Fraser Gallop aim to create a wine which has true elegance, fine texture and ample complexity as well as lively, fresh fruit character. Semillon is sourced from Wilyabrup where it can mature past the green, herbal notes to the riper spectrum of flavours such as lemongrass and quince. Sauvignon Blanc comes from the cooler sub region of Karridale, an area which produces finer, more elegant berries with fresher flavours. The classic Margaret River white style, eminently drinkable upon release, a wine which is more than just simple fruit flavours.

$2299each $275DOZEN EACH DOZEN Semillon and Sauvignon Blanc are harvested in the cool hours of morning and delivered promptly to the crush pad. Grapes are de-stemmed, crushed and gently pumped through a chiller on way to the Bucher XPF 80 press to get the must down to 8C. Juices are settled at 8C, racked off gross lees and warmed to 16C for fermentation. The juices are fermented in tank with two different yeasts to maintain freshness, bright fruit flavours and aromatics. A small proportion is fermented in new and one year old French oak barriques which adds to the complexity, structure and length of flavour. Sulphites are added upon completion to deter malolactic. The wine was protein and cold stabilised and cross flow filtered.

Pale straw with green hues. Gooseberries and passionfruit, lemongrass and fruit jube bouquets, rich bubblegum esters fade away to reveal a mineral edged wine. The palate is chalky as the fresh crispness of acidity sits well with supple sweetness. Lime and juniper berries make for a very delicious style. A well balanced wine with lingering flavours, a nice complexity that keeps you coming back for more.

The philosophy at Freycinet is to keep things simple, traditional Burgundian techniques are employed, the aim is to make a multi dimensioned, complex and creamy textured Chardonnay with generous palate. Fully ripened grapes provide the foundation to which the techniques of barrel fermentation under tightly grained French oak, lees stirring and malolactic are applied, enhancing the natural complexity, texture and layers of character in the completed wine.

A light straw colour. Delicate aroma features citrus and melon fruits with soft oak nuances. The palate is pristine, fresh and vibrant, revealing ripe melon, white peach and grapefruit flavours subtly supported by spicy oak and creamy textures. Power with elegance, the finish is seamless.

The Freycinet vineyards overlook a spectacular national park, halfway between Launceston and Hobart. Chardonnay loves the lower latitudes of the region, the cooler climes and clear, sunny skies encourage fruit to develop amazing, slow ripened complexities. Parcels which are picked on the basis of natural varietal eloquence, are treated to a long cool ferment, followed by repose on sediment lees to build palate texture and richness. Finished without any exposure to oak, its pure Chardonnay character of grapefruits, melon are peach are exquisitely balanced by refreshing mineral crispness.

Galli Estate produce a variety of quality wines from fruit grown on their vineyards at Sunbury and Heathcote. Vines are kept low yielding to ensure richly flavoured grapes, grown to red ironstone soils over basalt, they are spur-pruned and vertical shoot positioned to ensure fruit development with even ripening. Hand picked grapes are crushed and pressed, the exclusively free-run juices only are settled and then fermented at low temperatures. After a long fermentation in tank to retain freshness and intensity of fruit characters, the wine is cold-settled to clarify. After racking to remove yeast lees, the wine is stabilised, fined, filtered and bottled early to retain the qualities of the vivacious Pinot Grigio. Alcohol 13.0%

Pale in colour. Stone fruit and peach kernel aromas, fine bouquets of lime blossom and grapefruit with a touch of musk. Fine and full flavoured with balanced acidity, the palate exhibits exciting expressions of lime and lemon juice, cooking apples, and some floral notes. It finishes clean and fresh with a chalky, talc like astringency which makes it the perfect accompaniment to stronger flavoured fish, and other seafoods. Have it with traditional faire like mackerel and bay leaves.

The high altitude, cool ripening Gapsted vineyard at Whitfield in Valley King, facing east at an elevation of 375 metres, is ideally suited to harvests of the finest Sauvignon Blanc. Protected from the hot afternoon sun by hills behind the property, the managed canopy delivers vintages which are fully endowed with an intensity of aromaticness and flavour. As is always the case with good fruit, the wine virtually makes itself. Revealing just a hint of fine tangy acidity, Gapsted is lively, wonderfully balanced and refreshingly crisp, all the way to the finish.

Warm days develop ripe tropical fruit characters and the cool nights ensure crisp, grassy Sauvignon Blanc flavours. Conditions in the latter part of the growing season encourage ripeness, full development and fleshyness in the grapes. Sauvignon Blanc is harvested throughout the chill of night, grapes are gently air bag pressed and only the free run juices are retained. Racked to fermenters, crushed and settled to collect much of the flavour from skins, juices are inoculated with choice yeasts and treated to a slow, cool vinification aimed at preserving the vital fruit characters. Alcohol 11.2%

A refreshing, balanced palate of citrus and sweet, green tropical fruits, silky honeydew softness fills out the mid palate and adds lovely length. Full of intense cool climate Sauvignon Blanc fruit characters, an envigorating aperitif style and an excellent food wine to enjoy today alongside spring asparagus, shaved parmesan, a squeeze of lemon and virgin oil.

Inspired by the lush fruitiness of the Italian classic Moscato d'Asti, Gapsted is a blend in name and in style, of the piquant Traminer Musque grape and the wickedly luscious Frontignac Muscato bianco. Traminer is sourced from Whitlands Vineyard, grown to the higher, elevated aspects of Valley King, picked early to retain freshness and lively fruit character. This slightly spritzy Moscato drinks well on its own but also suits a range of lighter desserts such as pannacotta or soft cheese, dried fruits or peach almond recipes.

The vibrant Alpine fruit characters of Traminer are a result of cool breezes and snow run off in spring, which provides abundant clear, fresh water to the Whitlands vineyard. The cool ripening conditions prevent high levels of transpiration, allowing the Traminer to retain natural acids, sugars and lifted fruit flavours. A very slow, and cold controlled ferment at seven degrees for five weeks, ensured retains fresh crisp varietal characters. Fermentation is stopped at six degrees of baume by chilling the wine and fining. Some naturally occurring CO2 is retained in the wine for a light frizzante style. Alcohol 6.5%

Bright pale straw hues. Exotic florals with hints of middle eastern spice, aromas of rose petal and spicey musk, pears and turkish delight. The palate is alive with fresh peaches and grape, an intensely flavoured wine with florals and five spice, generous and poised.
