Three Springs Farm is where the original Schild homestead is located. Situated on Steingarten Road at Rowland Flat, Three Springs sits at 380 metres above sea level. Vineyards at this altitude are traditionally much lower yielding than the Barossa Valley floor, producing higher quality fruit. Parcels of Chardonnay are fermented at low temperatures in tank to preserve fresh varietal expression and to achieve a bright fruit forward style, supported by a complex structure and full flavour development derived from extended lees contact post fermentation, bottled completely unoaked.

Pale gold with green hues. Lifted notes of banana and tropical fruit, guavas and a touch of lemongrass. Traces of stone fruit, apricots and young rock melon combine over a solid palate and fine taut structure, providing clear direction and balance. Ample flavours and good weight of fruit on the mid palate, fresh, crisp and extremely varietal without the use of any oak.

A powerful yet refined Chardonnay, characterized by its excellence and intensity. Scotchmans Hill is vinified from the choicest parcels grown to low cropped, slow ripening vineyards on Victoria's Bellarine Peninsula, a tight and impeccably structured, elegant wine, expressing fully the maturity and quality of the vineyard, as influenced by maritime climes moderated by Port Phillip Bay. Scotchmans Hill is regularly blown by strong, cool Antarctic winds, which punish the vines and encourage the yield of intense grapes exhibiting a concentration of flavour.

$3999each $479DOZEN EACH DOZEN Scotchmans Hill was named by Scottish immigrants who settled the Mount Bellarine area in the 1840s. The viticulture began in 1842 when the first planting of vines was undertaken on the surrounding Barrabool Hills. Various clones of Chardonnay, harvested off vines over twenty years of age, each yielding a kilogram and a half of fruit, are grown to clay volcanic soil with basalt and limestone subsoils. Crushed and pressed to fermenters, the musts are racked, inoculated and run to barrel for vinification at moderate temperatures, treated to a regular lees stirring without any malolactic. The finished wine is matured in a selection of seasoned and new Vosges French oak barriques for a year before bottling.

Mid golden hue. An intense and complex nose displaying stone fruit, melons and fig with cashew and creamy barrel ferment characters balanced by a spicy oak background. The palate is tight and juicy yet refined with nectarine, melon and citrus fruits. A mineral backbone showing mealy notes, spices and nutty, creamy oak flavours on a long and lingering back palate. Scotchmans Hill is a Chardonnay of great structure and complexity.

Parcels from several vineyards are included, each trained to vertical shoot positioning and planted to naturally inhibiting soil structures, achieving harvests of intense, low yield crops. Various winemaking techniques are employed, each contribution is treated and attenuated individually to create a more complex and dynamic wine. These included the use of both selected and natural yeast strains, a mixture of tank and French oak maturation along with a component of partial malolactic ferments.

Light lemon yellow straw green hues. The nose finds buttery, sweaty oak underlined by tropical and citrus fruits. The rich and satisfying elements of melon and mineral are impeccably integrated with smart oak, gooseberries, grapefruit, banana and apple flavours. The finish is lingering and clean, elegant and immensely satisfying.
