Mr Mick is all about Mick Knappstein, decorated with the Order of Australia for his role in developing Clare Valley as an internationally renowned origin of world class wine. Adams now retains access to the finest vineyards in Valley Clare, he has selected those parcels of Tempranillo and Pinot Gris which can best achieve the generosity and allure so worthy of Mr Mick.

A sultry cépage of the torrid Tempranillo and stately Sangiovese, are collated from good vineyards in the premier viticultural precincts of Valley Clare. Grapes are crushed and treated to a cold soak, extracting just the right amount of vibrant pink hue, juicy red berry flavours and light tannin from skins. Components are separately vinified in controlled fermenters, followed by assemblage, stabilisation and clarification. Mr Mick is promptly bottled, young and fresh, to retain light residual sweetness and vivacious fruit characters.

Bright salmon lozenge pink. Well perfumed, fruity nose, classically rose styled, offering lifted fragrances of juicy berries, some savoury scents and lolly notes. A fuller bodied palate, slightly off dry, showing a hint of strawberry raspberry sweetness supported by sensible cherry pith characters, crisp and balanced with just the right amount of acidity to strike the perfect balance.

An intriguing cépage of black and white varietals from a single superior site in Gibbston Valley. A half of early picked Gewurztraminer, destemmed into seasoned oak puncheons for ten days maceration before the inclusion of Pinot Gris, vinified by wild yeasts on skins over the course of a fortnight, until complete dryness. A tenth of carbonic ferment Pinot Noir is introduced for richness and complexity, tannin structure and rakish pink hues. Juicy bouquet of guava, gingers and quince, brimming with a bevy of south sea fruits, nutmeg and allspice on the exhileratingly bright refreshing finish.

Puglia is one of the most auspicious agricultural regions in all Italy, stimulated by the warm maritime breezes of the Ionian and Adriatic seas, its fertile soils yield a bounty of the finest harvests. Everything flourishes here, ripe figs and juicy citrus, the most fragrant almonds and grain, Puglia is also source to the richest olive oils and satiating wines. Pasqua retain vineyards near the ancient towns of Taranto and Brindisi, assembling parcels of Primitivo and Sangiovese grapes for a comely pink wine with piquantly spiced fruit flavours and alluring, cherry ripe perfumes.

Choice aromatic yeasts are added for inoculation and the musts are vinified at cooler temperatures between 16C and 18C to enhance the fruity nature of the wine while preserving varietal complexity. Upon completion, batches are racked for clarification, bottled and treated to a term of age before release.

For three decades, the Paxtons have nurtured their prized McLaren Vale vineyards, some of which are over a hundred years old. It's this level of care and passion for the land that has produced remarkable wine. The quality of fruit marked for inclusion must be nothing short of exceptional. Paxton remains on skins just long enough to be blushed with a chic lipstick hue and infused with a light dose of quenching tannins.

$1999each $239DOZEN EACH DOZEN Located southwest of McLaren Vale township, the coastal, relatively cool hilltop Shiraz site consists of predominantly deep alluvial clays layered with seams of river bed gravel and stone. Slightly closer to the coast, the Maslin Beach property is the source of an early ripening Shiraz component. Grapes are harvested as they begin to show the bright, light berry fruit flavours which are just right for Rose. Fruit is crushed and held in contact on skins for several hours. After settling, juices are fermented at cool temperatures as you would for a white wine. A small proportion is vinified in new French oak barrels. The final mix is filtered and bottled early to capture the piquancy of Shiraz Rose.

Medium rose petal red. Fragrant, floral, sweet raspberries, cream and Turkish delight. Bursting with ripe red berries on the palate, lusciously full and fruity, with a clean, lingering back. During the winemaking process, ferments were brought to a stop by the addition of sugars to enhance the fruit driven qualities and enhance complexity. Paxton should be enjoyed while fresh and young.
