In 1974 Yalumba created an outstanding Cabernet Shiraz blend known simply as FDR1A. The wine soon became legendery, appreciated for its solid presence of fruit and controlled power. Grapes are all hand picked and crushed into eight tonnes open top fermenters. The natural, wild yeasts present on skins initiate vinification, cultured winery yeasts are added to complete the ferments. Skin management is controlled by a special Yalumba designed cap plunger, to achieve a wine with excellent depth of colour, richness and complexity. Aged sixteen months in a selection of seasoned and new French oak hogsheads and barriques, crafted by artisans at Yalumba's own cooperage.
 
Dark, intense red colour. Aromas of bright mulberry fruits supported by black cherry and anise, cedar and spice. Medium to full bodied, a complex and plushly textured wine, quite seamless with long, fine grainy tannins that reveal an elegance and refinement on the finish. An amazing level of approachability upon release, it's excellence of oak makes it the perfect red wine to serve as an accompaniment today alongside roast beef and bearnaise.

Menzies is a stellar single vineyard Cabernet from the House of Yalumba, grown to an exceptional site at the heart of cigar shaped Coonawarra Terra rossa. Since inaugural vintage, Menzies has been crafted to small batch techniques, maintaining the integrity of each constituent parcel right through to maturation. Only the finest of the candidate wines of vintage are selected before assembling into Yalumba's flagship Cabernet, crammed with rich blackberry fruit, supported by the most extravagant oak and polished, showroom tannins.

Named after Australia's own Churchillian prime minister and red wine enthusiast, Menzies grows in stature and quality with each vintage. Grapes are crushed into small static fermenters where the liberations of colour and tannin are controlled by plunging the skins, irrigating the fermented wine over the cap and draining the juices from skins before flooding them back. Select parcels are given extended skin contact before pressing. Components are aged eighteen months in a selection of new and prior use American, Hungarian and French oak hogsheads and barriques, crafted at the Yalumba cooperage. The parts are assembled and treated to a further term in barrel before bottling.
 
Deep red with crimson hues. A bouquet of powerful cool climate Cabernet, notes of violet and briars, dark cherries, dark mocha couverture and hints of dry leaf forest floor. Rich and full bodied palate showing bright, ripe fruits of cassis and dark berries, savoury plums, the characteristic sea spray notes of Menzies vineyard. Mid palate is full of structure, finishing on a lingering length of powdery tannins.
Yalumba Octavius Old Vine Shiraz

Outstanding Langtons Classification. Octavius has established a reputation as one of Australia's Shiraz icons. In addition to being sourced from a number of very old Barossa vineyards, Octavius is treated to an extended period in American oak octaves of ninety litres capacity, the only red wine in the world to be matured in such small barrels. The secret of the wine not becoming overpowered by oak lies in the wood itself, which is open air seasoned at Yalumba's own cooperage for eight years before the octaves are coopered and put to use.

Grapes are all hand picked from heirloom vineyards, bush vines planted between late 19th and early 20th century, the oldest dates back to 1854. Fruit is crushed into eight or six tonnes fermenters, the wild yeasts present on grape skins initiate fermentation. Vinification and cap skin management in open and static potter fermenters is controlled by the Yalumba designed cap plunger. The result is a wine with excellent depth of colour, richness and complexity. Matured twenty months in a high proportion of new French, American and Hungarian oak hogsheads, octaves and barriques. Yalumba are one of the few wineries in the world who retain their own coopers practising the ancient craft of barrel making.

Yalumba have pioneered almost every development in new world viticulture for over a century. Made to a holistic philosophy, fermented through the action of wild, indigenous yeasts and subject to minimal intervention, an organically grown and crafted wine is ironically an embrace of old fashioned methods. Vigilance and attention in the vineyard translates into a finished wine of excellent flavour profile and solid tannin structure. Exacting standards of viticulture are employed to ensure that grapes are in perfect condition when picked and arrive at the winery in the cleanest, healthiest state. Many of Yalumba's most dedicated growers have been converting to organic viticulture for years, their hard work yields a quality of fruit with intense varietal characters. Choice parcels of Viognier are grown to environmentally sustainable techniques, fermented through indigenous yeast and little human intervention by the highly accomplished Yalumba team. All grapes selected are from sites which have been certified by the Soil Association of the UK and NASAA Australia as approved organic producers.

Yalumba adopt a holistic approach to environmental practices, focussing on the sustainability of natural resources. Making good Viognier is a priority, keeping the environment clean and green contributes to the ultimate quality of wine. After six generations of family ownership, the future is as important as the present. Located on the Murray River at Loxton, the beautiful organic Barich family vineyard produces wonderful Viognier. They work with the Basshams of Barmera, who have been producing Viognier of a high quality for Yalumba for some time but have only recently been certified organic. Meticulous hand detailing in the vineyards ensures that the grapes are in perfect condition when picked.

Few Australian winemakers have had as much experience with GSM as Yalumba. Their learned team are always very excited about this old world style. Parcels are collated from good Barossa vineyards, separately picked and vinified in small batches, before being aged in a selection of large and small oak vats, puncheons and barriques. All parts are encouraged to mellow and integrate, while creating texture and infusing complexity. Layered and supple, spiced red and black berry fruits are drizzled with moreish chocolateynerss, long and lingering on a finish of velvet textured tannins.

