Tar Roses Shiraz

Winemaker Don Lewis adores the tannins, structure and electrifying expressions of Spanish wine. Fruit for Tar & Roses is harvested off elite Heathcote vineyards, much of which must be hand picked, all components are treated separately throughout ferments and ageing. The larger volume of Shiraz comes from richer Cambrian soils, while the smaller parcel is grown to much tougher gravelly, grantic soils. The first component makes a rounder, fuller fruit driven wine with intense chocolate and earth characters, the latter contributes elegance and restraint.

A mostly Heathcote Shiraz, with a smaller component of fruit harvested off superior vineyards further afield. Bunches are crushed and destemmed into vinimatic fermenters, pumped over thrice daily and closely monitored for tannins, acidity and extraction. After ten days vinification, batches are pressed and racked off gross lees into a selection of seasoned and new, French oak barriques for completion of malolactic and a year's maturation.
 
Deep crimson colour. Intense black cherry aromas coupled with lifted raspberry notes, a compote of summer berries. Supported by hints of vanilla, chocolate and earthy complexity. Sweet black cherry fruit flavour with chalky cocoa/ chocolatey tannin. This, plus good acid and length makes a well balanced palate. A match with char grilled lamb cutlets and sugo pomodore.
Tar Roses Tempranillo

A pure Tempranillo wine by one of Australia's most passionate protagonists of the style. A native of arid Italianate climes, Tempranillo achieves complete ripeness in the ferrous soils of Heathcote. Challenging Terra rosas and moderate seasons reduce vine vigor to yield limited parcels of intensely flavoured fruit. The talented team at Roses & Tar share a passion for the torrid Spanish varietals, closely managing their Heathcote sites to yield the finest possible Tempranillo. Match with spicy pork and fennel sausages.

From Don Lewis and Narelle King's Heathcote property, vinified alongside a component from a second choice Heathcote site. An early ripener, fruit is picked over the course of several days according to parcel ripeness and treated as a single batch once brought to the winery. Grapes are crushed and de-stemmed into a vinimatic fermenter and spun twice daily. Temperature and acid levels are constantly monitored throughout the vinification, upon completion the wine is treated to an air bag press. Racked off gross lees and transferred to barrel for a course of malolactic and maturation in a combination of new French oak and older barriques for a year.
 
Brilliant deep cherry red colour. Rich raspberries and cream bouquet with nutmeg and minerally notes. A fresh sweet palate, black cherries and a touch of tartness nicely balanced by chalky tannin, fruits burst over classic chalky tannin, well balanced by rhubarb astringency. Lingering prune plum flavours and great palate weight extend all the way to the finish.

Barbera adapts brilliantly to the temperate slopes of Yarra Valley, this sun loving Mediterranean thrives in the cooler climes and yields wonderful harvests of perfectly ripened grapes, characterised by intensity of flavour, balance and finesse. Planted to a propitious northwest facing block of opportune clay loam soils, TarraWarra make Barbera in decidedly new world styling, designed to be delicious and fashioned for food. Tasting of winegums, dark olives and pretty potpourri pastille, TarraWarra makes the perfect accompaniement to piquant tomato pasta recipes, oven braised oxtail or charred fennel snags.

There was a single block of older vine Pinot Noir, planted to a well sunlit north facing slope, which had grown quite comfortable in their clay loam soils after twenty splendid vintages. Choice clones of Nebbiolo were grafted atop the responsive rootstock and a marvelous wine began to flow. A month of macerations, wild ferments and an extended term of sixteen months in a cooper's pick of well seasoned French oak puncheons. A big, beautiful bouquet of rose petals, savouryness and spice, Nebbiolo's renowned power and decorum over a booty of graceful, bitter chocolate tannins.

Pinot Noir clones MV6 and 114, 115 and DSV12 are all hand picked across several blocks on the TarraWarra property, off vines up to thirty years of age, grown to high north facing slopes where they can enjoy maximize exposure to the hours of sunshine. Northerly winds from Long Gully provide good air flow and favourable micro climes. Grapes are given ten days skin contact for optimal extraction followed by five days wild indigenous yeast vinification and completion of malolactic. The finished wine is aged in a mix of seasoned and new French oak 225L barrique and 500L puncheons by Francois Freres, Mercurey, Dargaud et Jaegle and Sirugue.
 
Vibrant raspberry colour. Cherry, dark berry and spice aromas, all the primary fruit characters of violets, sasafras and cherry showing through on the nose. The palate is fully flavoured with black cherry and red currant fruit flavours under a sprinkle of cool climate spice. There's an evenness and structure to the wine, as it's savoury, earthy, yet vibrant palate receives support from a backbone of refined tannins and balanced acidity.

Clare Valley Shiraz is internationally renowned, remarkable for its spectacular complexity, elegance and poise. Bill Taylor planted Shiraz with a view to formulating the very style which has won primacy throughout the world of wine. His nascent plantings continue to yield some of the most superlative Shiraz in all Valley Clare. A meticulous cull of the finest pickings are barrel fermented in new oak, followed by two years in the luxury of artisanally coopered barriques. Against a backdrop of historic winery buildings and ancient vines, watered by a crystal clear spring fed stream called Honeysuckle Creek, the Taylor family handcraft one of Australia's most eminent Cabernet wines. Since 1892, St. Andrews Terra rossa soils have produced wines of rare excellence, the original winery still stands today. Grapes are harvested from Blocks A60, A70 and A10 of the St Andrews Vineyard, quickly and gently de-stemmed, keeping berries intact. Following a cold soak and fermentation, St Andrew is pressed to a high proportion of new prestige French oak barrels for completion of malolactic, rack and returned for eighteen months maturation.
 
Dark red with a faint brick red hue to the edge. Bold lifted varietal aromas of cassis, ripe black cherry and aniseed. These are matched with lashings of chocolate, cedar and cinnamon from the French oak maturation. A concentrated wine with a fleshy palate and vibrant fruit flavours of cassis and blackcurrant. Generous and beautifully ripened yet retains the poise and elegance of great Cabernet Sauvignon.

From the eminent St Andrews Block A30, Old Lands Block S50, 40 and 80, traditional 1654 clones of Shiraz. Grapes are moved a short distance to the winery where they are gently de-stemmed to retain integrity and minimise any maceration or extraction of harsh tannins. Fruit is transferred to headless barrels and inoculated with a specialist strain of Shiraz yeast. Ferments are hand plunged twice daily to aid gentle extraction before being pressed and returned to barrel for malolactic. Upon completion, the component wines are racked off lees, assembled and filled to a selection of water bent American oak barrels for eighteen months maturation prior to filtration.
 
Brick red colour with deep crimson heart, already showing signs of development. A brooding, savoury complex yet thoroughly enticing aroma. Mouth watering wafts of chocolate, mocha, toffee and cream intertwine with plum, aniseed and rich berry fruit, great elegance and length. The palate is a mouthful of round completeness. Fruit flavours and oak weight are in absolute balance bringing harmony, grace and a pleasurable warmth to the palate from start to finish.

It was the great Cabernet wines of Bordeaux which inspired Bill Taylor to diversify from imports and retail into the highly fraught pursuit of grape growing. An ardent enthusiast of Chateau Mouton Rothschild, Taylor had a keen enough palate and nose to determine that the most auspicious lands for Cabernet Sauvignon were amongst the idyllic rolling pastorals of Valley Clare. Selected on the basis of opulence and intensity, velvet tannins and heady perfumes, the most sensational pickings from the finest vintages are set aside for inclusion into the stately and magnificent, Visionary Cabernet Sauvignon.
