The crate are stacked into refrigerated rooms and cooled to 4C for maximum flavour retention. Grapes are gently whole bunch pressed, a process that extracts a very fine and delicate juice. Juice are clarified and fermented at controlled temperatures. The percentage of Pinot Noir has gradually been increased to give greater depth of flavour, it now sits at eighty percent. The final assemblage spends twenty seven to thirty months on tirage before disgorging and liqueuring to full Methode Traditionelle.

The crates are placed in refrigerated rooms at 4C to minimise the amount of colour extracted from the red skinned Pinot Noir grapes during pressing. The whole bunches are then loaded directly into the bag press and gently squeezed to produce a clear, fine juice fraction. The juice is then clarified and inoculated with native Champagne yeasts to ferment at cool temperatures. The percentage of Pinot Noir in the blend has gradually been increased to 80% to give greater depth of flavour and increased aromatics. The House of Henriot was one of the first to reconstitute vineyards with grafted stock. Henriot cultivates a very particular style, the pursuit of perfection. It chooses the best wines from the best Crus demanding the most careful work in the vineyard and from the cellar workers. In addition to its own vineyards, Henriot purchases grapes from growers in the best terroirs. Pinot Noir from Verzy, Verzenay, Avenay, Mareuil and Mailly. Chardonnay from Chouilly, Oger, Avize, Mesnil, Vertus and Cramant. Each year, about a third of reserve wines are incorporated in the Cuvee, ensuring the consistency of the Henriot style.
