Redgate Bin 588 Cabernet Merlot

The Redgate property is one of the southernmost vineyards on Margaret River, situated just three kilometres from the Indian Ocean. The family owned and operated wineworks at Redgate create impressive red wines endowed with the characteristic nose and flavour of Margaret River. Bin 588 was first made in 1988 and has always included harvests of grapes sourced from good local vineyards. This stylish cepage of Merlot with Cabernet Sauvignon is medium bodied with a delicious burst of of ripe dark fruits, plum and blackberry aromas.

Redgate was planted in 1977 by the Ullinger family, it remains family owned and operated to this day. Redgate's vines are grown on a ridge of ancient soils less than three kilometres from the Indian Ocean. This unique combination of soil and maritime clime enable Redgate to nurture fifty acres of vine for the production of true boutique wines. Crafted around a backbone of estate grown fruit, components of Bin 588 are vinified separately to drynesss, followed by transfer to a mix of one and two year old French and American oak barrels for completion of malolactic and a year's maturation. Barrels are treated to rigorous fining trials to achieve the finest balance and determine the final assemblage.
 
Deep ruby colour with purple hues. Black fruits and plum, blueberries and sweet spice dominate the nose, a delicious burst of ripe dark fruits and mulbery seasoned by subtle spice. Blackcurrant, jubes and fruit pastilles drive a palate that's framed by savoury oak and soft velvety tannins. There's plenty of action to Bin 588, a combination of fine texture and fresh bright fruits, worthy of ageing while ultimately fashioned for immediate drinking.

Redman, red estate, red soil and red wine, the four Rs which comprise the family coat of arms, working in harmony to produce the famous Cabernet of Coonawarra. The Redmans have been actively involved in all major developments involving Coonawarra viticulture since establishment in 1908. After joint ventures with Penfolds and Mildara, Dr Lindeman purchased the Redman property and renamed it Rouge Homme. Owen Redman ultimately returned to the family estate, eventually acquiring the land on which the winery stands today.

Reschke Bull Trader Cabernet Merlot

Burke Reschke was the fourth generation to graze cattle, he took a keen interest in viticulture and sold his harvests to Coonawarrra's leading brands. The fruit was of such exceptional quality that it became an essential component for a number of icon wines. Reschke now retain the cream of their crop for their estate label. Two thirds Cabernet, the balance of Merlot, treated to two years seasoned French oak hogsheads and barriques. Full bodied, blackberries and mint, a seamless palate of structure and length, to match a cut of juicy beef, farmed by Reschke of course.

Smith & Hooper are sourced entirely from two Wrattonbully estate vineyards, adjacent properties which have long been owned and operated by the Smith and Hooper families. These are premium red wines from exceptional sites where the philosophy is to let the terroir speak for itself, and it does. The elements of soil and climate are so exceptional, that they elevate the noble cepage of Merlot with Cabernet Sauvignon into a profound wine of distinction and finesse.

Smith & Hooper's vines are trained for optimal ripeness and depth of flavour, the plantings arew trellised with a catching wire, which provides structure and stability, allowing the grapes to receive dappled light. Cabernet is harvested at a range of ripeness levels, Merlot is picked earlier. Parcels are treated to static fermenters, pumped over four times daily. Upon completion, batches are filled to a selection of mostly French oak hogsheads for a year and a half before the final assemblage.
 
Dense red in colour, with crimson hues. Plummy on the nose, exhuding aromas of intense fruit, predominantly violets and black currants with vanillin overtones. Powerful palate with excellent structure, sweetly scented oak and an integration of rich fruit within a wine of velvet textures, length and fine balance. The strength of Cabernet, the softness of Merlot and richness of Wrattonbully.
St Huberts Cabernet Merlot

Hubert de Castella's passion for Yarra Valley saw him establish St Huberts in 1862. By the late 1800s it had grown to be the largest winemaking estate, the wines enjoyed immediate success in markets local and abroad. The onset of the Great Depression, the increasing popularity of fortified wine and the emerging profitability of dairy farming saw the vineyard revert to grazing in the 1920s. It wasn't until the 1960s that Yarra Valley again rose to prominence as a wine producing region and St Huberts was once again, one of the leading protagonists.

