The most famous and prestigious sweet white wine in the world, vines of the Appellation Sauternes Controlee are stimulated by a unique microclime during autumn, as sunny dry weather of the day alternates with cool fog at night. Due to the extremely low yields of two to three glasses per vine, Sauternes are extraordinarily complex and intense. Offering a wide range of spell binding perfume and flavours, Sauterne develops as it ages, unravelling immensely attractive layers of honeyed characters, toasted nuts and candied fruits.

Stunning gold appearance. The initial impression on the bouquet is of honey and caramelled fruit, enticing aromas of lime blossoms, quinces, figs and toast, going on to unravel layers of complexity as the wine continues to evolve in the glass. Sauternes cannot be made without the help of the providential fungus Botrytis Cinerea or Noble Rot, which concentrates juices and infuses the wine with infinite complexity.

The proprietors at Le Tertre are so fond of the travails and rewards of Botrytis wine, that they have turned their entirety of their acreage to Sauternes. Harvesting takes place grape by grape to include only those berries which are Botrytised and perfect for the purpose. Vineyards are picked over several passes among the vines at different times throughout each vintage, to apply the painstaking pruning and selection methods which are unique to the Sauternes region. Tertre Du Lys is powerful on the palate with delicious flavours and elegant aftertaste, fullness and balance, richness and ripe acidity.

Lenton Brae Semillon Sauvignon

Lenton Brae can justifiably claim to be one of Margaret River's leading proponents of the ebullient fusion between Semillon and Sauvignon Blanc, having claimed multi trophies and gold medals for the style at regional, state and national competitions. The site was chosen after a chance conversation with the owner of Moss Wood who mentioned that the soils were uniformly excellent and equal to those of the eminent vineyard nearby. The overriding philosophy at Lenton Brae is to construct wines which rank among the Margaret River's finest.

The Lenton Brae property is planted to the finest soils in Wilyabrup, which is itself celebrated as one of the the most prestigious sub regions of Margaret River. The prevailing dry conditions during the final period of fruit ripening in early autumn allow for low humidity and disease pressures. The gravelly loams over clay base retains moisture and encourages root penetration, providing perfect conditions for the early ripening varietals of Semillon and Sauvignon Blanc. Parcels are vinified to retain freshness and vitality under cool temperatures, facilitating a gradual conversion of sugar into alcohol by selected yeasts, a portion is barrel fermented in new French oak for added richness and complexity.
 
Light green/ yellow straw hue. Beautifully perfumed wine, fresh grasses, myrtle and lychee fragrances, supported by mineral notes, wet pebble and slate. Sauvignon Blanc contributes aromatic elements while Semillon provides weight and depth of flavour. Lenton Brae will soften and develop the honeyed, toasty characters so desirable of bottle age.

A highly revered aperitif, the traditional white Bordeaux cepage of Semillon and Sauvignon Blanc, assembled with a secret recipe of precious spirit and liqueurs, components of which are derived from parcels of rare Iberian citrus. Lillet is patiently oak barrel aged in the tradtion of the great Bordeaux Crus, seasoned with a soupçon of quinine and released to an enthusiastic league of international devotees. Rarely does it see Australian shores. It's a favourite of James Bond and should ideally be enjoyed chilled with your favourite twist, spritzer or mix.

Established 1872, Cie des Freres Lillet has been a leader in fashionable aperitif wines since the earliest days of French cafe culture and throughout the decadent years of Paris's belle epoque. Lillet Blanc is still produced and aged on the original site at Podensac in the Medoc. Stocks of Cru quality Bordeaux Blanc are fortified with a blend of spirit and liqueurs made from sweet and bitter citrus, infused with quinine and aged to maturity. The exact recipe is a closely guarded secret but what is known is that the balance of elixirs varies with each vintage as the formula is attenuated to accomodate the vagaries of season and achieve a consistency of the style which has always been so central to French cafe culture.
 
Pale gold colour. Complex nose of citrus and herb, thistle, orange zest and pacific fruits. A richly layered palate expressing spiced oak, grapefruits and apricot, honeyed vanilla and drying citrus peel, articulated through a blend of the most prestigious white wines in the world, as treated to a doseage of piquant liqueurs. Lillet is a sophisticated marriage of refined ingredients, achieved through an artisanal elevage. There is no recipe as each edition is adapted to the unique personality of the wine.

