Parker Estate Terra Rossa Cabernet Sauvignon

Parker Estate was built from the ground up in the right way, with the intention of producing precisely this style of wine. Established in 1985 by an old hand within the industry, quality winemaking was the only priority and commercial constraints played no part in the development. A mostly Cabernet wine with small portions of Merlot and Petit Verdot, grown to an exceptional site, ranking as one of South Australia's finest. The fruit is characterised by very dark colours, super ripe flavours, excellent complexity with good alcohol, density and structure.

Vinified from fruit picked off fully mature vines which produce a limited yield of 1½ tonnes/ acre, planted to the Parker Estate's Terra rossa over limestone Coonawarra property. Integral to the style and quality of the finished wine are unique soils and mesoclimes, so favourable to the noble cepage of Cabernet Sauvignon, Merlot and Petit Verdot. Following a warm fermentation, a little over half the grapes are treated to a long maceration of thirty days, the balance receive a shorter ten day maceration. Parcels are matured in a combination of new and prior use 228 litre French oak barriques for twenty two months. The final wine is assembled and returned to oak before an egg white fining and bottling.
 
Deep red tint. Intense deep dark fruit with some dark chocolate, prunes and charry vanillan and coffee oak aromas. The palate is rich and dense with a solid core of dark fruit running along the entire length. Impressively dense and solid structure, but also showing some faint leafy Cabernet notes typical of southern Coonawarra vineyards. To be decanted before service and savoured alongside the finest meats.

Pirramimma can boast the first vineyard in Australia dedicated to Petit Verdot, it remains the largest and most productive. Pirramimma's efforts at Petit Verdot have amassed much international acclaim, prompting notable Swiss connoisseur Rene Gabriel to ponder, is there any better example of Petit Verdot in the world? Double decant for early drinking, its tender tannins make the perfect match to crumbed yearling cutlet or delicately seasoned spring lamb.

Geoff Johnston studied in France where his strong interest in the unique Petit Verdot Bordeaux varietal first evolved. Johnston's initial trials with the grape have expanded to over ten hectares of mature vines. A pure varietal wine from two Pirramimma estate properties with the focus on a backbone of the best parcels grown to the Katunga estate vineyard, planted exclusively to Petit Verdot vines grafted on own rootstock, grown to sandy loam soils. Grapes are hand pressed and vinified in the original Pirramimma concrete vats before transferring to a selection of French and American oak barriques for completion of ferments, followed by two years maturation.
 
Deep purple colour. Violets on the bouquet, blackberries and briar, kirsch cherries and cigar box oak. Powerful concentrated palate exhibits spicy plum and forest floor, tangy cherry, hints of mulberry and vanilla bean. The long lingering tannins and subtle oak are beautifully balanced. A wine with great length of flavour and sustained finish.
Stoney Vineyard Cabernet Sauvignon

The topical Medoc cépage of Cabernet Sauvignon and Franc, Merlot and Petit Verdot, artisanaly fashioned into a statuesque Bordeaux style. The exemplary efforts of Domaine A are Langtons listed, have received great adulation from the industry press and claimed prestigious wine show competition awards. Cabernet of the highest order, her tannins are fine but firm, striking the balance between power and grace, before an immeasurably long finish. Stoney Vineyard exhibits an elegance rarely found amongst her mainland siblings.

Domaine A/Stoney Vineyard is a small, family owned property, half an hour's drive from the city of Hobart in the Coal River Valley. Vines were originally established in 1973 to black cracking clays over a Jurassiac base. Veraison is normally around February and picking in mid April. The north facing vineyard and extended sunshine hours ensure that the fruit is fully ripe at vintage. A rich cepage of Cabernet Sauvignon and Franc, Merlot and Petit Verdot are treated to traditional old wold winemaking, open vat vinification, regular racking, hand plunging and assemblage between the first and second ferments. Matured two years in a selection of seasoned French oak barriques. Alcohol 13.5%
 
Deep ruby colour. Dark cherry and vanilla bean on the bouquet, sage and licorice, briar wood and soy. An elegant, full bodied wine with great concentration of fruit, dark cherries and berry flavours, roasted coffee and dark chocolates. Made for early drinking and will continue to evolve, a richly concentrated effort with intense ripe flavours, ample black fruit characters, delicate complexity and supple spice.

The stylish Margaret River accord of Cabernet and Merlot, with a timely inclusion of the rakish Petit Verdot. The Swings & Roundabouts team purposely leave the fruit to ripen on the vine for the longest time allowed by nature, encouraging the development of fully developed tannins and sugars alongside heightened varietal characters. They then have to fight with the kangaroos over possession of these deeply flavoured grapes. A vigorous red wine to match aged cheddars, stronger cuts of meat or well prepared game.

