Small batch fermentation ensures the character of these precious old vines is preserved in the final wine. Grapes are crushed into fermentation vessels, vinification, macerations and aeration are combined in a way to ensure the gentlest extraction of colour, tannins and true expression of fruit. Each parcel is separately handled and matured. After sixteen months in a selection of new and seasoned French oak barriques, each barrel is rigorously appraised to identify the best of the best. In some years, Malbec is assembled into the final wine to contribute pristine blackberry fruit, exotic spice and structural complexity.

Low yielding, dry grown vines planted on some of the world's oldest soils enjoy long, warm growing seasons and cooling summer breezes from the nearby Indian and Southern Oceans. This moderating effect yields grapes of exceptional concentration and intensity, whilst retaining elegance and finesse. Heytesbury is a selection of the best barrels from the best batches. Cabernet Sauvignon, Malbec and Petit Verdot are separately treated to small fermenters, basket pressed and sent to a selection of the finest French oak barriques for nineteen months maturation.

Bunches are de stemmed to retain as many whole berries as possible. Parcels are separately vinified in open and upright fermenters over the course of a fortnight at temperatures below 25C, while treated to a course of gentle pumpovers and plunging. Upon completion, some batches are held on skins for a term of optimal extractions. Components are pressed into a high proportion of new French oak barrels for twenty months maturation, periodically rack and returned for clarification before assemblage.

$2699each $323DOZEN EACH DOZEN The viticultural team employ maximum vine management in terms of canopy maintenance, aiming for low bud numbers and small bunches per vine for premium fruit quality, clonal selection is also an area of close attention. Parcels of Merlot and Cabernet are de-stemmed but remain uncrushed, to preserve whole berries, into a mix of open and static fermenters. Gentle hand plunging and pumpovers were employed up to three times a day throughout a fortnight's vinification at temperatures under 25ËšC. Upon completion, batches are pressed off skins into a selection of seasoned and new French and American oak barrels for a year's maturation.

Dark crimson red. Lifted bouquet of cassis and mulberries, dusty briar notes, hints of cedar and vanillin from the fine grained oak. An elegant wine of excellent flavour concentration, juicy, ripe fruit, blackberries, dark cherry and mulberry. Silky tannins integrate seamlessly, gently oaked and subtley spiced, the fine, comforting tannins taper to a structured, clean finish.

Voyager are all about hard work in the vineyard rather than improving the quality of harvest through clever winemaking. Traditional techniques are essential to crafting great wines but the basic principles most common to the world's most memorable vintages are all about what goes on in the vineyard. $3499each $419DOZEN EACH DOZEN Voyager's seven Shiraz blocks comprise five different clones, planted to some of the toughest, shallow, gravelly soils which reduce the inherent vigour of this variety. With the cooling sea breezes off the Indian Ocean and intensive viticultural management, including crop thinning and green thinning, the vines are sensitively managed to produce Shiraz grapes with impressive fruit characters. Small batch fermentation and gentle winemaking techniques are employed to ensure the fruit aromatics are respected, that the fine tannins are preserved and intense colour is extracted from the grapes. The final wine is treated to a year's maturation in a selection of French and American oak barrels.

Dark crimson with vibrant purple hues. Lifted aromas of black and blueberries, creme brulee and dried flowers over hints of dusty vanillin oak. A long and balanced mouthfeel with fantastic rich black fruits on the middle palate. Gravelly earthy notes, hints of spice and anise intertwine with sweet vanillin, black olives and cedary oak, all complemented by soft powdery tannins.

Clémentine is sourced entirely from Woodlands Brook Vineyard, established to Merlot and Malbec, Verdot and Franc, a superior northwest facing site on free draining Wilyabrup soils. A block of Cabernet vines were later added to a patch of auspicious heavy gravel clay soils, perfect for the realization of powerful Cabernet Sauvignon. Salinity, cocoa and clove, blood orange and river silt, the elegant palate brimming with ripe red fruits, a lovely mix of floral elements and winegum lozenge complexity, Clémentine lingers endlessly on a line of lively mineral acidity.

Vines are all treated to a traditional, fully organic viticulture, dry grown and closely husbanded by hand. Grapes are picked at vintage to a methodical timetable, determined by physiological ripeness of each individual parcel, row by row. Following the harvest, fruit is gently destemmed, hand sorted berry by berry, then crushed and fermented in small fermenters. The Cabernet Sauvignon component remains on skins for added complexity and tannin integration. Upin completion, batches are filled into a high proportion of new French oak barrels for eighteen months maturation.
