The Bay of Fires vineyards normally experience a growing season quite similar to Reims, Burgundy and Alsace. Roughly equal proportions of Pinot Noir and Chardonnay, with a smaller component of Pinot Meunier, are hand picked and whole bunch pressed, to ensure freshness and elegance of structure. After fining, the individual batches are vinified on light grape solids and treated to malolactic on primary ferment lees. Once clarified, the wines are assembled to style and prepared for tirage. Extended maturation on yeast lees builds additional complexity and depth of character, while the expedition liqueur and inclusion of aged reserve wines contributes to the overall depth and dimension of palate.
 
Crystal clear, persistent bead, light straw gold hue. A very complex wine exhibiting toast, lanolin and sea brine characters, honeycomb, yoghurt and oyster. The palate is finely structured, long, powerful and complex. Multiple layers of oyster shell, truffle and apricot brandy build in this intriguing wine. A great depth of character from extended ageing, retaining freshness and vibrancy. A solid, natural acid backbone, biscuit and citrus follow the palate all the way to a crisp, dry finish.

Bidgeebong's state of the art winery is located at Wagga Wagga, in close proximity to Charles Sturt University, the nation's major wine science and research centre. Bidgeebong's vineyards are meticulously managed to yield grapes of optimum flavour and balanced acidity. The estate's Chardonnay vines in particular are some of the most fastidiously husbanded examples in the region. Parcels of Chardonnay are harvested and delivered promptly to the estate wineworks where they are crushed, inoculated and vinified to a fruit driven style, completely unwooded and unoaked. A combination of natural and controlled primary fermentation techniques are employed to construct a wine of great depth and complexity. Alcohol 12.5%
 
Mid straw colour. Clean and flavoursome with an abundance of tropical fruit flavours and aromas. A rich and generous easy drinking Chardonnay showing vigorous varietal characters complemented by a fresh clean finish. A white that would go nicely with smoked trout, fetta quiche or salmon fillets.
Bimbadgen Estate Botrytis Semillon 375ml

Botrytis affected Semillon makes much of the world's great and most flavourful wines. Bimbadgen have taken the time to find the ideal site in Australia with a rare confluence of sunshine and soil, optimal rainfalls and balmy clime, that unique alchemy of environmental conditions necessary for the rampant growth of the fungus Botrytis Cinerea. Out of the finest vintages, a wonderful dessert wine is made from the fruit, complex and earthy with subtle charry, nutty oak balanced by citrus peel and straw, candied fruit and a touch of nettle on the finish.

Semillon is harvested from Myall Road vineyard near Griffith, closely cropped to deliver no more than moderate yields. The site was established with cutting edge laser levelling techniques and trellising design, tailor made for premium dessert wines. Following the crush and an overnight cold soak on skins, the unclarified Semillon juices are inoculated through the action of wild and cultured yeasts for a long, slow vinification. Ferments are treated to a variety of temperature fluctuations and exposure to oak. Some components are rack and returned into quality new French oak for ferments, others are filled to barrel for a term of maturation. Two thirds of the wine remains in contact with yeast lees until bottling.
 
Luminous, vibrant pale gold colour. Aromatic and clean, with citrus fruit and fresh hay, dried apricot and lemon spice, marmalade and creme brulee. Medium bodied, luscious palate with creamy apricot kernel and marmalade flavours. Rich fruit sweetness is well balanced by zingy fruit acids. Bimbadgen should be enjoyed now but it offers wonderful ageing potential over several years.

The twenty-two hectare site established in 1971 is Australia's oldest organic vineyard, the vines have always been grown organically without the use of pesticides, herbicides or chemical fertilizers.

Growing grape vines organically in balance with the environment, not demanding too much from them or the soil, hand picking and pruning, and creating handmade wines all combine to deliver to you, good value premium organic wines. Botobolar's organic dryland vineyard is famous for its rich and spicy red varieties. This bit of earth delivers some of the best grapes in the district. Old vines and organically grown grapes, hand picked fruit crafted into immensely flavoured wines. Botobolar wines are made in accordance with organic growing and winemaking principles and certified by the ACO, Australian Certified Organic.
 