Swings & Roundabouts is based at Yallingup where it crafts pure Margaret River wines and smart West Australian blends. Widely acknowledged as one of the region's leading winemakers, Mark Lane found his way home in rather a roundabout way. For a while he made cheese in Melbourne and completed apprenticeships in the Yarra Valley with the likes of Tarrawarra and Eyton-on-Yarra before making the trek west to take up position of chief winemaker with Deep Woods and Flying Fish Cove. Parcels of Merlot and Cabernet Sauvignon are harvested at optimum maturity, each parcel is separately handled and fermented, followed by a term of maturation in French oak.
 
Deep purple red with a dark core. Ripe plums with cherry and mocha notes over fine vanillin French oak. Dark fruits with classical Margaret River Cabernet varietal, choc mint characters lifting the nose. The cherry characters carry through to the palate, dark berry fruits are present, Rich and layered palate with generous flavours of plum and spice leading to a fine mouthfilling middle palate exhibiting fine grained tannins to finish.

The arid temperate climes and ancient craggy terrains, which make Pyrenees mesoclimes so very unique, make a home away from home for the noble varietal grapes of Bordeaux. The topical cepage of Cabernet, Merlot and Petit Verdot, coalesce into a rakish Medoc style, bursting with blue black flavours and lined with opulent tannins. Sourced from the most superior sites, Taltarni is treated to a judicious measure of barrel ferments for richness and complexity, followed by an extravagant two years in a selection of the finest oak barriques.

Grapes yielding a mere 1½ bottles are selectively hand picked off vines grown to complex silts, alluvial sands, a high percentage of clay and a conglomerate rich in minerals, all very similar to those found in Bordeaux. Berries are further sorted upon arrival to the wineworks, de-stemmed, gently crushed and vinified for three to four weeks at 28C before being treated to full malolactic in a combination of barrels and fermenters. Matured fifteen months in a selection of French oak barriques before assemblage, bottled and treated to another year of ageing under the Biserno cellars before release. Alcohol 14.5%

Excellent Langtons Classification. Vasse Felix are known for their profound and compelling vintages of Cabernet Sauvignon, performing well whatever the vagaries of growing season, by virtue of auspicious soils and propitious clime. Intense, yet elegantly structured, the first red wine ever released from within the nascent Margaret River, it remains to this day, the elder statesman of the region. The finest Cabernet Sauvignon available to Vasse Felix hails from the northern end of Margaret River, off vines planted to gravel loam soils within eight kilometres of the coast. Individual vineyard sections are fermented as separate parcels, many are left on skins to macerate for up to thirty days. Tannin influence is controlled through traditional oxidative handling, creating a deeply coloured wine with great structure and length. The Cabernet backbone of blackcurrant and herbal nuances with long, dry sinewy tannins is lifted to glorious heights by smaller portions of Merlot and Malbec. The finished wine is aged eighteen months in a selection of new and seasoned, exclusively French oak barriques.
 
Deep red with crimson hue. Rich, concentrated blackcurrant, violets, bay leaf and dried twigs with hints of mocha, menthol and graphite, all perfectly framed by subtle spicy, vanillin French oak. Enters the mouth rich and seductive, with a mixture of blackcurrant, bay leaf and chocolate dust, then bursts to life with an explosion of tangy, bright acidity. Finishes fragrant, over a lingering length of finely structured, dry tannins.

Established 1967, the Vasse Felix property is planted at the heart of Wilyabrup, within the nucleus of premium Margaret River viticulture. Low yielding, dry grown vines planted on some of the world's oldest soils enjoy long, warm growing seasons and cooling summer breezes from the nearby Indian and Southern Oceans. This moderating effect yields grapes of exceptional concentration and intensity, whilst retaining elegance and finesse. Heytesbury is a selection of the best barrels from the best batches. Fruit is all hand picked at the time of mother nature's choosing, when natural sugar/ acid levels are deemed to be perfect, always differing from site to site. Bunches are de stemmed to retain as many whole berries as possible. Parcels are separately vinified in open and upright fermenters over the course of a fortnight at temperatures below 25C, while treated to a course of gentle pumpovers and plunging. Upon completion, some batches are held on skins for a term of optimal extractions. Components are pressed into a high proportion of new French oak barrels for twenty months maturation, periodically rack and returned for clarification before assemblage.
 
Deep ruby, violet hues. Lifted bouquet of black currants and ripe red cherry fruits, dusty oak notes and polished vanilla cedar perfumes. Soft sweet fruits dominate the palate, blood plums and dark cherry, blackberry brambles, dark chocolates and cedar complexity. Wantirna Estate Amelia Cabernet Merlot

Excellent Langtons Classification. Whilst the cepage of fruit to Amelia may be different each year, a backbone of two thirds Cabernet Sauvignon dominates, a third of Merlot and Cabernet Franc ensues, followed by a soupçon Petit Verdot. Favouring the slow ripening of a long growing season, Petit Verdot grapes are always last to be harvested, usually in mid April. It is the the quietly spoken measure of of Petit Verdot which contributes structure, fine firm tannins and good natural acidity, fully approachable while young, she will age beautifully for more than fifteen years.
