Waimea Estate Pinot Noir

The approach here to Pinot Noir is essentially traditional, with gentle handling and extraction from harvest right through to bottling. Waimea Estate were one of the first in New Zealand to use new technologies such as micro-oxygenation, ganimede fermenters and cross-flow filtration. Modern winemaking techniques create a synergy with those of the old world. From a selection of burgundian Pinot Noir clones including 114, 115, and 667 and 777 grown to the Packhouse vineyard on the stony loam soils of the Waimea Plains.

After destemming without crushing, the musts were chilled to 10C for a period of five days before fermentation to enhance aroma and colour. Fruit from the different vineyard blocks was fermented separately and inoculated with specialised Burgundian yeasts. The ferments were then carefully hand plunged or pumped over twice daily, temperatures peaking at 30-32C. At dryness, the wines were allowed to soak further on the skins until the optimum balance between structure and flavour was achieved. The wine was then pressed off its skins, and after a short settling time, racked off gross yeast lees into premium oak barrels to undergo natural malolactic fermentation and to complete oak maturation. Deep scarlet colour. Classic aromas of dark cherry, sweet spices, and smoky oak. Extended elevage in barrel has created a wine of elegance, stylishness and finesse. A palate with supple fruit and oak tannins balanced by a creamy textured finish. By using a range of Burgundian clones and select yeasts, the nuances of each clone are subtly combined to give the wine a palate of real depth and interest. A tannin structure of some delicacy, without compromising the dark cherry and plum flavours. Endowed with the finest structure, the fruit driven flavours and aromas will continue to integrate with more earthy and savoury complexities. A particularly good match with wild game such as duck and venison.

Nelson River in general, and Waimea in particular, have a reputation for highly aromatic wines. Sauvignon Blanc is hand picked from a range of choice vineyards, including the Wells and Robertson blocks, grown to the stony alluvial soils of the Waimea Plains. Waimea Estate has garnered significant interest due to the fruit driven purity, beautifully textured palate, admirable balance and polish. Treated to whole bunch pressing and bâtonnage, achieving a multi dimensional wine, with pure varietal expression, underpinned by subtle texture.

Grapes are harvested and destemmed without any crushing, protecting the aromatic freshness naturally found in Sauvignon Blanc. Some portions were given up to six hours skin contact for added complexity and impact. After pressing the juices are cold settled for three days to achieve low solids prior to ferment. To attain vital aromatic definition, the fermentations are carried out in tank, the musts are inoculated with a range of aromatic yeasts and fermentation temperatures are kept low. For a textural component, some of the ferments underwent frequent lees-stirring for over a month after vinification was complete. Following assemblage, the wine was lightly fined, stabilised and filtered.
 
Brilliant, light straw in colour. Zesty and racy, this lovely example of Nelson Sauvignon has aromas of gooseberries, green apple and citrus combined with a flinty, mineral complexity. Waimea has become a popular alternative to the Marlborough style, exhibiting the essential gooseberry, lime and capsicum aromas, with a flinty palate adding to the wine's appeal. The acidity tends to be toned down and palate interest is enhanced through skin contact, yeast selection, a range of fermentation temperatures and time spent on lees. Waimea is balanced by a full and textured palate, giving the wine depth and concentration. The wine of choice to accompany the freshest seafood.

Harvests of Sauvignon Blanc are collated from good vineyards throughout the finer winegrowing precincts of Marlborough. The fast draining, low fertility soils, warm days and chilly nights form a mesoclime that's unmatched anywhere else in the world for yielding lusciously fruit driven Sauvignon Blanc wines. Grapes are crushed and gently pressed before cold settling. The clear juices are racked off and inoculated to choice yeasts. A long cool vinification in controlled fermenters captures and retains the vibrancy of Marlborough fruit. Batches are treated to a term on lees before assembling into the finished wine, stabilised and filtered prior to bottling.
 
Light straw hue. Lifted nose of passionfruit and lychee flower, kiwis and kaffir lime. A lifted blackcurrant palate, complexed by notes of wet stone and thyme, elegant yet full with sufficient weight and texture to mate alongside white meat roasts, all balanced by flinty minerality. A splendid match to goat’s cheese flan and the freshest seafood.

Winstead is a place of Pinot passion, two magnificent blocks of vine separated by a few metres in distance and just four years of age. They each yield an extraordinary Pinot Noir, the younger Lot 16 however will vintage a little later in the season, an additional fortnight of ripening permits the berries to bloom with flavour and to sing in complete resonance. Completely destemmed into open vats, wild fermented and frequently plunged, followed by malolactic and a year in fine French oak. Powerful, generous, sound structure and self assuredness, an intensity that lingers.

Lot 7 is Winstead's original block of Pinot Noir, planted high on a hill overlooking the panorama between Chauncy Vale and Bagdad Valley. A place of ample sunlight, its low fertile soils yield a uniquely intense wine of opaque fruit and the sleekest velvet tannins. Grapes are de stemmed into small half tonne open vats, cold soaked and wild fermented, laboriously hand plunged several times daily, basket pressed and treated to natural malolactic, followed by a year's maturation in a mix of new and seasoned oak. Seriously small batch, an extraordinary experience in Pinot Noir.

The gently sloping, warmly sheltered coastal blocks, just eighty metres above sea level, have long inspired the Yealands team to create a judiciously oaked Sauvignon Blanc. A harvest of grapes in the riper spectrum is essential to such a wine, a choice component is treated to a course of barrel ferments in a selection of seasoned French oak puncheons. The marvelous S1 block is a sheltered, relatively warm site within the splendid vistas of Seaview Vineyard, on a north facing plateau at 160m above sea level, refreshed by maritime winds that blow in from the Cludy Bay coast. Fruit is crushed and destemmed, chilled and gently pressed, the clearest juices are racked off for a long, cool ferment to capture the full opulence of S1 vineyard grapes on the vine. Blackcurrant leaf, wet stones and nectarine, textural and fragrant, a lucid articulation of the unique terroir from a very special site.