Sourced primarily from vineyard sites on the lower slopes of Yarra Valley, which provide the warmth required to produce rich, flavoursome Cabernet and Merlot grapes. The individual vineyard parcels are vinified in a range of fermentation vessels to enhance the complex flavour and tannin profiles of the fruit. Parcels are separately pressed off skins and racked into French oak to develop further depth and complexity. The aim is to construct a wine true to the regional style whilst highlighting the harmony and splendour of the synergy between Cabernet and Merlot. The finished wine is treated to an extended term in a selection of seasoned and new French and American oak barriques.
 
Deep red with crimson hues. Lifted Merlot red currant and cherry notes are married with the leafy plum Yarra Valley Cabernet. Toasty, cola oak, complex with earthy, black olive characters. Medium bodied, a round and even palate, the Cabernet component shows cassis, Merlot's offers fleshy red fruits, the tannins are soft and supple yet persistent, subtle oak derived notes of bacon and smoke in the background.

Margaret River is Australia's premier Cabernet appellation and Cabernet Sauvignon is without doubt Margaret River's great vinous endowment. Fine Cabernet should be perfumed yet poised, and meticulous site selection is critical to achieving these qualities. Stella Bella is a mostly Cabernet wine with a third of Merlot, all sourced from several select vineyard sites located centrally around the township of Margaret River and north to Cowaramup, in an endeavour to capture ripe fruit flavours yet retain the distinctive perfume of Margaret River Cabernet.

The key selection criteria are all about soil, the best sites consist of lateritic gravels over a clay loam base. The flagship Isa vineyard, just south of Margaret River provides the backbone of fruit. It's signature perfume is ever present in the wine, year in and year out. All the individual vineyard parcels are vinified separately. Following fermentation on skins and completion of malolactic, Stella Bella is treated to a luxurious selection of French tonnellerie's barriques for extended maturation. The length of time ageing is important for the complete integration of oak, fruit and tannins in the final wine. Bottling occurs in May of the second year, followed by several more months of bottle age.
 
Dark ruby. Young, powerful and deliciously ripe Cabernet aromas of cassis and mint with a touch of mocha and toasted oak spice. A rich, lush palate of abundant fruits over hearty tannins, currants and mulberry, blueberries and cassis, the savouryness of dried herb and and a long lingering finish of smoked meat complexity, cinnamons and clove, all supported by an inseparable length of the finest French oak.

Vines planted to gently rolling gravel hills and managed to restrained yields achieve the finest harvests. Girt by Sea is a seemless Cabernet Merlot wine in suave Margaret River styling, vigorously fruit driven and seductively soft, its ripe tannins offer sensational early drinking, it will thrill all who indulge in this most satisfying West Australian accord of noble red grapes.

The viticultural team employ maximum vine management in terms of canopy maintenance, aiming for low bud numbers and small bunches per vine for premium fruit quality, clonal selection is also an area of close attention. Parcels of Merlot and Cabernet are de-stemmed but remain uncrushed, to preserve whole berries, into a mix of open and static fermenters. Gentle hand plunging and pumpovers were employed up to three times a day throughout a fortnight's vinification at temperatures under 25ËšC. Upon completion, batches are pressed off skins into a selection of seasoned and new French and American oak barrels for a year's maturation.
 
Dark crimson red. Lifted bouquet of cassis and mulberries, dusty briar notes, hints of cedar and vanillin from the fine grained oak. An elegant wine of excellent flavour concentration, juicy, ripe fruit, blackberries, dark cherry and mulberry. Silky tannins integrate seamlessly, gently oaked and subtley spiced, the fine, comforting tannins taper to a structured, clean finish.
