Hugo Estate Chardonnay
McLaren Vale
Available by the dozen
Grazing pastures invariably make the most auspicious soils for winegrowing. Hugo owe their splendid provenance to a mixed farm which ran sheep and assorted cattle, dairy and tomatoes, almonds and of course grapes. Chardonnay vineyards came much later, but McLaren Vale, influenced by balmy maritime climes and populated by olive groves, is highly favourable to white grapes. Hugo choose to frame the natural charm of McLaren Vale Chardonnay with a supple touch of oak, allowing the fruit to speak for itself, a ripe peach and nectarine style, perfect for chicken caesar or salade niçoise.

Fruit is harvested from two estate properties. The Home site's soils are river run, composed of sandy silts and stones which retain heat overnight. Sauvignon Blanc from this vineyard displays ripe tropical flavours. The Winsome vineyard is clay based mixed with black sand. The nights are colder but the days are hotter, achieving more herbaceousness, red bell pepper and mineral flavours to the grapes. Sauvignon Blanc is harvested in the cold early hours of morning, vineyards are separately pressed. A portion is vinified through the action of wild indigenous yeasts in neutral to new French oak barrels, infusing the wine with richness and complexity.

Marlborough's cool nights and warm days produce grapes intense in flavour with good acidity. Hunter's try to preserve all the freshness, finding it essential to study all the vines very carefully before making that major decision on which day to pick, always in the the cool of morning. Fruit is processed to anaerobic techniques, destemmed, crushed and lightly pressed. Fruit is handled with the greatest of care to retain essential character, palate and bouquet. The juice is clarified by cold settling, after which it is racked and cool tank fermented over a course of twenty eight days, each vineyard parcel handled individually. Components are assembled into a suitably complex style of Marlborough Sauvignon Blanc.

Hutton Vale Farm Riesling
Eden Barossa
Available in cartons of six
The Angas family share a long tradition of viticulture with the craggy chills on the elevated high country of Valley Eden. Colin Angas established Riesling vines to a gently sloping site in the 1960s. Two distinct sections, the top of slope is leaner and more exposed, making tightly structured wines of crisp, vibrant acidity. Vines further down are planted to vigorous red soils, yielding plumper bunches of fruit, redolent of fresh aromatics and citrus zing. Lime cordial, calico and talc, a dash of minerality, refreshing acidity and a lengthy, textured chalky dry finish.

The Ingoldby name has been associated with McLaren Vale agriculture for over a century, however it was not until the late 1960s that Jim Ingoldby put the family name on a label. Since that time, Ingoldby have released a profound succession of award winning wines. Harvests of Chardonnay are pressed off skins, half the juices are fermented in seasoned French oak barrels, treated to lees battonage and malolactic for added complexity. Some batches are matured six months in oak barrel, the balance is vinified and held in fermenters to retain freshness. Components are assessed to determine the optimal balance of bright lifted fruit flavours and leesy oak complexity before assembling into the final wine.

Yarra Valley has been producing distinctive and elegant Charadonnay wines since early settlement. On the higher, leaner soils of Sexton, vine roots explore deep and grapes ripen steadily, naturally checking their vigour. A close husbanding and intensive maintenance is essential to yield the most intensely flavoured grapes. Fruit is all picked and pressed as whole bunches, chilled and transferred to seasoned and new French oak barriques and puncheons. Indigenous yeasts and small amounts of cultured yeasts initiate ferments, barrels are treated to a regimen of lees stirring battonage over the course of nine months maturation.

At its best, Pinot Gris it is like a fingerprint, inextricably linking the personality and mood of the land from which it has sprung. Innocent Bystander comes from the upper Yarra, where cool summer temperatures lead to fresh crunchy acidity and great aromatics. Due to the higher altitude of sites, fruit is harvested later in the season. Grapes are completely hand picked and whole bunch pressed, free runs are separated and batches are treated principally to wild yeast with some interesting Alsace isolates for complexity. Half are sent to fermenters and vinified at lower than 17ËšC, the balance is filled to seasoned French oak barrels and vinified at 20ËšC to 24ËšC, followed by assemblage and early bottling.

Medium straw hue. Honeysuckle, preserved ginger and cardamon nose, pithy lemons and grapefruit skin, freshly cut white pears and a hint of white joobs. Like fresh rain on beach rocks. Crisp like biting into a fresh green apple. Tight with a melting acidity that lingers like cottage lemonade. A really lively palate with a solid flick of crisp citrus. It will become your best table mate, sublime with sashimi or goat's curd bruchetta.
Irrewarra Chardonnay
Colac
Crafted from the meagre harvest of a precious two acres Chardonnay, planted to the top of a felicitious slope that looks away towards the idyllic pastorals of Victoria's fertile western agriculture. Irrewarra wines are encouraged in the making, to be articulate of the season in which they are grown, to express a pride of provenance and sense of place. It's all about the treatise of terroir at Irrewarra, composing Chardonnay of real structure, big boned, fruity and fleshed, a luxurious minerality in aqueous suspension of penetrating grapefruit characters, cumquat, seashells and brine.
