The distinguished and enduring estate vines are treated to a naturally organic, chemical free husbandry, for a quality of wine which speaks for itself. Rymill's auspiciously slow ripening vineyards may be essential to the famous Coonawarra Cabernet, they are also well disposed to yield harvests of Chardonnay, Pinot and Meuniere for the realization of richly flavoured sparkling wines with regional identity and a real sense of place. The traditional old world practice of fermenting in own bottle achieves beautiful texture, creates a delicate bead and contributes to the luxurious mouthfeel.

Pale straw hue with a copper tinge. Beautifully perfumed with complex aromas of white roses, sweet hazelnut and red delicious apples over a vibrant background of fresh cut limes and zesty lemon. Fresh, crisp flavours of citrus fruits and apples linger at the finish alongside notes of pear and freshly baked brioche.

An effervescent accord between the softness of Barossa Valley Chardonnay and masculine structure of Adelaide Hills Pinot Noir. Treated to the timeless Methode Traditionelle, fermented in own bottle and reposed for an extended term on fine sedimentery yeast lees, its exquisite, creamy mousse presages an overture of cherry, biscuit and boulangerie citron confit characters, a moreish palate which continues to unravel creamy layers of complexity, but at her heart, she is clean, revitalizing and crisp.

The pictuesque Plunkett Fowles vineyards occupy choice sites throughout the rolling plateaux at the heights of the Strathbogie Ranges. The quality of Pinot Noir and Chardonnay grown here are clearly within the Ivy League of the finest Victorian fruit. An assemblage of roughly equaly proportions Chardonnay and Pinot Noir. The white grapes share their origin equally between a variety of blocks within the Plunkett Fowles Upton Run and Whitegate Vineyards. The black grapes are drawn exclusively from the Trevor's Block at Whitegate.

$2699each $323DOZEN EACH DOZEN Grapes are picked early and harvested throughout the cool of the night to ensure fruit temperature are low , thereby preserving primary fruit characters. The Pinot Noir grapes were whole bunch pressed, a process which minimises phenollic extraction and bitterness, leading to a more delicate wine. Batches are inoculated to culture EC1118, a strong competitive yeast which possesses the ability to ferment at low temperatures, create good flocculation and has excellent alcohol tolerance. Vinified in tank at 15ËšC to preserve primary fruit flavours, fermented to dryness, the wine was kept on its lees to add complexity. Stone Dwellers was held on secondary fermentation lees for a short period prior to bottling.

Lively appearance, creamy and long lasting with a continual fine bread. Bouquet shows bright citrus aromas with peach notes and some yeasty complexity. It has off-dry residual sugar, balanced alcohol, soft balanced tannins and refreshing acid. To accompany hors d'oeuvre, a pungent camembert or smoked mussels.

Brut Millésimé is an assemblage of exclusively first press wines, an equivalence of Chardonnay from Grands Crus in the Cote des Blancs, Pinot Noir from Grands Crus on the Montagne de Reims and Valley Marne. An exquisite Champagne with a mature, powerful, complex character, outstanding elegance and finesse. A generous mousse of greengage and mirabelle plum, dominated by boulangerie and candied fruit, honeyed notes and complex yeasty autolysis.

Home to some of Champagne's finest Chardonnay vineyards, Taittinger uniquely blends a relatively higher proportion of 40% Chardonnay to the standard Cuvee. Taittinger Brut Reserve is an assemblage de cepages of forty ancient vineyards around the Champagne apellation, matured to perfection at the chais de Taittinger. A delicate wine with flavours of fresh fruit, honey and light briochey overtones. A beautiful mousse enlivened by an effusive aromaticness, it is aged for three to four years in the Taittinger cellars until it reaches optimal maturity.
