This means that grapes mature on the vine for a longer period, enhancing flavour and colour extract. The temperate sea breezes off Port Phillip Bay afford some protection from extreme summer heat, especially in January and February as the grapes achieve ripeness. Crop levels are normally low and fruit is selectively hand picked to ensure only those grapes in the best condition are included. Parcels of Chardonnay are whole bunch pressed into French oak barriques for fermentation. Batches are sulphured as malolactic is discouraged, the wine remains on lees and is treated to monthly stirring until bottling in June.

Light to medium straw hue, youthful green highlights. Aromas of lemon curd, grapefruit and varietal peachy notes. Barrel fermentation characters are also apparent. The palate is complex and long. Mineral, smoky flavours give way to buttery lees contact notes with the powerful primary fruit remaining in the foreground. A long, satisfyingly dry yet fruit and stone filled finish.

Parcels are settled on full grape solids and inoculated to a combination of wild indigenous and winery yeast. Components are treated to an individual vinification in a high proportion of new French oak barriques. A course of lees stirring batonnage builds luxurious texture, palate richness and length. A total of nine months in barrel without any malolactic preserves and retains the wonderfully crisp, slatey acidity of Tumbarumba Chardonnay. Upon completion, the best barrels are treated to a strict cull to arrive at the final assemblage.

The twenty four acres, single vineyard Kenton Valley property was selected by Mike Press on the basis of its cool microclime, its optimal altitudes of 500 metres above sea level and level of precipitation that's similar to many of the great winegrowing regions in the old world. Vines are all closely managed, a priority is placed on quality over quantity. Chardonnay is hand harvested throughout the cool of early morning to retain the pristine fruit characters. Grapes are treated to a cool vinification and bottled unoaked, to capture and preserve the immediacy and vitality of Adelaide Hills Chardonnay.

Light pale straw hue. A vibrant nose of grapefruit and melons, apples and nectarine, a discernible, highly regional Adelaide Hills bouquet. Crisp and refreshing palate brimming with layers of fruit, grassy notes, minerality and complexity provide interest. A length of stonefruit flavours are balanced by aromatic grapefruit characters before a clean acid finish.