Yalumba Samuels Garden Old Bush Vine Grenache

Often described as one of Australia's unsung heroes, Grenache is naturally lighter in colour than other reds but delivers generous wines with an immense palate. Yalumba is extremely fortunate to have amongst its growers a resource of very old, gnarly bush vines which produce low yields of concentrated fruit. A range of terroir and climes across the different sites, sandy soils, loam and clay, contributes to a palate with greater uniqueness and complexity. Individual parcels are separately crushed into six tonnes static pumpover fermenters or eight tonnes open top steel vats, employing the Yalumba design cap plunger. Most parcels are completely destemmed, some batches are left with stems on to contribute complexity and texture. Wild indigenous yeasts present on grape skins initiate the ferments, this may happen within the first twelve hours or it may take up to three days, cultured yeasts are then added to ensure completion. Upon completion, select batches are treated to a term of up to three months on skins for maceration. Components are then filled to a selection of prior use French, American and Hungarian oak hogsheads for nine months.
 
Medium crimson red with purple hues. A generous and bright aroma with sweet jube-like plum fruits, lifted pot-pourri and lavender florals over a savoury, complex earthy background. Wrapped around a core of juicy red currant fruits, the palate combines layers of fleshy sweet flavours before a fine grained tannin finish. The Hill-Smith family were at the very genesis of the Australian wine industry and made a major contribution to the development of Cabernet Shiraz as an internationally recognizable genre of wine. Yalumba was founded in 1849 by Samuel Smith, migrant and brewer, he settled in the village of Angaston. Smith and Smith Jr planted their first vines by moonlight. Samuel liked the name Yalumba, an indigenous term referring to all the land around. The Signature has been relied upon by enthusiasts of the enduring claret style, ever since inaugural vintage of 1962.

Yalumba, Australia's oldest family owned and operated winery, has a wealth of history and tradition

Yalumba was founded in 1849 by Samuel Smith, British migrant and English brewer, who had brought his family to Angaston seeking a new life. After purchasing a 30-acre parcel of land just beyond the southern-eastern boundary of Angaston, Smith and his son began planting the first vines by moonlight. Samuel named his patch Yalumba, aboriginal for 'all the land around'.

The Yalumba philosophy quietly encourages innovation, experimentation and a visionary outlook in the quest to make great wine. There are literally thousands of rare, eclectic and idiosyncratic grape varieties used to make wine around the world. Yalumba's Vine Propagation Nursery is able to source many of these varieties, performing clonal and varietal selection, which ultimately provides small batches of fruit for Yalumba's Vinnovations label. In order to sustain the formulation of some of Australia's most compelling wines, Yalumba implements an environmental improvement programme that reflects credible environmental stewardship and due diligence.

At Yalumba, no aspect of winegrowing or winemaking is left to chance. For the past 30 years, Yalumba has been able to influence grape quality at its earliest stage. In the 1970s, the winery made a far-sighted decision to establish its own vine nursery. Today the Yalumba Vine Nursery is one of Australia's largest viticultural nurseries, supplying high quality vines to winemakers throughout Australia. Not only does the Nursery provide safe, quality rootstock for established varieties such as Cabernet Sauvignon and Shiraz, it is also a leading supplier of specialised clones such as the Burgundian Pinot Noir and Chardonnay clones in heavy demand by the country's leading winemakers.

In a wine market largely obsessed with single-varietal wines, Yalumba has remained steadfast in its commitment to that most Australian of wine styles, the Cabernet Shiraz blend. Cabernet Shiraz is taken so seriously by Yalumba, that Brian Walsh, Yalumba's Director of Winemaking persuaded the committee of the Adelaide Wine Show to introduce a separate judging class for the style. It's a wine style that is unique to Australia, he says, and plays such an important part in Australia's winemaking history.

As a wine business operating in the rural environment for over 150 years, Yalumba recognises the impact of its activities on its natural surrounds. Yalumba is committed to integrating best environmental practice into its everyday activities to ensure long-term sustainability. In 1999, Yalumba became the first Australian winery to sign up for the Greenhouse Challenge - an initiative dedicated to reducing greenhouse gas emissions. Yalumba's aim is to be recognised as Australia's finest independent wine company. A wine produced by means of environmentally-friendly sustainable processes is increasingly being recognised as being an intrinsic aspect of quality.

The crafting of oak barrels is a proud tradition at Yalumba with a coopering history dating back to the turn of the 20th century. With its own on-site cooperage, Yalumba is the only winery in Australia, and one of a small and select group of wineries in the world, to enjoy this privilege. Oak plays an important part in the winemaking process and Yalumba have the advantage of being able to have full control of the quality of oak used to age their wines. Yalumba imports oak staves from the world's best oak forests in France and America, and then air-dries the oak for many Barossan summers and winters to leach any sappy, bitter characters from the wood. This extended seasoning (as opposed to the more common practice of seasoning the oak for between 18 months and 2 years) imparts rich chocolate mocha characters and adds yet another layer of texture to the wine without masking the fruit flavours.
