The noble cépage of Chardonnay, Pinot Noir and Meunier, finished with the inclusion of parcels from Tasmania's prestigious Clover Hill vineyard, a vintage sparkling of amazing textures and immeasurable palate length. Since inaugural release in 1978, each bottle of Taltarni Brut has been fermented and matured on yeast lees according to Methode traditionelle. Elegant and refined, articulating the sophistication and affable charm which have come to be recognized as the endearing and enduring sparkling Taltarni style.

Taltarni were one of the founding wineries in the new age of the Pyrenees. The original sixty acres of vines were planted by David Hohnen, who later went on to found Cape Mentelle. John Goelet selected Taltarni Vineyards after a worldwide search of the finest winegrowing regions. The chosen site, with its red clay, quartz and sandy loam soils and cool continental climate is idyllic for the production of premium quality sparkling wines. The aim within the vineyard is to increase fruit concentration and flavour intensity whilst retaining superb length and balance of natural acidity. Taltarni is fermented in its own bottle and matured on yeast lees, achieving a final complex and sophisticated sparkling wine style.
 
Pale straw hues, fine mousse and persistent bead. A creamy, delicate and refreshing sparkling wine with a lifted bouquet of lemon, honeydew and nougat. The time on yeast lees has achieved a lovely, textured mid palate and a smooth lingering finish, the ideal aperitif, refreshing and clean. A joy with hors d'oeuvres and smart canapes.
Taltarni Vintage Rose

Tache is a French word meaning stained, the rare method used by Taltarni to fashion their sparkling Rose. The moniker Brut Tache can also be read as a metaphor for hard yakka, a reference to the effort required to grow quality grapes and make good wine. Taltarni assemble their finest fruit, picked off vineyards dedicated to yielding grapes exclusively for superior sparkling wines. Cuvée Rosé's pretty pink hue and elegant complexity are achieved by adding a dash of red liqueur to the tirage wine at disgorgement.

Taltarni became known for producing extraordinary sparkling wines very early on in their history. The estate's highly specialised vineyards in the Pyrenees contribute the backbone of fruit for Brut Tache. An assemblage of the holy trinity varietals, Chardonnay, Pinot Noir and Meunier, are drawn from mature vineyards, mainly in the premiere viticultural precincts of Victoria and Tasmania. Taltarni focus on encouraging full development of fruit, good varietal definition and refreshing natural acidity. Fermented in its own bottle and matured on yeast lees according to true Methode traditionalle, Cuvée Rosé is a sophisticated wine with mouth filling berry flavours that's simply beautiful to behold.

Fashioned from a collation of the finest parcels Hunter Valley Pinot Chardonnay, crafted to true Methode Traditionelle and vintaged under the Tyrrell cellars, a fuller, richer style of sparkler that only the auspicious Tyrrell vineyards can produce.

Chardonnay and Pinot Noir are picked at optimal ripeness levels and gently pressed to extract juices with minimal transfer of colour, batches are vinified in fermenters at moderate temperatures around 18C for a fortnight. Following completion of primary ferments,components are held on gross lees for three months, prior to being filtered and bottled with a tirage for the secondary fermentation. A third of the parts are treated to two year old French oak and partial malolactic. The finished wine is aged on lees in bottle for almost two years, after which it is disgorged and liqueured while remaining in original bottle.
 
Splendid effervescence, luxurious bead. Fine yeast and biscuit aromas, scents of peach and acacia, citrus, raspberry and pear. The aromatic characters extend on to the palate, creamily textured, generous ripe fruit flavours delivering good weight and extended length, the crisp jonagold acid at the finish balances and refreshes the palate.

Veuve Clicquot can be judged on the quality of its Brut non vintage. It is in the making of such a wine that the true Art of Champagne reveals itself. This is an art in which the House of Veuve Clicquot excels. Yellow Label reflects the superb vineyards and the consistent nature of the House style. The predominance of Pinot Noir provides the structure that declares itself as Clicquot, while a touch of Pinot Meunier rounds out the palate. Grapes from as many as sixty different Crus go to the crafting of Brut Yellow Label. Traditionally, the components are at least fifty percent Pinot Noir, up to twenty percent Pinot Meunier, and up to a third of Chardonnay, varying slightly from year to year according to conditions. The Cellar Master has to achieve the total consistency of taste, which makes Brut Yellow Label so immediately recognisable, so utterly reliable both in terms of quality, colour and bouquet. He will draw on priceless reserve wines for the blend, sometimes as much as 40% to ensure the continuity of the House style. Each of these older wines, averaging ninety years, are kept separately to preserve the unique qualities of the vineyard and the vintage.
 
Golden yellow, a foaming necklace of tiny bubbles. So pleasing to the nose, reminiscent of white fruits and raisin, then of vanilla and later of brioche. Note the fine balance between the fruity aromas coming from the grape varieties and the toasty aromas following the ageing in the bottle. The first sip delivers all the freshness and forcefulness, well structured, admirably vinous. The lingering aromas echo, each fruit or spice note distinct.

Beginning with the Bouzy vineyards that originally belonged to founder Philippe Clicquot, subsequent generations, particularly Madame Clicquot, gradually built up the Veuve Clicquot holdings to create one of the most impressive estates in all Champagne. There are some five hundred hectares, half belong to Veuve Clicquot and over a hundred are owned by the LVMH group. The vineyards boast an exceptional average classification of close to 97. Vines are mostly planted to hillsides where soils are shallowest and exposure to the sun is at a maximum. Significantly, Veuve Clicquot adds only a light liqueur doseage during the wine's disgorgement, allowing full expression of the essential Veuve Clicquot style.
 
Pale gold, silver hues, brilliance, effervescence, a fine and long lasting bead. The nose opens readily, the aromatics are pure yet complex. Chardonnay contributes refined mineral character accompanied by pleasant floral notes of acacia, yellow fleshed fruit, marzipan and brioche. Veuve Clicquot La Grande Dame

This exceptional wine is dominated by components of Pinot Noir from the Grands Crus at Ay, Vallee de la Marne, Verzenay and Verzy, Ambonnay and Bouzy in the Montagne de Reims. The cuvee includes a smaller component of Chardonnay from three Grands Crus along the Cote des Blancs, Avize, Ogerand and Le Mesnil-sur-Ogerin. A wine which heightens the sensory perceptions, La Grande Dame is the quintessence of the Veuve Clicquot style, drawing it's magnificence through a dominance of Pinot Noir.
