By maintaining optimal balance between contemporary and traditionalist winemaking techniques, Amberley Estate have remained true to their original vision of making wines solely from fruit grown to superior Margaret River vineyards. A selection of cultured yeasts and closely managed ferments achieve a soft yet complex, elegantly fruit driven Chenin Blanc, designed to complement today's eclectic cuisines. Following the crush, grapes are pressed and the juices are inoculated. In order to enhance the varietal aromas, Chimney Brush is vinified in controlled fermenters to retain vitality and freshness. The emphasis at all stages of handling is to preserve the natural qualities of Margaret River Chenin Blanc.
 
Bright, light straw hues. Clean, fresh aromas of green apple and pear, underlying hints of honeysuckle and toasty notes add complexity. Off dry palate with a crisp acidity that refreshes the middle and back palate, intensity of fruit offering juicy characters of Fuji apples, apple blossoms and lime, concluding with attractive honey notes right at the finish.

The winemaking at Amberley is driven by a philosophy of sourcing the highest quality fruit to produce contemporary styles for modern tastes. Such a promise has ensured Amberley can capture and retain the refreshing qualities of the Moscato style. Harvests from choice vineyards which can best display the requisite ripe fuit and juicy grape characters are treated to a combination of modern and traditional vinification techniques, infusing the wine with a slight effervescence for vitality and textural charm. Ferments are arrested when the optimal balance is achieved, retaining natural fruit sugars and all the exciting ripe Moscato grape flavours. Alcohol 7.0%
 
Light straw in colour with green hues. Bouquet shows lifted, heady, floral tones of honeysuckle and fresh Muscat aromas. The palate is light with flavours of sweet honeydew melon and tropical fruits. Residual sugars are well balanced all the way to a clean, crisp finish, a slight effervescence gives the wine an appealing lift.

The Amberley Estate property was primarily the subject of a detailed soil, climate and aspect analysis before any planting of vines. One can catch a glimpse of Geographe Bay through the valley at the centre of Amberley Estate, protected from westerly winds by towering Jarrahs and steep slopes. The choicest parcels of Sauvignon Blanc are selected from the estate vineyards along Margaret River, harvested throughout the cool of night to maximise freshness. A gentle handling in the winery ensures the bright, vibrant fruit flavours are retained. Juices are racked and vinified in controlled fermenters at cooler temperatures. Upon completion, components are held on lees to enrich the palate while enhancing texture and complexity. The final wine is then assembled, fined and stabilised for bottling.
 
Pale straw hue with green tinges. Fresh aromas of passionfruit, lemon zest and lime are complemented by hints of nettle and jasmine. A mouthfilling wine with a generous and textured palate, flavours of lemon zest and hints of citrus blossom. An ideal combination of freshness and fruit sweetness balanced by crisp, citrus acidity. One can glimpse the blue waters of Geographe Bay through the valley which runs along the centre of Amberley Estate. An advantage of such a fortuitous location is the moderating influence of the bay's maritime breeze on the hot easterly winds which blow during the height of summer. Secret Lane is fashioned exclusively from estate grown Margaret River fruit. A mostly Semillon wine with a smaller component of Sauvignon Blanc, delivering a fully integrated palate with steely but elegant flavours, good structure, balance and poise.

The classically dry and blissfully aromatic white from Amberley Estate vineyards on Margaret River. Ripe, fully compatible parcels of Semillon and Sauvignon Blanc grapes are selected, promptly harvested throughout the cool of night to capture and retain freshness. Amisfield Chenin Blanc
Central Otago
Amisfield are situated in the southern most wine growing region of New Zealand, at Lowburn in Central Otago, just north of the 45th Parallel. High altitudes and a cool climate, long summers and clean glacial soils, translate into limited yields of the finest aromatic, single vineyard Chenin Blanc. Amisfield is all about the voluptuous expression of Chenin Blanc and preserving the virtue of site, articulating pure and refined aromatics, while ensuring balance of residual sugar to crisp acidity.

Chenin Blanc is predominately planted within the Lochar stony gravels on the top terrace above the Amisfield wineworks. There are further small plantings spread across between the Pinot Noir vines. Parcels are harvested and whole bunch pressed, settled for two days and racked for cool temperature ferments through the action of South African yeast over the course of eighteen days, a smaller component is treated to seasoned oak barriques.
 
Vibrant pale straw/ green hue. Aromas of crisp green apple, citrus notes and distinctive varietal lanolin notes. The palate is lusciously full, textural elements from extended lees contact, well supported by quintessential Central Otago minerality and juicy acidy. Mineral, floral and citrus profiles are upfront and personal, making Amisfield a great match to Asian cuisine, especially Thai.

The fleshy voluptuousness and mouth filling generosity of Central Otago Pinot Gris, hand picked off the top terrace of Amisfield's vineyard, grapes are all gently pressed for a long cool ferment, partially in a selection of seasoned French oak barrels for roundness and complexity, followed by a term of age on light sedimentery lees. A textural and persistent Pinot Gris style,saturated with all the classic varietal characters, spices, shortbread and white fleshy pear, the mouth filling richness of barrel ferments, magnificently balanced with perfectly pitched acidity and delicate residual sweetness.

Amisfield Sauvignon Blanc

There are three blocks of Sauvignon Blanc at Amisfield, near the shores of Lake Dunstan in Central Otago. Older vines at the edge of Rocky Knoll yield fruit with delicious ripe stone fruit characters and pronounced minerality. Younger plantings on a beautiful elevated terrace above the winery provide grapes which are brim full of vim and vigor. A combination of wild indigenous yeast vinifications, oak barrel ferments and sedimentery lees stirring, achieves a singularly vigorous and compelling case for Central Otago Sauvignon Blanc.

Harvest begins with a golden pick of the ripest fruit from silts at the edge of Rocky Knoll, progressing toward the top terraces. A percentage is destemmed directly into the press to provide a modicum of skin contact. Juices are fermented cool with choice yeats, selected for their capacity to retain vibrancy and zip. A smaller pick of late picked fruit is whole bunch pressed directly to French oak barriques where natural indigenous yeasts do their work. The ferments are wild and vigorous, making a wine of great texture and exotic stone fruit characters. Most batches are aged on light fluffy lees, a portion is matured in French oak, while being treated to regular lees stirring battonage for palate richness.
 
Light straw colour. Aromas of limes and passionfruit complimented by a mixture of tropical stone fruit. The palate is full bodied and dry with considerable fruit weight and layering. Rife with tropical meets vegetal complexity, the palate is full bodied and dry with great intensity of fruit balanced by refreshing acidity.
