JMK is a luscious fortified Shiraz, from fruit grown to select rows of the Kalleske vineyard, including the renowned Greenock block, vinified and vintaged on the family farm. JMK Port is dedicated to fifth generation grower, John Malcolm Kalleske, who has tended the Kalleske family vineyards for more than fifty years and continues to husband the very vines which are earmarked for JMK. A commemorative Vintage Port to honour the dedication showed by John and all those who came before him, toward their treasured old vines.

$2999each $359DOZEN EACH DOZEN Shiraz is harvested in stages over the course of a fortnight, providing varying levels of sweetness and complexity for the finished wine. Grapes are vinified in open top fermenters and treated to a regimen of pumpovers twice daily. Several days after harvest, a portion of the free run juices are drained and fortified to arrest ferments and retain some natural sweetness. A combination of estate made brandy spirits, up to twenty years of age, are called upon to fortify the wine, achieving added complexity. Components are matured in well seasoned oak hogsheads for eighteen months, whereupon only the very best barrels are selected to be included in the final assemblage and bottling of this extra fine liqueur Shiraz.

Deep purple black colour. Enticing aromas of xmas cake and dark spiced berries, chocolates, perfume, marzipan and plum. These superb pure fruit flavours continue on the palate, luscious and rich, full bodied and intense. Essences of rancio and sweet tobacco leaf, marmalade and dried apricot, harmonious with moderate sweetness, balanced alcohol and velvety mouthfeel, a lingering finish completes a remarkable wine.

The Commandaria region is on the island of Cyprus, where Controlled Appellation of Origin vineyards grow the peculiar Mavro and Xynisteri grapes. The dessert wine to be fashioned from these unique varietals is endowed with a bouquet and palate reminiscent of honey. The poet Hesiod/em< described the process of sun drying grapes to make this style of wine in 735 BC. When the Knights Templar built Kolossi castle in 1191 AD, they grew a palate for Commandaria and ordered quantities to be exported all over Europe.

Fruit is pressed, vinified and aged in large, well seasoned wooden barrels. In ancient times, tradition tells us that Commandaria was called mother and was matured in giant earthenware jars. Treated to a system of rackings similar to the Solero system, a portion is always left in the bottom of the vessel, to assist in the ageing of the next batch. It is entirely possible that the Commandaria you drink today contains a component you may be sharing with the poet Homer, the Pharaohs of Egypt or Kings of the Middle Ages. Alcohol 15.0%

The most famous and prestigious sweet white wine in the world, vines of the Appellation Sauternes Controlee are stimulated by a unique microclime during autumn, as sunny dry weather of the day alternates with cool fog at night. Due to the extremely low yields of two to three glasses per vine, Sauternes are extraordinarily complex and intense. Offering a wide range of spell binding perfume and flavours, Sauterne develops as it ages, unravelling immensely attractive layers of honeyed characters, toasted nuts and candied fruits.

Stunning gold appearance. The initial impression on the bouquet is of honey and caramelled fruit, enticing aromas of lime blossoms, quinces, figs and toast, going on to unravel layers of complexity as the wine continues to evolve in the glass. Sauternes cannot be made without the help of the providential fungus Botrytis Cinerea or Noble Rot, which concentrates juices and infuses the wine with infinite complexity.

The proprietors at Le Tertre are so fond of the travails and rewards of Botrytis wine, that they have turned their entirety of their acreage to Sauternes. Harvesting takes place grape by grape to include only those berries which are Botrytised and perfect for the purpose. Vineyards are picked over several passes among the vines at different times throughout each vintage, to apply the painstaking pruning and selection methods which are unique to the Sauternes region. Tertre Du Lys is powerful on the palate with delicious flavours and elegant aftertaste, fullness and balance, richness and ripe acidity.

Amber coloured, exquisitely balanced and showing great character from maturity. A seriously versatile wine, which mates beautifully with any game dish or rare roasted meat, the tried and true aperitif or accompaniement to festive occasions. The traditional companion to consomme, roast game bird, foie gras or fully flavoured, robust cuisine. A finer Amontillado would be hard to find.

The work of blending is an art, practised by the winemakers who use all their five senses, but especially the sense of smell. In the laboratory, small quantities of wines from different butts are blended, before an amount of wine alcohol required to fortify the Amontillado is decided for each individual batch.