In the spirit of the relaxed West Australian lifestyle, MadFish wines are without pretension and without fuss. The team at MadFish believe that good viticultural management grows healthier fruit and makes a better wine, while maintaining a healthier environment. The classic regional blend of white varietal grapes, Semillon and Sauvignon Blanc are treated to a controlled vinification without the interference of any oak to allow the complex fruit characters to dominate. Low fermentation temperatures achieve a maximum retention of fruit flavour and aromatics while ensuring the finished wine is completely dry. Early bottling has also preserved the fresh fruit flavours and vibrant characters of the vineyard.
 
Pale straw hue with tints of green. A wonderfully aromatic nose, bursting with fruity esters. The palate, like the nose, is also complex with many layers of fruit flavours and a clean fine structure. Again the riper fruit characters balance well with the leaner more elegant citrus flavours. The finish is generous and long with a clean acid thrust.

Crafted in the old world way, according to the traditional flor solera system. Wines are secondarily fermented under unique Flor caps, yeasts which grow on top of the Apera, releasing aldehydes and infusing the Sherry with lifted, nutty characters. Clean and mellow, gracefully dry and pleasingly rancio, exquisite with a warm alcohol length of aromatic malt flavours and integrated aged oak. Superb as a chilled aperitif, the Amontillado Apera style is served on classical menus alongside aspic, game birds and the finest double consomme.

Golden colour, copper hues. A nutty, rancio bouquet, spices, bitter fruits and marmalade, ginger and almond notes. Lifted, vibrant rancio and pistachio nut flavours, citrus and ripe apple hints. The gradual fortification of this flavoursome wine allows for better alcohol integration, resulting in seamless flavours and aromas. The palate is full and mellow with vanillin oak flavours before a clean, dry and fresh finish.

Moss Wood Ribbon Vale Semillon Sauvignon

For a wine that relies on lifted, zesty fruit notes as this one does, the final assembly sits very close to perfect. Ribbon Vale's fruit produces a different style to that grown at neighbouring Moss Wood. Sauvignon Blanc brings major aromaticness to the wine, the Semillon component contributes heightened flavour profiles. Ribbon Vale is vibrant and juicy, pristine and finer than most variants of the blend. Flavour builds in the glass before a finish that is refreshingly crisp with zippy acidity and an aftertaste that's long and fruitful, dry and lingering.

All fruit is hand picked, grapes are destemmed and chilled, pressings are kept separate and cold settled for two days. Juices are racked off lees and warmed to 18âC for inoculation with pure yeast culture. Batches are fermented to dryness, racked and adjusted for acidity and sulphur dioxide. Components are assembled and filled to a selection of 225 litres French oak barriques. After three months of age, the oaking adds palate richness and a measure of exciting minerality which beautifully frames the greener nature of Sauvignon Blanc. All parts are rack and returned into the finished wine at the end of October, bentonite fined for protein stability and sterile filtered before bottled.
 
Light to medium straw hue. Lifted fruit aromas of gooseberry, passionfruit, lychee, lemon sherbet and cheddar cheese - very bright and fresh. A palate of some impact, crisp acidity, juicy lemon, passionfruit and gooseberry flavours, showing full body and very clean finish, sans astringency. Great texture, long flavours, clean and fresh without any phenolics.

Moss Wood enjoy the challenge of consistently producing the most substantial Semillon wine anywhere in Margaret River. The style has evolved since 1980 with the emphasis on achieving good depth of fruit flavour. Semillon grapes are painstakingly picked in three stages, green, medium and maximum ripeness, to enhance the complexity and achieve a highly engaging white wine experience.

There has been a slight, but significant refinement in the style of Moss Wood Semillon, but ultimately, it is the pursuit of excellence which determines the viticulture and handling of fruit. Grapes are hand picked and delivered to the winery, de-stemmed, crushed and pressed. The free runs are cold settled for two days, clear juices are racked into fermenters, a small portion of solids are reintroduced. Pure yeast cultures are added batches are vinified at 17C for a fortnight. Pressings are fined and settled, clear juices are racked and seeded for a separate, pure yeast fermentation. After a week of settling on gross lees, the two components are racked and assembled before a light fining, depending on vintage.
 
Medium straw colour, with green tints. Fresh fruit aromas of grapefruit, apples and fig. Strong notes of pear and musk, enhanced by background notes of caramel and lanolin. Classic Moss Wood Semillon, combining crisp acidity with full body and a slight firmness of tannin on the finish. The middle palate has ripe apple, fig and pear flavours giving a generous, almost sweet feel, despite the wine is pleasingly dry.
