Chardonnay vines fare exceptionally well in Margaret River, as appropriate shading yields intensely flavoured fruit with excellent natural acidity. The afternoon sea breezes typical of the region, cap the daytime temperatures and produce cool summer nights for which Margaret River is renowned. The balmy climes encourage ripening of the white varieties as flavour ripeness is achieved at lower Baumes with excellent acid retention. Grapes must be picked from midnight to 7am and are processed separately without delay to preserve quality and freshness.

Chardonnay is selectively hand picked across separate blocks on different dates, over the course of two or three hours as flavours peak. Parcels are chilled to 5C and passed through an airbag press into new French oak 500L oak puncheons, only the finest quality pressings are retained. Barrels are vinified through the action of wild indigenous yeast, imparting great depth of flavour and aromatic complexity. Upon completion, barrels are topped up and treated to a term of maturation, regularly lees stirred to develop mouthfeel and texture. The best barrels are identified and assembled into the final wine, followed by an extended term of bottle age under the Evans & Tate cellars before release.
 
Mid golden straw hue. A pure expression of Margaret River, delicate layers of complexity that slowly build and evolve, lemons and lime, white peach and melon aromas provide primary fruit intensity with savoury elements of toast, slate and dried herb. Citrus flavours provide great freshness with stonefruit and melon flavours imparting concentration and fruit intensity. The barrel ferments achieve lovely textures and complex savoury notes.

Shiraz is selected from vines grown to the central and northern part of Margaret River, parcels which have shown remarkable balance year after year, consistently yielding loose, intensely flavoured bunches with small berry size, critical to the Evans & Tate style. The superlative ripening conditions allow flavour and tannin development to catch up with sugar ripeness, producing an intensely coloured wine with ripe, concentrated flavours and fine, soft tannins. Evans & Tate have spared no expense and have pulled all the stops to deliver a world class Shiraz.

All grapes are hand picked throughout the cool of early morning, a choice parcel is included as whole bunches. The musts are transferred to a small fermenter and cold soaked at 5C for several days, followed by ten days of ferment at 22C to 24C. Juices are rack and returned over the cap for the gentle extraction of colour and tannin. Upon completion, batches are gently pressed and pressings returned to the free runs, adding structure and style to the finished wine. Components are matured a year or more in a combination of seasoned and new French oak puncheons, hogsheads and barriques. Every batch represents an individual vineyard block and is kept separate until final assemblage.
 
Dense purple black. Bright mulberry and plum fruit aromas, lifted notes of spice and black pepper with a delicate layer of cedar and toast from barrel maturation. Mulberry, blood plum and pepper flavours seamlessly integrate with refined oak characters of cedar, toast and spice. Rich on the tongue with impressive overall integration and fruit intensity. The Margaret River of choice, to mate with seared rib and red wine jus.

After an exhaustive search to isolate the finest site for Margaret River viticulture, John Evans and John Tate planted vines on a piece of land along the northern bank of Wilyabrup River. One of Evans & Tate's most enduring labels, drawing fruit from across all of West Australia's premier winegrowing precincts, Gnangara have consistently delivered opulent, mouth filling red wines which are charged with the definitive west coast style and charm. Cuisine? Match Gnangara with a cut of yearling beef and dressed in porcini and wine sauce.

Cabernet and Merlot grapes from each block of vines are tasted twice weekly to determine the perfect time of harvest. Merlot is picked between midnight and early morning to ensure it reaches the winery as cold as possible. Fruit is gently destemmed into fermenters for a few days of cold soak, infusing aromatics, good colour and tannin structure. Cabernet Sauvignon is picked during the day for immediate vinification. Each parcel is fermented for several days, thoroughly aerated every eight hours along with seed removal. Upon completion, batches are pressed and racked off yeast lees, a choice component is filled to a selection of French oak barrels for a term of maturation, followed by assemblage into the final wine.
 
Dense purple colour, bright red, purple rim. Lifted ripe plums and red berry fruit notes on the bouquet, complimented by hints of clove and vanilla bean spice. Supple fruit core of juicy dark plum and bright red berry fruit notes dominate, held together by a lovely acid line and supporting oak. The tannins are just there, velvety, the palate extends itself with persistence, to a long dry finish.

The enduring Evans & Tate were at the forefront of Margaret River's rise to international recognition, to this day they are endowed with some of the region's most bountiful Cabernet vineyards. Their viticultural team have trained the resplendent sites to bestow perennially upon the winemakers, vintages of increasing excellence. The best parcels are selected and vinified to a mix of old and new world techniques, to achieve a Cabernet wine with an intensity of flavour in compelling, Margaret River styling.

