Distinguished Langtons Classification. Bannockburn release a Chardonnay each year that accurately and faithfully reflects the merits of an exceptional terroir. This is far from easy, it is only achieved through dedication and resolve. The classic Bannockburn seashell characters are all her in good measure, as well as some interesting ginger and lemongrass, creme brulee, struck matchstick, roasted nuts and mealy influences, all beautifully integrated. Wonderful persistence and structure, the wine goes on and on, a lovely, lengthy, textural finish.

Bannockburn manage some of the finest Chardonnay vines in Australia, dry grown and over thirty years of age. Techniques employed to vinify the superlative fruit follow the traditions of Burgundy, everything is done with thought and care, never compromising on quality. Organic practices and extended maceration before a fastidious barrel selection achieve a wine that's exciting and complex. Parcels of dry grown fruit are whole bunch pressed, without any settling or additions, into a mix of barriques, puncheons and fermenters, vinified through the action of wild indigenous yeasts and rested for two years on sedimentery lees. Structured and powerful, rich with Burgundy styled, soil derived crustacea characters.
 
Pale straw green hues. Complex nose displaying chalky minerality, almond meal, grapefruit pith and a creamy biscuit character derived from extended lees contact. The palate is very long with a lovely texture and weight. A hint of creaminess from some malo-lactic involvement. The palate is full without being broad, tight without being austere.

French influences abound at Bannockburn, where Sauvignon Blanc draws inspiration from the Sancerre districts of Vallée de la Loire, the emphasis being on elegance and depth of flavour. The maritime influenced climes surrounding Bannockburn's vineyards make for cool and stable ripening, combined with unique soils, providing sensational conditions for growing excellent Sauvignon Blanc. A combination of vinification techniques are employed to construct a singularly engaging wine, it's definitely not another boring, grassy, single dimension style.

From fruit grown to two estate vineyard blocks, one bearing vines over twenty years of age, the other slightly younger, both are low yielding. Each site enjoys it's own mesoclimate, the most recent planting consisting of new French clones with greater vine density. Fruit is vinified through the action of indigenous yeasts, in a mix of seasoned and new, French oak and Italian acacia puncheons, followed by ten months on lees to enhance texture. A third of the Sauvignon Blanc is fermented on skins to achieve back of the palate grip and structure as well as flavour complexity. Small inclusions of Riesling or Chardonnay contribute subtle aromatic perfume, extra weight and body to the final wine.
 
Straw yellow hue, greenish tints. Complex nose, the classic mineral, cassis and Loire Valley gunflint characters. Fragrant honey and interesting smoky fume scents from the Italian Acacia puncheons. Good weight and texture on the middle palate before assertive acidity drives through the wine, providing excellent length and persistence. A savoury style with lots of texture, seriously Sauvignon Blanc.

Grown to the balmy coastal climes of our great southern land, burnished by the extended northern sunshine and invigorated by the sobering winds off balmy Bass Strait. The moreishly rich grapefruit style, vinified from the exclusively free run pressings for pure pristine opulence, barrel fermented in lovely French oak and treated to the extravagance of lees stirring malolactic. Brilliantly proportioned of pineapple and pith, sherbet and citrus, its magnificent length of lime curd sweetness and oak influenced mineral, resolving on an awesome, seaspray oyster shell finish.

The allure and charm of such a precocious varietal is formed in the vineyard, an abundance of daily sunshine within a cooler clime, develops articulate fruit esters while allowing the extra time to bloom into complete ripeness. Macerations and whole bunch vinifications, infuse the wine with luscious fruit flavours, crisp textures and provocative aromatics.

Bellarmine Chardonnay

Bellarmine jugs were used throughout the middle ages to carry wine from oak cask to table. The Bellarmine property at Pemberton was planted entirely by hand, vines were trained from ground up, to expose the ripening grapes to optimal sunshine. The terroirs and clime here are a Chardonnay maker's dream come true. Soils are red gravel laterite, offering excellent drainage while providing warmth to the vine root systems at night, courtesy of heat that the gravels have absorbed during the day. A lightly oaked wine, highly evocative of the dry and fruity Chablis style.

Chardonnay is sourced exclusively from Bellarmine vineyard in the high quality cool climate region of Pemberton. Fruit is harvested throughout the cool of night. Juices are gently pressed off skins and separated from the harder solids. Juices are cold settled for two days, the clear juices are racked away from lees and innoculated. A portion is transferred to oak for vinification, the balance remains in tank. Ferments are temperature controlled to achieve a gradual drop in sugar levels whilst retaining maximum flavour. Upon completion, the wines are battonaged to infuse complexity and introduce a touch of creaminess, followed by a term of maturation in a selection of new and seasoned French oak barrels.
 
Pale yellow hues. Stonefruits and nectarine, citrus with subtle oak. Complex palate with citrus, green apple, and nectarine flavours. Subtle spicy oak, tight acidity and a creamy texture, supported by crisp minerality, extended palate length and persistence of flavour. Enjoy with crispy skin roast chicken, crackling pork or fine wet cheese.
