Fraser Gallop aim to create a wine which has true elegance, fine texture and ample complexity as well as lively, fresh fruit character. Semillon is sourced from Wilyabrup where it can mature past the green, herbal notes to the riper spectrum of flavours such as lemongrass and quince. Sauvignon Blanc comes from the cooler sub region of Karridale, an area which produces finer, more elegant berries with fresher flavours. The classic Margaret River white style, eminently drinkable upon release, a wine which is more than just simple fruit flavours.

$2299each $275DOZEN EACH DOZEN Semillon and Sauvignon Blanc are harvested in the cool hours of morning and delivered promptly to the crush pad. Grapes are de-stemmed, crushed and gently pumped through a chiller on way to the Bucher XPF 80 press to get the must down to 8C. Juices are settled at 8C, racked off gross lees and warmed to 16C for fermentation. The juices are fermented in tank with two different yeasts to maintain freshness, bright fruit flavours and aromatics. A small proportion is fermented in new and one year old French oak barriques which adds to the complexity, structure and length of flavour. Sulphites are added upon completion to deter malolactic. The wine was protein and cold stabilised and cross flow filtered.

Pale straw with green hues. Gooseberries and passionfruit, lemongrass and fruit jube bouquets, rich bubblegum esters fade away to reveal a mineral edged wine. The palate is chalky as the fresh crispness of acidity sits well with supple sweetness. Lime and juniper berries make for a very delicious style. A well balanced wine with lingering flavours, a nice complexity that keeps you coming back for more.

Semillon and Sauvignon Blanc complement each other and coalesce into a delightful accord when made just right. A component of 5th Generation is sourced from two of the oldest plantings in Barossa Valley, vines up to a hundred years of age, these wonderful old sites yield a quality of Semillon endowed with exceptional intensity and charm. The supple richness of Semillon's delicate perfume mingles alluringly with the piquancy of Sauvignon Blanc. Treated to an extravagant mix of vinification techniques, the finished wine shows exquisite balance.

$2199each $263DOZEN EACH DOZEN The Grant Burge team have selected harvests of Sauvignon Blanc from splendid Eden Valley vineyards on the basis of vibrancy and retention classic fruit profile. Sauvignon Blanc is crushed and de stemmed, Semillon is de stemmed and pressed, a portion as whole bunches. Components of Semillon are barrel fermented in seasoned French oak while treated to a course of lees stirring battonage. The balance of Semillon Sauvignon Blanc are vinfied for two months at low temperatures in fermenters to maximise the retention of fresh varietal flavours. The barrel ferments are matured on sedimentery lees, to impart additional texture and richness.

Lemon green hue. Lifted aromas of citrus and melon, delicately interwoven with subtle herbaceous notes. The palate is fresh and lively, ripe tropical fruit flavours, zesty lime and a soft creamy lemon curd finish. The time spent by Semillon on lees has rounded the palate, adding an extra dimension to the wine. 5th Generation is best enjoyed young, the perfect match to crustacea and fresh fishes.

Block 1 is a steep gravelly slope of old, dry grown Semillon Sauvignon vines, amongst the first ever planted in Margaret River, yielding a very small crop of the most articulate Semillon and Sauvignon Blanc with a depth of flavour and intensity rarely seen. Only the purest free run juice are treated to a rich course of barrel ferments in seasoned French oak, followed by a term of eight months maturation. Lemony mineral, mesmerizingly complex with underlying toastyness, an amazing palate extension of gooseberries and lychee lingering to a clean ultra dry finish.

Two thirds Semillon grown to Henschke vineyards on Eden Valley, vinified around a solid backbone of topical Adelaide Hills Sauvignon Blanc from the distinguished Henschke property at Lenswood. Named for Eleanor Hill who married George Crossman Thyer in 1848, the grower who pioneered and developed Henschke's original Eden Valley site. Rich, spicy citrus flavours line the palate, crisp acidity, fine length and exquisite balance, take Eleanor out for the freshest fish or lightly spiced Asian faire.

$2199each $263DOZEN EACH DOZEN The Henschke Eden Valley vineyard is located at an altitude of 500m and a rainfall of 700mm. Cyril Henschke purchased the property from Kenneth Crossman Thyer in 1966, and established a large planting of riesling at a time when Riesling was scarce and bonuses were being paid by the large wineries. The vineyard is effectively dry grown, although the soil moisture is monitored and in drier years drip irrigation is used to keep the vines physiologically active. The closely husbanded vines are planted to a northerly aspect on well drained deep sandy loam and silts. Eleanor is treated to a brisk vinification and bottled promptly after vintage, young and unoaked, to retain vital fruit character.

Vibrant pale straw with lime hues. Lifted, fragrant aromas of citrus, cumquats and kaffir lime with richer notes of ripe stonefruits, custard apple and white currant. Layered and focused, the palate shows generous ripe citrus, green apple and nectarine flavours, with a beautiful line of minerality balanced with fine acidity, leading to a long, crisp finish.

Semillon and Sauvignon Blanc is sourced from Churchview Estate and Allison Valley Vineyard in the prestigious Willyabrup sub region. Grapes are harvested throughout the cool of night, each parcel at optimal maturity, retaining the natural balance of flavours and acidity. Fruit is immediately processed, juices are clarified and cold settled before a vinification to choice strains of yeast. The wine is filtered and promptly bottled, capturing the fresh primary fruit flavours and aromas.

Adelaide Hills is the eldest wine region in South Australia, one of the few regions anywhere in the country to enjoy four distinct seasons and has a reputation as one of Australia's areas for Sauvignon Blanc. Silly Mid On is just as remarkable for it's masterful integration of components, as it is for the heightened aromatic profiles, smooth fresh palate, and clean refreshing finish.
