A superb accord of elite parcels Cabernet Sauvignon from the oldest De Bortoli blocks in Yarra Valley. Fruit is sourced from two estate vineyards, suitably named Old Hill and Old Back, both established 1971. A beguiling overture of seductive dark Cabernet fragrances and fragrant jube berry flavours over fine integrated tannins. Like her eponymous opera star, Melba is conspicuous for her alluring perfumes, exceptional taste and intense crescendos, before an exquisite, memorable finish.

Vines are cane pruned to twenty bunches each and shoot thinned at the ten to fifteen centimetre stage so that there are no more than fifteen per planting. Grapes are hand picked into 8kg buckets and transported to the Dixon Road wineworks. Fruit is destemmed, crushed and tipped into six tonnes open fermenters. The musts are treated to a natural fermentation on skins at a minimum temperatures of 25C, followed by a spell of three weeks maceration. Batches are pressed, settled overnight and gravity filled to a selection of seasoned and new fine oak casks where they mature for a year or more at a very temperate 16C.
 
Bright crimson red with traces of garnet. Fragrant seductive varietal aromas with a nuance of cigar box and leaf, rich and complex nose, leafiness and blueberry over a background of sweet earth and cedary oak. Full fleshy texture, sweet black and red fruit flavours with complex notes of dusty earth, leaf and dried herbs, fine grain, well integrated tannins before a long harmonious finish. Enjoy alongside roast pork or lamb.

David O'Leary and Nick Walker have amassed hundreds of gold medals and trophies between them, including the prestigious Jimmy Watson. A shared confidence in the quality of Clare Valley fruit was the catalyst for them to establish their own winery. Cabernet Sauvignon from the Doctor's Block at Polish Hill, a superior cool climate site, dry grown and low yielding, is vinified alongside a choice parcel of Malbec, picked off the estate vineyard in Watervale, taming the solid tannin structure and bringing the assembled wine forward.

Walker and O'Leary both love the job of making wine. They find their inspiration working amongst the vineyards of picturesque Valley Clare. Two thirds Cabernet Sauvignon, the balance in Malbec, are separately vinified through the action of wild yeasts in two and four tonnes fermenters, over the course of a fortnight. Batches are hand plunged twice daily and held on skins for a further fortnight to enhance complexity and build tannin structure. Upon completion, components are pressed and racked to a selection of seasoned and new French oak for two years maturation.
 
Rich ruby red, inky, vibrant hues. Well perfumed with red forest fruits, sweet cassis and intense florals. Textural palate, concentrated, generously flavoured, the gorgeous florals flow, classic forest fruits and intensity of oak, supported by juicy tannins and divine mineral acid length. a fully elegant style of Cabernet Sauvignon, complemented by the affable tannin structure of Malbec.

Parker Estate was built from the ground up in the right way, with the intention of producing precisely this style of wine. Established in 1985 by an old industry salt, quality winemaking was the only priority and commercial constraints played no part in the development. Integral to the style and structure of First Growth is the seven day warm fermentation and four to six weeks of maceration on skins. Individual parcels are then matured eighteen months in a selection of mostly new, Seguin Moreau Chateau and Taransaud Chateau, 228 litres French oak barriques. The final assemblage is returned to oak before egg fining and bottling.
 
Mid to deep red purple hue. Highly complex nose, showing dark berry fruit and forest floor characters, tobacco and spice notes within a lifted smoky French oak frame. Intense palate with rich ripe black fruit, liquorice notes and firm structured savoury tannins. Medium bodied but with very intense fruit and good perfume, a magnificently proportioned Cabernet Merlot accord.

The history of Penley dates back to 1858 when The Phoenix Winemaking and Distilling Company was established at Stepney. During 1888 the company name was changed to Tolley Scott Tolley and remained with the family until 1960. Tolley's great grandson Kym re established T.S.Tolley as Penley in 1988. Phoenix is a reference to the re emergence of Tolley winemaking traditions and enduring Coonawarra vineyards. Dominated by Cabernet fruit characters, bramble and cassis, Phoenix offers a generosity and structure that's distinctly Coonawarra.

The value and quality of Coonawarra was first recognised by D. A. Tolley who was a purveyor of oak barrels and winemaking gear in 1908, where he gained access to the wines of Coonawarra. To quote from early Tolley records, Coonawarra wines were distinctly different, dark purple in colour, they exuded a lovely perfume whilst fermenting. Nothing has changed. Phoenix is an early drinking Coonawarra Cabernet treated to an open fermentation in traditional heading down vessels, followed by a regimen of barrel ferments to achieve balance and integration. The completed wine are treated to an extended maturation in a selection of new and prior use French oak barriques.
 
