The mission for Jacobs Creek is to improve the quality of wines with each passing vintage. They know their vineyards well and keep an eye on the progress of the fruit as the growing season turns from veraison to ripening and onto vintage. Grapes are harvested early in the vintage, throughout the cool of night, when they have achieved the ideal varietal flavours, the right amount of fruit sugars and high natural acidity. Each batch is gently pressed to retain pristine qualities in the juice, inoculated and vinified separately in temperature controlled tanks to retain the vitality of fresh Moscato grapes. A secondary fermentation adds subtle, creamy complexity, giving the wine its attractive fine gas bead and mousse. Approx 9.0%

McWilliams Hanwood Classic Muscat
Riverina
A patiently matured, multi vineyard Muscat, vinified from Red Frontignac grapes and blended to an average age of five years. The fruit, picked extremely ripe to maintain the sweetness of the style, is sourced entirely from McWilliam's vineyards in the Riverina wine region of New South Wales. The warm and dry conditions are ideal for Fortifieds, enabling grapes to ripen superbly and to achieve great richness of flavour. Fermentation is arrested at the desired sweetness by the gradual addition of a high quality neutral Spirit, also made at the Hanwood wineworks.

Frontignac grapes are harvested at a minimum 14° baume of sugar ripeness, crushed into open fermenters and partially fermented on skins for a week and more to extract maximum colour and flavour. This gradual fortification of around two per cent alcohol per addition helps control fermentation and ensures seamless wine and fortification integration. To control the development of aged rancio characters and to keep the flavours fresh and balanced, batches are matured in larger oak barrels than those used for tawny ports, well seasoned oak, at least ten years of age. This allows the wine to slowly develop complexity without obvious oak flavours and characters. The final blend is cold stabilised and filtered prior to bottling.

Dark tobacco hues. Floral rose petal, caramel and allsorts, sticky date and complex fruit notes. Smooth and rich palate, developed Frontignac fruit notes, concentrated raisins, a considerable lusciousness from, mellow sweetness and intensity. A rich and luscious raisined palate with a silky smooth finish, Hanwood appeals to all wine enthusiasts because of its fresh fruit flavours. An astonishingly suitable accompaniement to many cuisines.

The ripening grapes are left on the vine late into the autumn harvest season, as long as possible to obtain maximum sugar level before selective picking by hand. On arrival at the winery, the grapes are crushed and allowed to partially undergo fermentation, before draining and pressing, then a high strength neutral spirit is added to arrest the fermentation and fortify to 18% v/v alcohol. The grapes are then transferred into oak casks and barrels to slowly mature for many years.
