Parcels of Pinot Gris collated from some of the finest Marlborough vineyards, trained to yield harvests of intensely flavoured fruit, are at the heart of Ta_Ku. The aim is to construct a fully engaging wine which can deliver a delectable experience in splendid quality Pinot Gris while treating the palate to an intimate taste of Marlborough. A match to mushroom risotto or a gourmande seafood caesar.

Grapes are sourced from highly specialised sites, some of which have been growing Pinot Gris for many years. Throughout the growing season, Ta_Ku seek to isolate parcels of Pinot Gris that are just right for this style of wine. Fruit is harvested when full physiological ripeness is reached and all requisite varietal characters of nut, stonefruit and spice have been achieved. Following the crush and a cold soak, the must is inoculated to select yeasts before vinification in a mix of fermenters. Winemaking is gentle, to avoid unwanted colour extraction and to retain the fresh varietal expression of Pinot Gris. Upon completion, batches are racked and assembled before bottling into the final wine.
 
Light peach yellow colour. Enticing pear and citrus aromas with a complexity of nougat, star fruits and apricot. Generously flavoured with a long, clean finish, Ta_Ku offers a persistence of fruit on the palate, endowed with the character and charm to delight all five senses. Best matched with salmon, pork or blue vein cheese.

Marlborough is New Zealand's most productive winegrowing area, located at the top of Island South. The region is renowned far and wide for producing the world's most mouth watering, flavoursome and zesty Sauvignon Blanc wines. It is the recognizable, pungent fruit characters which make Marlborough Sauvignon Blanc a distinctive genre of wine that's identifed internationally. Ta_Ku retain access to some of Marlborough's most bountiful vineyards. Fruit is crushed, the must inoculated to choice yeasts and treated to a temperature controlled vinification. A philosophy of minimal handling allows the wine to preserve the invigorating expressions of essential Marlborough fruit.
 
Pale straw hue. This light and aromatic Sauvignon Blanc displays exquisite varietal character, tropical fruit and grassy herbaceous notes. You can't get more New Zealand than the Te Kairanga vineyards, nestled at the bottom of North Island, within one of the nation's most exclusive winegrowing precincts, very near the artist's quarter of Martinborough. Each parcel of Sauvignon Blanc is set within it's own mini microclime. The Te Kairanga vines yield richly proportioned white grapes with distinct fruit characters, selectively picked to be woven into an intensely flavoured, full bodied Sauvignon Blanc that's perfect with or without food, very ready for enjoyment any time of day.

Martinborough's first ever vines were planted on the Te Kairanga Draper vineyard, whence the fruit for this very wine originates. The vines here grow less vigorously in the cool, breezy conditions, so yields are lower and flavours are more intense. A rare confluence of geology and geography has formed the perfect aspects for aromatic whites. Grapes are harvested block by block and separately vinified to a regimen of punch downs and gentle pressing to ensure full extraction without sacrificing elegance. Much of the emphasis is on developing palate weight, a portion is barrel fermented to complement the wonderfully intense fruit, retaining primary flavours along with complexities derived from the vineyard.
 
Pale yellow hue. Exotic aromas of passionfruit, a broad spectrum of lime, green apples and melon, pineapple and gooseberry dominate the nose with just a hint of tropical intensity. The palate has low acid and a generous mouthfeel over a slightly creamy texture. An exuberance of citrus and tropical fruit dominates, showing excellent weight balanced perfectly by fresh acidity.

Vinsanto is also known as Vino Santo or sacred wine, so named for it's use by clergy and congregation during the holy mass. It has been vinified in Tuscany since at least medieval times and Antinori have been making it for centuries. A pious cepage of Trebbiano and Malvasia sourced exclusively off vines grown to three Antinori estates in Chianti Classico.

Grapes are selected and picked at various times throughout the harvest. Those picked during the earlier parts of vintage show higher acidity, while those picked later attain higher levels of ripeness, achieving a balance between natural fruit sugar content and acidity. Grapes are spread by hand on special straw mats in the appassitoio, a large, airy loft at theTignanello wineworks, where they are left to dry until the end of December. Fruit is pressed and the must transferred to traditional small, 50-200 litres oak casks known as caratelli, for a long, slow vinification which is arrested when the wine reaches 16. Vinsanto is aged in the caratelli three years before a very light filtration.
 
Bright yellow colour with deep amber hues. Gently vinous bouquet with honey and dried fruits notes. An attractive set of leather, caramel, roasted nuts, spices and orange peel. Dense and round on the palate with fine structure with a delicate and long finish. Aftertaste caracterized by pleasant dried fruits and toasty notes.

The best Chardonnay always exhibit conspicuous balance. Those fortunate enough to have countenanced the wines of Tallarook will understand why Terra Felix are so well received. The objective is to create a robust style of Chardonnay which can be enjoyed in its youth, without evolving too rapidly while in bottle. A measure of oak is perceptible yet inseparable from the fruit, characters derived from vinification contribute complexity without dominating.

Grapes are picked at the beginning of the tropical phase of ripening, as they pass through the citrus stage to develop peachy/ melon characters. Once crushed, the must is not given any skin contact, to avoid any broader flavours. Only the clean juices, free of solids are vinified, to achieve maximum freshness on the initial palate. A cold slow fermentation is inoculated, French barrels at a medium toast level are selected to avoid the vanillin of American oak. French oak is subtle as it infuses the wine with nutty, cashew flavours. A careful handling and selection of fruit, a long and cool temperature controlled vinification and early bottling capture all the expressions of vital Goulburn Valley Chardonnay.
 
Pale straw, green hues. Lifted lime and citrus with straw notes. Medium bodied, offering fresh flavours of gooseberries, showing plenty of melon, stoned fruit and lemon characters, well balanced with a long, crisp finish. Nutty French oak in the background adds interest and gently enriches the texture while soft acid fills out the picture.

Sauvignon Blanc in the way of the full bodied, ageworthy efforts from Bordeaux and Sancerre. Oak treatments and a judicious term of age build palate texture, while encouraging mouthfilling savouryness and sublime sauvage. Grapes are all hand picked and whole bunch pressed into four 600 litres, Rhône styled oak fermenting vats for ten days vinification and ten months on sediments, treated to the occasional lees stirring battonage before bottling in January. The big boned, well fleshed genre of Sauvignon Blanc which unlocks the fruity exterior and reveals the cornucopia of complexity within.

The low vigour soils and dry climate produce grapes with intense fruit flavours, infused by a delightful minerality for the production of truly stunning wines.

As one of the Awatere Valley's ground breaking winemakers, the Crossing's three principal vineyards are brilliantly positioned and well established. Nestled along the northern banks of the Awatere River, the trio of sites are all individual in character yet share qualities which make for some of Marlborough's most expressive and intense Sauvignon Blanc. With the exception of a tiny proportion which is treated to vinification in seasoned oak barriques, the crushed grapes are fermented in tank at the coldest temperatures possible. Upon completion, the finished wine is given a long settling period to integrate before a gentle filtration ahead of an early bottling to capture freshness an vitality. Alcohol 13.5%

The exclusively pure, free run first pressings are vinified at 12C to 14C with neutral yeasts to enhance all the sublime Mount Barker Riesling characers.