Bright crimson with dark purple hues. Fragrant aromas of violet, black currant leaf, ripe wild berry and varietal Cabernet spice over complex, well integrated oak fragrances. Mulberry and blackberry dominate the tight palate, enhanced by silky grape tannin and elegant complex cedar oak. A very generous middle palate scented with hints of liquorice and chocolate linger long on the finish, made to enjoy in its youth.

Whole bunches are de stemmed, crushed and chilled into Potter heading down board or 1½ tonne open fermenters. The must is inoculated after three to four days cold soak. Potter fermenters are rack and returned each day, the juices are drained away from skins and pumped back up, refloating the cap. Open fermenters are hand plunged twice daily, ensuring the floating cap does not dry out. The sugar dry batches are drained off, skins gently pressed and the combined wine gravity fed with full lees to a selection of seasoned and new, French oak barriques. Upon completion of malolactic, components are rack and returned for an extended term of maturation, followed by the final cull and assemblage.
 
Deep intense colour. Complex nose expressing blackcurrants and plum alongside cedar, spice, classic leaf characters and graphite. An elegant Coonawarra style, the Shiraz adds a lovely sweet supple middle presence to the palate, important in a young wine. An impressive red wine to decant and to savour, the tannins are soft, sandy and abundant, a big brooding dry red which will sit happily alongside the best Coonawarra vintages.

Andrew and Neil Pike aim to produce wines which reflect the character of grape, the endowments of Valley Clare Valley and expression of vintage, producing the best efforts possible out of each and every year. The brothers are quite happy to watch over the wines during throughout their formative stage and intervene only when necessary. Cabernet and Merlot grapes are lightly crushed and destemmed, minimal amounts of SO2 are added at the crusher prior to maceration and fermentation. All red wines are matured in high quality 228 litres French oak barrels for at least a year, racked on ocassion and topped up once a month to ensure the angels receive their share.
 
Medium bright red colour. Attractive aromas of ripe blackcurrant and black cherries, with a touch of charry French oak complimenting the concentrated fruit characters. Some dark chocolate and violet/ leafy notes showing. Rich flavours of ripe, dark fruits and chocolate are the features here with fine, dry tannins, subtle oak and balanced acidity adding length and structure to the finish.

Winemaking at Pirramimma has been a family affair for well over a century, it now lies in the hands of the founder's grandchildren. This stylish assembly of Merlot and Cabernet is crafted from fruit grown to fully mature, estate grown vines over twenty years of age. Like all Pirramimma, Stocks Hill is completely vinified and matured on premises under patriarch Geoff Johnston's personal supervision. The highly approachable Stocks Hill is one of McLaren Vale's most agreeable Cabernet Merlot wines and has won numerous medals throughout the vintages.

Geoff Johnston is a winemaker with a world perspective. He is a graduate of the Charles Sturt University and studied in France where his strong interest in the classic Bordeaux varieties flourished. The comerstone philosophy is to produce wines from grapes grown to family vineyards, thus ensuring that the highest possible quality standards are met, and that the wines showcase the unique regional characteristics of McLaren Vale. A combination of high cordon trellis, hand pruning and idyllic growing conditions have produced grapes with bountiful flavours, ripe tannins and good acid balance. An extended maturation of twenty four months in American oaks has softened the wine and enhanced complexity.
 
Bright scarlet colour with darker robes. Bouquet of violet, spiced blackberry and cedary oak. The palate delivers briars and blackcurrants, red cherries complemented by toasty oak, all integrated with hints of pepper and blueberry, balanced by subtle toasted oak. A rich, firmly structured wine with tannin, fruit and oak in complete harmony.

Wines are meant to complement life's experiences, to express the quality of good fruit without being overworked by the maker. To this end, Pitchfork is fashioned to an approachable modern styling. Cabernet and Merlot grapes are destemmed and fermented separately in open vessels with extensive pump over cap management to aid colour and flavour extraction, as well as optimize tannin development. The aim is to construct a wine with loads of fruit flavours and background tannin, providing structure without astringency. Components are pressed off skins and matured in a selection of new and seasoned French oak barriques, developing complexity and softening the tannins without dominating the fruit.
 
Youthful red hue, excellent depth of colour. The bouquet speaks of ripe berry fruits and chocolate mints which are the hallmark of Margaret River Cabernet. Good concentration of ripe plum, mocha and licorice with elements of blackberry, violets and cherry, all serving to form an impressive, fruit filled, fleshy middle palate. A soft round mouthfeel with ripe tannins to complete the finish.
