Attorney Vineyard is planted to a north facing block on the dry eastern foothills of Wairau Valley. Fully Biogro certified organic since 2012, its deep clay soils receive minimal rainfall yet offer the perfect microclimes for organic farming. The superb harvests of Attorney Vineyard are distinctive for their tiny, thick skinned berries, fortuitously yielding dark intense wines of fine structure and bold tannins. Heady bouquets, coffee bean, blackberries and black olive, layers of savoury flavours, cardamom and clove, length of liquorice before a juicy blackcurrant finish.

Villa Maria selects clones of Pinot Gris that produce lower yields with smaller bunches, which translates into more concentrated flavours. The viticulturists spend a great deal of time monitoring and adjusting the crop levels to make sure the vines are carrying the right amount of grapes. Low yields of two to three kilos per vine, timely leaf plucking and canopy management activities concentrate the flavours in the grapes. Although this leads to a smaller harvest, the emphasis is placed on quality not quantity, culminating in a fully opulent Pinot Gris wine.

Parcels of Pinot Gris grapes, most of them picked by hand, are gently pressed to render a pure concentrated juice, lightly settled for twelve hours before transfer to a mix of fermenters and old oak barriques. Neutral yeasts and a cool vinification are employed to preserve the natural purity of fruit. Warmer barrel ferments by indigenous yeasts add complexity. Upon completion, parcels are kept on yeast lees for three months while being treated to a weekly battonage, building palate texture and richness. This wine is then assembled, lightly fined and filtered to bottle.

Engaging sweet floral characters everywhere, from the fine silky entrance to the luxuriantly creamy mid palate, a rich and warm appealing new world style. This low cropping site is managed with a focus on enhancing soil vitality to grow healthy and balanced vines, employing organic methods to work in complete harmony with nature. The most pristine grapes have been secured for Cellar Selection, the harvesting carried out with inscrutable timing to capture all the naturally juicy flavours. A fresh, fruit driven Sauvignon Blanc with lithe passionfruit, kiwi and citrus characters from nose, through palate to finish.

All parcels spend time on skin contact to enhance the intensity, followed by a gentle press, cold settling and racking. Cool fermentations are employed to retain purity of flavour and aromatics. Upon completion, batches remain on yeast lees for several months to build richness and mouthfeel. Components are racked and assembled, gently fined, filtered and immediately bottled, preserving the purity of flavour, freshness and superb palate richness.
