Summer rainfall is low such that vine vigour can be readily controlled to optimise the quality of fruit. A long, even ripening period supports flavour development and underpins the intensity of the wines. Although early spring frost is an issue in the district, Moppity Vineyard is sited on undulating terrain, ensuring adequate frost drainage. Cabernet grapes are treated to a cold soak for the extraction of flavours, colour and tannin, followed by a fortnight of fermentation and a term of maturation in a selection of seasoned and new, French oak hogsheads and barriques.

There's also nothing generic about Moppity's Lock & Key efforts, they reflect their unique geographic origins, the ultimate expression of soil and microclime. Every effort is made in the vineyard to achieve quality fruit. Minimal irrigation, bunch thinning and careful pruning ensure low yields of concentrated grapes, providing wines of compelling regional and varietal distinction. Parcels of Tumbarumba Chardonnay are isolated on the basis of pure varietal expression and intensity of flavour. Exclusively free run juices are treated to lees battonage and partially barrel fermented in a selection of fine French oak barriques.

Brilliant, clean, pale yellow colour. Bright and lifted with citrus, fig and nutty complexity. Best described as a new world Chablis, the palate is long and lean with citrus, white peach and excellent minerality before a spicy, nutty finish. Although partially fermented in French hogsheads, the oak plays a subtle background role, allowing the fruit to do the talking.

Lock & Key have placed Hilltops firmly on the map with their fresh and dry, fragrant articulation of Riesling. Viticulturally, the region can be summarised as Barossa meets the Grampians, translating into wines of power and concentration, enhanced by great elegance and finesse. Pale straw colour. Highly aromatic style with exotic spicy notes and ripe limes. Fine, crisp and well balanced, making for an elegant wine with good persistence. The generous fruit is well tempered by fine, clean, bracing acidity, the palate is long and racy, culminating on a clean, zippy finish. Excellent and will continue to develop complex honey and toast characters. Enjoy with the freshest seafood or delicate white meats.

Moppity's 170 acre property sits at the highest elevation in the Hilltops region and it's vines are among the eldest. There are multiple clones of each variety, including five clones of Shiraz, all featuring their own distinct characteristics. The advantage is a tremendous diversity in wine style depending on site, aspect, soil type and clone. Shiraz grapes are treated to a cold soak for the extraction of tannin, colours and flavour, followed by several days of ferment and a term of maturation in a selection of seasoned French oak hogsheads and barriques.

Deep, dark purple/ red in colour. Aromatic, perfumed, spicy with sweet red berry and cherry nuances. A soft and seamless, medium bodied, savoury expression of graphite and dark cherry, blackberry and a little briar, the palate is followed by fine acidity and drive, the freshness of fruit being a standout trait of this stylish, eminently drinkable Shiraz.

Lock & Key is a reference to ancestors who were brought to New South Wales as convicts aboard Australia's second fleet. A generously proportioned Pinot Chardonnay, the first sparkling wine to be made from fruit grown to the blossoming Hilltops region. Moppity Vineyard's original plantings are nearing forty years of age, some of the oldest stock in southern New South Wales. These mature, low yielding vines don't deliver much fruit but the precious grapes are wonderfully concentrated and produce the most remarkable sparkling wine.

Chardonnay and Pinot Noir is harvested in the cool of night at optimum ripeness to preserve freshness of fruit. Only the cleanest free run juices are cold fermented to retain aromatics and primary fruit. A secondary fermentation is initiated at Peterson's Champagne House.

Elizabeth is a classic Hunter Valley white which has established itself as one of Australia's benchmark Semillon. Named in commemoration of the first ever visit to Australia by a reigning monarch in 1954, Elizabeth has claimed over fifty trophies and multi gold throughout it's long and illustrious history. Originally released in 1967 under the label Hunter Riesling, Elizabeth today stands as a praiseworthy and approachable example of the uniquely Hunter Valley Semillon style.

$2699each $323DOZEN EACH DOZEN The superlative Mount Pleasant vineyard was established in 1921 by the legendary winemaker Maurice O'Shea who recognised the special characteristics and longevity of Hunter Valley table wines. The grapes are picked early in the morning to retain fruit freshness and quality. Bunches are gently destemmed and lightly crushed, the must is chilled and juices drained off, handled in a manner to eliminate oxidation. Juices are cold fermented over the course of a fortnight before being treated to a minimal lees contact. Assembled and filtered, stabilised and promptly bottled, interference with the natural vinification process is kept to a minimum, contributing to the retention of fresh fruit characters.

Pale straw hue. Elizabeth exhibits qualities of the finest Semillon when young, aromas of citrus are met by hints of vanilla and freshly cut hay. A palate of citrus, fresh lemon and limes, the back palate reveals the beginnings of distinctive Hunter Semillon characters, toastyness and nut, caramel and lanolin. The texture is light, bright and pure with a fresh line of acidity along the palate, leading to a fresh, dry and seamless finish.

Hunter Valley Semillon is one of Australia's great contributions to the world of wine. The grapes at harvest are characterised by an ideal pH and perfect acidity. The completed wines exhibit handsome colour and a bright bouquet before a superb palate with excellent depth and great length of flavour. Every year, a limited quantity of Elizabeth Semillon is reserved for extended ageing in perfect conditions under the McWilliam cellars. Upon release the wine shows all the classic characters of Hunter Valley Semillon, beautiful honey flavours and golden toastyness.

Mount Pleasant's continued efforts to hold back bottles of Elizabeth Semillon until at the peak of development is repeatedly vindicated by the wine's incredible run of successes at major wine shows. Elizabeth has claimed dozens of trophies and countless medals throughout her long and illustrious history. All grapes are hand picked, de-stemmed and crushed, the musts are chilled and juices drained. After forty eight hours settling, the clear juices are racked off, warmed and inoculated. A long, cool vinification is employed to retain the character of vintage, bottled three weeks after completion.

Lovely deep straw hue. Effusive and intense, the complex aroma carries all the attributes of Hunter Semillon, lemon with lime, passionfruit, sherbet and hints of cut straw. Elizabeth has grown rich and mature Semillon characters after several years of bottle age. Fine, delicate and persistent exhibiting ripe acidity and a juicy, fleshy middle palate. Quintessential Semillon attributes of honeysuckle and lemon curd tantalize the taste buds.
