Layers of liquorice, spices, soy sauce and herbs emerge from the core with aeration, the palate features rich, plush, ripe fruit flavours of dark red berries, black cherries and plums entwined with herbs, spices liquorice and pepper. The succulence of fruit is enhanced by discreet acidity, balanced by fine grained, supple tannin.

Pencarrow is crafted to traditional Burgundian techniques, harvests of several clone Pinot Noir, including 114 and 115, 667 and 777, Abel and 10/5, a portion as whole bunches, are treated to a cold soak before a wild indigenous yeast vinification for a fortnight on skins. A post ferment maceration for optimal extraction encourages the complex tannin structure and infuses further complexity. The finished wine is pressed into a selection of French oak barrels for a year's maturation.

Dark, deep, black hues. Tightly wound, intense and penetrating nose of ripe black fruits with dark herb and spice notes as well as violet florals. Medium full bodied, the flavours unfold and reveal black fruits and floral, concentrated and densely packed, supported by fine grained yet firm tannins. The oaking is sensitive and the youthful acidity carries the flavours to a long, lingering finish featuring spicy black fruits with hints of liquorice.

Crop thinning to reduce yields while maximizing quality of harvest is central to the viticultural program. Vines are trellised to the Lyre system, which allows them to find their own natural balance. Bunches of Pinot Noir are completely destemmed into traditional, open top, two tonne fermenters, for a decidedly Burgundian style of vinification, followed by a term of eleven months on lees in a high proportion of new French oak barrels.

He decided to pursue his dream in 1984 with the purchase of a derelict orchard on Paringa Road. From day one, McCall focused on exactingly managing the soils and the vines. His affinity for the land and astonishing feel for winemaking produced vintages of Pinot Noir that propelled the status of his efforts to stellar heights. Lindsay works closely with some of Mornington's finest vignerons to mentor and to nurture better techniques of viticulture. Grapes are completely destemmed into 2½ tonnes open fermenters, for three weeks vinification on skins, followed by a year on sedimentery lees in seasoned French oak barriques.

Bright scarlet colour. Bouquet exudes dark cherry aromas, a sprinkle of cool climate Mornington spice and subtle oak characters. $5099each $611DOZEN EACH DOZEN The relationship between Penfolds and the cool climate, higher altitudes of the Adelaide Hills goes back to the company's origins. Dr Penfold established his winemaking venture at Mackgill in 1844 to make Grenache wines which he would prescribe to patients. Exclusively hand picked grapes, with the inclusion of some whole bunches for complexity, are cold soaked and crushed before the free run juices, to the exception of any pressings, are naturally fermented followed by a single racking off gross lees. The finished wine is matured eight months in a combination of new and seasoned French oak barriques, before bottling, filtered but unfined.

Dark cherry red. Cherries and dark bramble fruits abound with attractive forest notes and lingering warm spice Subtle charry oak adds additional complexity in a discreet manner, leaving the bright fruit nuances to remain at centre stage. Strawberry and red berry fruits coat the mouth on a bed of soft tannins. A long and persistent finish that lingers and lingers, the wine's silky texture leaves the palate yearning for more.
