Minimal chemical input in the vineyard is the priority with a move towards organic viticulture. Block 6 is an elite single parcel of Pinot Noir clone D4V2 Pommard, picked off the most superior rows of low yielding vines. Grapes are hand picked, hand sorted and gently de stemmed into small open fermenters for several days of cold soak maceration. After seventeen days of vinification, batches are pressed off skins into a selection of tight grain, seasoned and new, 500 Litres French oak puncheons for eleven months maturation.
 
Deep crimson colour. Dark forest berries, black cherry, Asian spice with a brooding density of dary fruit characters dominating the bouquet. Multi dimensional palate, concentrated and deeply saturated with dark berry fruit, remarkable for its superb silken textures, Yabby Lake offers great intensity, persistence and a long seamless finish.

The viticulture at Yabby Lake is all about realizing minimal harvests of small bunches and tiny berries, more quality and just a little less quantity. Pinot Noir clones MV6, G5V15 and DV24, from Blocks 1, 2, 5 and 6, grown to the sandy clay loams of Yabbly Lake Vineyard at Tuerong. Grapes are hand picked, hand sorted and destemmed into traditional open top oak fermenters, a fifth is included as whole bunches. Vinifications are hand plunged up to three times daily as temperatures peak at 32ºC, batches are pressed off skins after a fortnight of ferments into a selection of 500 litre French oak puncheons for completion of malolactic and eleven months maturation.
 
Great depth of colour. Ripe black cherry, dark forest berries and asian spice with perfumed oak aromas. The palate displays a complex array of ripe small berry characters and spicy oak. Yabby Lake has excellent density, concentration and pin point balance. It is the texture and mouthfeel of this wine that is most exciting, rich and velvety with intense varietal fruit flavours and a powerful long finish.

The Yarra Ridge team have captured the distinct expression of Yarra Valley Pinot Noir. Upper Valley fruit, known for it's aromaticness and delicacy, has been combined with components of richer and riper grapes picked off vineyards lower down the valley floor at close proximities to the Yarra Ridge wineworks. The emphasis here is on ageing in seasoned French oak to enhance the fruit, showcasing the velvety nature and sublime cherry, barnyard and rhubarb characters of truly satisfying and memorable Yarra Valley Pinot Noir.

Standards for inclusion into Yarra Ridge Pinot Noir are set to the most exacting specifications. Fruit must express luscious berry characters and distinctive varietal flavours while displaying ripe tannins and favourable acid profiles. Grapes are cold soaked to extract the maximum colour and flavour. Inoculation and vinification is followed by small parcels completing their fermentations in French oak. All parcels underwent full malolactic which softened any harsh acids. Each vineyard parcel is kept separate throughout the winemaking process and reviewed prior to the final assemblage. Yarra Ridge was treated to an extended maturation in a combination of tight grained French oak barrels.
 
Dark cherry red in colour. Lifted aromas of strawberry and spice, a touch of cranberry, earthiness and hints of subtle oak, leafyness and whisps of cedar. Ripe plums and subtle five spice flavours on the tongue, the palate is soft and generous with doses of sweet and sour red and black cherries, the smoothest tannins are fully integrated with background oak.
Yarra Yering Light Dry Red Pinot Shiraz

Inspired by the complex and eclectic diversity of noble French styles, intriguingly binding two distinct genres from Burgundy and the Valley Rhone, all done in a very Yarra Valley way. Dry Red No.3 is an elegant accord of hand selected fruit, picked off the 1981 Pinot paddock and 1995 Waterloo block. Half the Cuvée is Shiraz, treated to a whole bunch vinification and interrupted by a laborious destemming until completion of ferments. Components are filled to French oak barriques for nine months of age before assemblage into the final wine.

A joint venture between Champagne Veuve A. Devaux and Yering Station, vinified to complete Methode traditionelle, Yarrabank are one of Australia's most distinguished houses of fine sparkling wine. Fully bunch pressed as per traditional methods specialized for the purpose of crafting the finest sparkling wines. A complex and rigorous regimen of procedures takes at least three years to complete. Each bottle is treated individually from the time of tirage to release. The extravagant use of lees ageing, extended period of at least three years resting on it's own sediments in bottle before disgorgement, has contributed marvelous complexity and heightened flavour profiles to the finished wine.

After extended bottle development on yeast lees, Yarrabank is finally released from beneath the Yering cellars, the progeny of an ongoing joint venture between Champagne Veuve A. Devaux and Yering Station. Made to strict Methode traditionnelle, Yarrabank is widely recognised as one of Australia's flagship sparkling wines. No expense is spared and a number of rigorous measures are taken throughout every step of vinification. Taking at least three years to complete, each bottle is treated individually from the time of tirage until release.

A roughly equal cepage of Chardonnay and Pinot Noir from the best vineyards in Upper Yarra Valley. The Devaux winemaking team bring with them generations of experience in the production of fine Champagne. Clones P58, I10v3, I10v5 and Mendoza are hand picked off vines aged twenty five years, yielding 2½ tonnes hectare, into small baskets, before whole bunch pressing using only the first 500 litres/ tonne of fruit. The must is inoculated to yeast type DV10 and followed by Methode traditionelle vinification. Disgorged on demand after four years on lees and treated to liqueur dosage, a component of reserve wines aged in 5,000 litre foudres is added to the cuvee for consistency and complexity.
 
Pale wheat straw hue. Lovely gala apple and lemon meringue nose. Cracked yeast with a great freshness. An incredible line of intensity, grapefruit and lime provide a wonderful backbone of minerality balanced by a really fine mousse. A creamy middle palate thats persistent, clean and focused before a refreshing, zesty mineral finish. The acidity is delicate and delineated, a hallmark of the Yarrabank style.

It is here under the frigid cloudless night skies that Pinot Noir vines, planted to undulating granite schist soils, struggle to yield harvests of parched grapes, redolent with cherry berry perfumes, bursting with an intensity of flavour and wrapped in a muslin of seamless, velvet tannins. Treated to a year in a proportion of new French oak barriques, the Otago Pinot of choice to match with red meats, lamb roasts and game.
