Chrismont excel in the vinification of pure, high altitude varietal wines, into the most articulate expression of terroir and growing season as it influences the character of grape, through a synergy of traditional and modern techniques. The variations from one vintage to the next are particularly relevant in a higher altitude, cool climate growing region such as King Valley. Parcels from premiere estate vineyards at Whitfield and Valley King, are assembled into a juicily fragrant Muscat wine of generous palate length, sound structure and winsome varietal charm.

Very low disease pressure and perfect slow ripening conditions are the norm around the Chrismont vineyards. Fruit is harvested during the early hours of morning and directly transported to the winery. Grapes are loaded into a membrane press where the delicate free run juice is allowed to drain using low pressures with minimal movement to reduce phenolic extraction. The juices are allowed to settle over forty eight hours to clarify before being racked for fermentation. With a meagre amount of sugar remaining, the vinification is arrested and the wine allowed to clarify. Individual batches are selected to achieve the right balance of texture and flavours before assembling into the final wine.
 
Light straw with greenish hues. Honeysuckle, lemon and lime on the bouquet. Citrus and tropical fruit on the palate are carried by a great acid structure giving good flavour length, an attractive wine while young, will continue to develop subtle toast and honey complexity. An exquisite white wine, perfect as the most congenial aperitif, a delight alongside dover sole.

The major force behind the vigor of Chrismont wines are the healthy soils, extended growing seasons and slow ripening climes of the vineyards, which are positioned optimally at the heart of spectacular King Valley. With climates and landscape so similar to those of Piemonte, Tuscany and Alsace, the King Valley's long summer days enable Pinot Grigio to achieve complete flavour ripeness, infusing La Zona with the richness of baked apple flavours, citrus perfumes and warming marzipan characters. To accompany light game, pasta or desserts with a fresh fruit orientation.

In the days when wine production was rapidly expanding and tobacco was in decline, contracts were offered to grow grapes. The first blocks of Chrismont were transformed from tobacco to grape vine in the 1980s. As a mutation of the deep purple Pinot Noir and the greenish yellow Pinot Blanc, Pinot Grigio runs a spectrum of fruit characters that vary according to terroir and clime. Fruit is vinified in chilled fermenters to maintain varietal freshness, upon completion and following a term of repose for clarification, components are assembled along with a small percentage of reserve wine for added complexity and extra interest.
 
Straw hues, copper highlights. The nose carries lifted aromas of pawpaw and white peach with an underlying layer of spiced custard and cream. Ripe pear and melon are predominant with subtleties of quince and cooked apple. A luscious rounded front palate with flavours of quince, custard apple and toasted almond, acid is firm and structured before a dry and lasting finish.

Domaine Christian Salmon are a family owned estate covering fifteen hectares along Coteaux Buetons, between the appellations of Sancerre and Pouilly Fume in France's Valley Loire. The winemaking has remained largely unchanged after many generations and continues to deliver the most praiseworthy examples of French Sauvignon Blanc with every vintage. Domaine Christian Salmon endeavour to preserve the regional characters of Sauvignon Blanc from the rolling landscapes of Sancerre, the freshest fruit is treated to the most pristine ferments, completely unwooded and unoaked. Initial impressions of intense flint minerality, verging on gunpowder. Being so aromatic, the wine opens up with air, exuding nuances of the orchard, particularly ripe pear. Christian Salmon will perfectly accompany all refined cuisines, seafood such as fruits de mer au beurre blanc or artisanal cheeses like fromages de chevre.

Sauvignon Blanc is harvested from fully mature vines planted to calcareous clay soils. The bunches are lightly crushed immediately upon arrival to the winery. The musts are pumped fermenters and left to cold settle before the onset of a natural, local yeast vinification. Temperatures are closely monitored to avoid any possible risk of oxidation while retaining freshness and aromaticness. The wine is racked and treated to a minimal addition of sulphur dioxide, followed by a period of gentle rest prior to bottling.

The chilly early mists, exhilerating maritime breezes and undulating terroirs of Mornington are heaven sent for the realization of Burgundy styled Chardonnay wines. Half the plantings at Hillcrest Road are Chardonnay, one and a half acres of a single clone, originally intended for an elite sparkling Cuvee. Such is the quality of fruit, its remarkable concentration of flavour and flawless acidity, choice parcels are set aside for a pure varietal wine. Painstakingly husbanded to excruciating standards of viticulture, Hillcrest Road Vineyard is dry grown and closely cropped at less than two tonnes per acre, for vintages of extremely limited yields. It is a small, pampered site which affords the Circe team a rare indulgement of attending to each vine as an individual, focusing on every detail and maintaining a meticulous vigil on the soils. The quality of fruit speaks for itself, as there are no substitutes for footprints in the vineyard. Those parcels of hand picked and hand sorted Chardonnay, which merit inclusion into a pure varietal wine, are treated to an old world style of vinification, extended exposure to gross sedimentery lees and luxurious French oak treatments.
