Charlie Melton was one of the first to appreciate the overlooked value in Barossa's old vineyard Grenache, Shiraz and Mourvedre. He was one of a small group of winemakers who helped retain the viticultural heritage of Barossa Valley. Julius Caesar was born a Spaniard, he probably enjoyed the wines of Priorat at a time when ancient Romans built the very terraces which now yield Font de la Figuera. Pierre de Beaucastel appropriated a plot of land for himself which extended fifty two saumees at Coudoulet on the Cotes du Rhone in 1549. A tradition of fine winemaking continued at Chateau Beaucastel for centuries until 1909 when management passed to Pierre Perrin, a scientist and entrepreneur who established one of the preeminent cartels of the region. Quality of fruit, the most palatable wines and sustainable methodologies remain the focus at Beaucastel, who have used no chemical fertilisers or pesticides in their vineyards since 1964.

$7099each $851DOZEN EACH DOZEN The Coudoulet property remains an important part of Beaucastel estate, a salubrious vineyard of thirty hectares, some eighty years of age, grown to diluvial alpine deposits containing rolled pebbles, over a former molasse sea bed of the miocene epoch. Grenache, Mourvedre, Syrah and Cinsault grapes are selectively hand picked and sorted at the wineworks. Fruit is macerated in enamel tiled vats twelve days before the free run juices are taken off and musts are treated to a light pneumatic pressing. Varietal components are separately vinified and assembled after a course of malolactic, followed by maturation in large, seasoned French oak foudres for six months before a light egg white fining.

Dark garnet red colour. Perfumed nose of piquant bramble fruits, seasoned by overtones of pepper, cinnamon and maghreb spice. The palate is highly elegant, densely packed but lithe with black cherry, minerals and cracked pepper, supported by soft tannins, silken textures and refined acidity.

d'Arenberg's love affair with Grenache reaches its pinnacle with Ironstone Pressings. The original block planted in 1918, on the lower side of the winery, has a plentiful amount of ironstone throughout the soil structures, which enhances the body and tannin structure of the wine. As the finished wine is a cepage of three grapes it is a matter of selecting and screening the very best Grenache barrels. They complement the Dead Arm Shiraz component which likewise complements the 28 Rd Mourvedre portion to a point where the Grenache is beautifully framed.

$7299each $875DOZEN EACH DOZEN Most of McLaren Vale's soils are impregnated with ancient, decomposed laterite granite known as ironstone. The larger pieces were cleared from vineyards in the late 1880s and utilized in many of the buildings at d'Arenberg. Small batches of Shiraz, Grenache and Mourverdre are separately passed through a rubber toothed crusher into open fermenters. Some parcels are tread by foot two thirds of the way through. When tannin extraction is just right, the wines are basket pressed into oak for the completion of ferments and malolactic. Components are matured on lees in a combination of seasoned and new French oak barriques before assembling into the final wine.

Brilliant, gleaming red. Dark fruits, mulberr and plum nose, fresh soil and peat over an underlying lick of exotic Indian spice. An abundance of fresh fruits on the palate marry well with the more complex characters of cinnamon and quince, nutmeg, star anise and earthy beetroot. Open and generous upon release, lively acidity and the abundance of fine gritty tannins. Unfiltered and unfined, a harmless deposit may form in the bottle.

The essential Cotes du Rhone cepage, crafted almost exclusively from the Grenache of Grand Prebois and Syrah of Vinsobres. The inclusion of Mourverdre completes the holy trinty while contributing savouryness and pastoral charm. Filled with the fragrant fruit of Vallee Rhone and Mistral spice of Provence, Perrin Reserve makes a match with continental style grills and crumbed veal, slow braised joints and ham.

$2799each $335DOZEN EACH DOZEN Perrin Pere & Fils have been drawning fruit from the finest vineyards along Cotes du Rhone since 1909. To this day they retain the choicest parcels to vinify into exemplary regional wines. Parcels of Grenache, Mourvedre and Syrah are sourced from Perrin estate properties at Grand Prebois and Vinsobres, as well as fine vineyards leased under long term contract. Within and around Grand Prebois, the soils are limestone gravel clays. Vinsobres is rich in quartz and limestone marls. Following the harvest, bunches are destemmed, followed by temperature controlled vinification. Batches are treated to a year's maturation in a combination of unwooded vats and seasoned oak Foudres before egg white fining and bottling.

Deep red colour The nose is all ripe fruits, plums and blackcurrant, liquorice characters, gingerbread hints and notes of violet The mouth is round, elegant, juicy and supple, with a predominance of fragrant liquorice, the tannins are polished and soft. A beautiful rendition of Cotes du Rhone GSM to enjoy today alongside lamb, gruyere or pissaladiere d'aubergine.

Fire Block was excised from a large grazing property in 1923, out of concern that sparks from passing locomotives on the new Clare Valley railway could start bushfires. Situated on the western slope of the Valley, established to vines in 1926, the gnarled old veterans of Fire Block are grown to traditional dryland viticulture, with no systemic sprays or chemical fertilizers. From one of the most parched sites in Valley Clare, the vines sprout bunches of tiny shrivelled berries, yielding small volumes of intensely flavoured juices, to be vinified by the eminent O'Leary Walker winemaking team.

Selective hand pruning yields a harvest of small, concentrated berries full of colour and flavour. The precious parcels of distinguished, sixty to eighty years old McLaren Vale vines are treated to an old fashioned maceration and vinification in traditional open fermenters, followed by a press and fill to a selection of seasoned French and American oak puncheons, purposely chosen for the task on the basis of spicey oaken characters and sweet tannin profiles.