Evans & Tate's vineyards produce ripe, intensely coloured Cabernet berries brimming with bright varietal characters and endowed with soft textures. Prior to picking, grapes are tasted twice weekly to monitor flavour, colour and tannin development. Bunches are harvested throughout the cool of night and early morning, gently destemmed, transferred to static fermenter and cold soaked for several days. Parcels are fermented at 22C to 24C as seeds are carefully extracted and batches thoroughly aerated every eight hours. Upon completion, components are pressed to tank and racked clean off yeast lees, a third of Gnangara is matured in French oak.
 
Deep purple red colour. Pure Cabernet nose exhibiting briar, fresh blackberry and blueberry aromas ahead of a leafy menthol/spearmint lift. French oak maturation has infused delicate cedar and subtle spice notes. Palate is filled with ripe blueberry and plum, fresh, flavoursome and long with perfectly integrated characters of cedar and toast. Bliss alongside roast beef and crisped potatoes.

Gnangara Sauvignon Blanc
Manjimup Pemberton
Gnangara, pronounced nan-gara, is a reference to the underground spring which nourishes much of the fertile region surrounding the original Evans & Tate wineworks. The perpetually replenished vines yield grapes with great flavour intensity and natural acidity, particularly from sites around Manjimup and Pemberton. The freshness of lime zest comes from Manjimup, Pemberton contributes vital slatey and grassy characters.

Sauvignon Blanc, principally from Manjimup and Pemberton, a pure varietal wine of intensity and concentration. The cool maritime nights and favourable ripening seasons stimulate the vines to develop pungent characters and electrifying acids in the fruit. Grapes are picked throughout the cool of night and lightly pressed. Juices are cold settled in tank at 10C for two days before being racked, warmed to 17C and inoculated to choice strains of yeast for a cool fermentation. Upon completion, portions are kept on light, fresh yeast lees for up to three months. Components are assembled and lightly fined, stabilised and filtered, minimal handling retains the attractive primary fruit qualities of the Gnangara style.
 
Brilliant pale yellow hue. Intensely varietal with layers of lime zest, fig, passionfruits and cut grass. Dry and beautifully refreshing, especially when slightly chilled. The freshness of lime zest comes from the Manjimup component, Pemberton contributes slatey, grassy flavours. Dry and beautifully refreshing, especially when consumed slightly chilled alongside the freshest faire.

Evans & Tate were at the forefront of the Margaret River's rise to international recognition as one of the world's great winegrowing appellations

Like many tales, Evans & Tate's does not begin in Australia. Lionel Teitelbaum was born in 1899 in a village called Nicopol in the Ukraine. Still a young boy when he emigrated to Australia in 1909, Lionel was bounding with confidence and enthusiasm. Such energy translated into a successful family and business life, creating a solid foundation for the future Tate generations. Lionel ensured that his son John enjoyed the benefits of an education as well as an appreciation of cultural pursuits including art, music and wine.

Evans Tate

As his business career matured, John Tate was able to turn one of his lifelong dreams into reality when he purchased a small vineyard with friend and business partner John Evans. The following year the Tate involvement in the industry became absolute with the purchase of a small winery called Gnangara Wines, located in the historic Swan Valley, just north of Perth.

A state of the art 7500 tonne crush winery, built with this philosophy in mind, is sited at the Lionel Vineyard in Jindong. The winery reflects the professionalism and commitment shown in all areas of the company.

Evans & Tate have invested heavily in cutting edge winemaking equipment, impressive stocks of French and American oak, and the best laboratory facilities. The winery is close to all major vineyard sites from which grapes can be sourced, which gives the winemakers enough freedom to make each parcel of fruit in accordance with it's specific flavour profile and attributes.

The wines of Evans & Tate have consistently merited high critical acclaim and accolades from peers and public alike. Evans & Tate has created an enviable show record over the years receiving numerous trophies and gold medals at both domestic and international competitions. With each individual style of wine, the team looks to achieve intensity of flavour, complexity and regional character.

"From its Swan Valley base 30 years ago, Evans & Tate became the largest Margaret River winery and producer. Having increased its estate vineyard holdings with the establishment of a large planting in the Jindong area, it raised substantial capital by listing on the Stock Exchange. It then turned its attention eastwards, with the acquisition of Oakridge Estate in the Yarra Valley, followed by Cranswick Wines (since sold). It became a casualty of the downturn in the market in 2005, its future direction uncertain, a merger with a US company aborted in March '07. No single achievement has meant more to the winemaking team than the Trophy for Best Red Wine of the Competition at the 2000 International Wine Challenge in London for Evans & Tate 1999 Margaret River Shiraz. This award was especially significant as it validated the Evans & Tate viticultural and vinicultural philosophy, whilst crystallizing the Margaret River region as a truly world class winegrowing appellation.
