refined minerality resolving on a refreshing glace cherry finish.
