Pirie are devoted to the artisanal élevage of fine Tasmanian Sparkling. Parcels of Chardonnay, Pinot Noir and Meunier are assembled around a reserve of aged vintages, the objective being to produce a consistent, full flavoured wine. Aromatically bready, toasty nots unravel over creamy autolysis characters from ageing on sedimentery yeast lees, all balanced by the crispness of apple and tangy citrus curd. True Method traditionelle in the fashion of the old world's most illustrious estates, followed by a minimum of eighteen months on lees before disgorging.

Amongst the Pol Roger assets are many miles of subterranean chalk caves and two hundred acres of vineyards. Roger also retain some of Epernay's finest growers to meet the international demand. Roger's caves include a sub cellar which maintains a constant 9.5C. This variance of a single degree lower to the upper stratum of caves slows the second fermentation, encouraging a finer mousse. Complex aromas that typify this style of wine result from a painstaking process of storage and agitation in a unique cellaring tradition. Cuvee Vintage Brut is allowed to slowly and quietly mature, treated to an extended rest within it's own bottle, upon it's own sediment, before degorgement et doseage.

Pol Roger is remembered by local Champenois for his resistance against the German army. The grateful townsfolk continued to re elect Roger as mayor until 1935, when they bestowed the honour upon him for life. It was the Champagne of Winston Churchill, who as everybody knows, was satisfied only by the best. Finished without the traditional liqueur expedition dosage, Extra Brut articulates the perfect balance between the holy trinity of grapes, to speak eloquently of the refined balance between Chardonnay, Pinot Noir and Meunier.

Established 1849, Champagne Pol Roger remains family owned and proudly independent to this day. Pol Roger was born in 1831, the son of a lawyer. He chose not to follow in his father's footsteps, but received his support when he showed a determined interest in the wine trade. His sales for the first six months of operation were 3,769 bottles and 825 half-bottles. That has grown to around 1½ million per annum. Although Pol Roger started business without a vineyard of his own, Pol Roger currently owns 55 hectares, largely in and around Épernay. The history and spirit of the company mirrors that of the family who bear the same name. A respect for nature, a devotion to quality and of course, le joie de vivre.
 
Deep gold, lustrous, fine, luxurious mousse. Brimming with the trademark Pinot Meunier flowery fruit, Pinot Noir follows closely behind with mineral characters, cherry and apple. Light bready notes, a more stable nose and palate than a vintage Roger, but with less sweetness. A wonderful bead of lovely white fruits persists, light and tangy, yet rich and yeasty. The sharp acidity, the firm mousse, the floridness and cherry fruit combine to serve and to ingratiate.

The definitive Pol Roger styling, dominated by Pinot Noir from the villages of Montagne de Reims, the choicest parcels are set aside for their excellence. The lightness and elegance of Chardonnay from the town of Epernay itself and Cote des Blancs, perfection in pink, the noble House of Pol Roger will never release Vintage Rosé until it is aged at least seven years under the Roger cellars. The very fine and persistent mousse for which Pol Roger is renown, owes much to these deep, dark, damp and cool temperature cellars.

Pol Roger are one of the few remaining great family owned Champagne houses. As one of the smaller estates, Champagne Pol Roger own eighty seven hectares of vineyards on prime sites in the Vallee d'Epernay and the Cote des Blancs, drawing the remainder of their supplies from individual growers, many of whom have supplied Pol Roger for generations. The estate cellars, extending seven kilometers, lie on three levels in the chalk below the streets of Epernay and are among the deepest and coolest cellars in the region. These seemingly extravagant resources contribute to the slow maturation and creation of fine, persistent bubbles which are the hallmark of Pol Roger.
Pol Roger Winston Churchill

Pol Roger's most prestigious Cuvee, only ever made in the finest vintages, a cepage of Grand Cru Pinot Noir and Chardonnay, sourced exclusively from vineyards which were under vine during Churchill's time. The relationship between Churchill and Roger dates back to a luncheon some months after the liberation of Paris, at which was served the sumptuous 1928 vintage. In attendence were Sir Winston and the beautiful Odette Pol-Roger. They struck up an instant rapport and the friendship between their families endures to this day.

The flagship Cuvee from one of the most venerable brands in the world, treated to two debourbages, one immediately after pressing and the second à froid after twenty four hours vinification at a chilly 7C. Each individual parcel is separately handled, grape varieties and vineyard blocks are kept apart until assemblage. Upon completion to dry at temperatures not exceeding at 28C, batches are treated to full malolactic, assembled and filled to bottle for secondary fermentation under the lowest Pol Roger cellars, thirty three metres below street level at a stable 9C. Cuvee Winston Churchill is treated to old fashioned remuage by hand, a rarity in Champagne nowadays.
 
Intense golden hues, a spiral of the finest bubbles. Well structured nose, forceful but with subtle mineral notes and hints of lemon, white pepper and ginger. An august, mouthfilling palate, robust and powerful, saltiness and minerality, balance, structure and poise. The finish is astonishingly long, Sir Winston is a masculine Champagne, self assured and unforgettable, a wine full of character and charm to indulge for its complexity, pairing well with foie gras, canapes or a fine fromage comte.
