Years of patience are required for optimum maturity to be achieved. Within a few months, the wines are assembled. Within a few weeks, the yeasts have completed the malo-lactic fermentation process. Within a few days, the alcoholic fermentation has transformed the sugar into alcohol with the help of selected yeasts After harvesting, the grapes are transported, pressed and then juices fermented in vats. In order to ensure a carefully thought-out and natural wine-making approach and to guarantee the essence of the fruit is given full expression, keeping a tight rein over the entire production process is of paramount importance.
 
Pale golden yellow, a fine effervescence. An engaging nose, vinous without being green, buttery while not overtly rich, tropical yet crisp. A magnificently flavoured wine, Cuvee Rose is assertive and complex, vibrant and generous. Redolent with bouquets of ripe red fruit, persistence in it's vibrant pinkish mousse, reminiscent of zabayon. Brut Rose is a seductive wine, the assemblage, which is formed around Pinot Noir, is both spontaneous and balanced, emphasising fruity liveliness. In 1446, Jean and Nicolas Moët were made nobles by King Charles VII. In 1743, one of the descendants of the Moët brothers, Claude Moët, who had been a wine trader in Epernay since the early 18th century, founded the Maison Moët. Everything is done to capture the excellence of terroir, 218 hectares, of which 160 are classified as Grand Crus. Each kept separate from picking until the must reaches the vats. The final assemblage is complemented by a component of reserves from the G.H. Mumm stocks to add maturity and richness. The wine is then bottled for secondary fermentation, followed by maturation under the G.H. Mumm cellars for at least three years before disgorgement and a complex liqueur de dosage.