Colour is a deep purple with a rose rim. Floral aromas with a nice sweet spice nice, more redolent bouquets of fig and pepper, jellied apple and dried currants. Sweet berry fruit dominates, the tannins are light on their feet, dancing around the palate and skimming over the tongue with refreshing mint and rosey characters. There's a funky twist on the finish, as the wine delivers ju-juby flavours of liquorice, wine gums, banana-like elements from the Pinot, and an exceptionally pleasant applejack acidity. A big fruit driven wine with soft tannins and great mouth feel, the Botobolar is built to enjoy with any cuisine.
Bream Creek Chardonnay

Bream Creek are owned and operated by one of Tasmania's leading viticulturalists. The hand managed vines are grown to salubrious soils on one of the most spectacular coastal locations in Tasmania. The estate's focus is to produce small quantities of pristine fruit which can be vinified into wines which capitalise on the stunning flavours that originate from predominantly old vines. The stirling efforts of Bream Creek are crafted to drink beautifully on release. Chardonnay is treated to partial malolactic fermentation and lees stirring to achieve texture and elegance.

Bream Creek were one of the first commercialy operated vineyards in Tasmania. Their fastidiously husbanded vines consistently produce low yields of the highest quality grapes. The original consortium established five hectares of vines in 1973 which included some of Tasmania's earliest plantings of Chardonnay. The property enjoys a cool frost free spring, long sunny summer days with sea breezes and an extended autumn ripening period. Surrounded by neighbouring forest and windbreaks, the vineyard is nicely sheltered from strong and cold winds, perfect for producing crisp cool climate wines. Crop yields are kept very modest, the focus being on small berries and small bunches.
 
Bright pale straw in colour. The bouquet boasts white nectarine and peach with some subtle citrus characters. The palate is tightly structured with good texture and an array of spicy tropical fruit combined with freshly baked bread. Judicious use of oak combines to produce elegance with a long, firm, refreshing finish. Enjoy alongside crackling roast pork or seafood, pasta or poultry.

Bream Creek is one of Australia's southernmost vineyards, one of the first commercialy operated sites in Tasmania. Crop yields are kept very modest, the focus being on harvests of small berries clustered into small bunches of fruit. Painstaking efforts achieve the essential cool climate Pinot Noir, grown to older vines in the lower latitudes of Tasmania's southeast. Such idyllic growing conditions deliver outstanding quality grapes which are vinified by an artisanal team into an elegant, velvety Pinot Noir with alluring aromatics and a profound, slowly ripened palate.

Bream Creek Vineyard is planted on a northeast ridge above Marion Bay at the edge of the Tasman Sea. This gently sloping site, coastal location and maritime influence, create a highly favourable microclimate. Bream Creek wines are hand crafted to capitalise on the stunning flavours that originate from predominantly old vines. The wines are ripe and ready upon release but are built to age. Pinot Noir in particular is crafted to the most traditional methods, inoculated by wild ferments. These old world techniques retain delicate flavours with multiple dimensions, palate weight and structure. Bream Creek was matured in a combination of carefully selected, seasoned and new French oak barriques.
 
Bright crimson red. Complex spicy, dark berry fruit and floral aromas, mingle with subtle oak, earth and glace cherry. The palate is seamless and well structured with layers of finely textured flavours. Combined with a touch of forest floor, fine tannins build to great length with a nice firm subtle finish. Have this magnificently versatile, food oriented Pinot wine with meats, salmon or game.
Bream Creek Riesling

Bream Creek have been producing fine Riesling wines since the original plantings went into the ground at Marion Bay during the early 1970s. The vines are now forty years of age and produce firmly structured Rieslings of character and finesse. Bream Creek have enjoyed considerable success over the years, largely due to the very long, mild growing season, the strength of the estate's viticultural team and the influence of vine age. Unlike many of its sibling Tasmanian Rieslings, a remarkable wine that offers some distinctly old world European qualities.

Overlooking the breathtaking seascape of Marion Bay and Maria Island, Bream Creek is one of the first commercial vineyards planted in Tasmania and produces some of the finest boutique wines. The area is steeped in the annals of Australia's earliest history. The vineyard overlooks where Abel Tasman first landed in 1642, raised the Dutch flag and went ashore to collect water. Later in 1772 French Navigator Marion du Fresne anchored his ships Mascarin and Castries in what is now known as Marion Bay. Central to the inspired environment, Bream Creek Vineyard is an integral part of the local mosaic of potters and furniture makers, sculptors and artisans.
 
Medium straw in colour. Citrus blossom, grapefruit, some lime and floral notes. Clean and firm palate with refreshing lime, musk and citrus flavours. Long firm structure, soft and well balanced acidity giving the wine vibrancy and freshness. Rieslings are absolutely delightful when young and fresh and continue to develop in bottle. Great with fresh seafoods, Bream Creek will accompany most every cuisine.
