Fruit is harvested in two separate parcels off the Hanlin Hill Vineyard in Valley Clare. Shiraz is drawn from Block C, originally planted in 1963 but with a chequered past of being grafted to Chardonnay in 1983 and chain sawed back to the original Shiraz plantings in 1997. Malbec is picked off Block I, established 1969. Perfect phenolic ripeness determines a whole bunch fermentation. Components of Malbec and Shiraz are treated to a regimen of fully oxidative handling and inoculation to wild, unruly yeasts. The finished wine is assembled into a forward drinking, yet cellarable style of great interest, substance and structure. Alcohol 13.2%
 
Deep dark red colour. The nose delivers an array of red fruits, raspberry and morello cherry are layered with sweet five-spice and earthy beetroot notes. A brooding explosion of anise, cherry and mulberry flavours is pulled together by velvety whole bunch tannins. Since 1912, the Knappstein family have been central to the management of the estate's Clare Valley vineyards. Since 1984 when the production of Stanley casks was moved to New South Wales, Clare Valley Leasingham has been free to concentrate on the production of superior wines. Rich soils and cool, moist conditions are perfect foundations to grow the finest fruit, Clare Valley is renowned throughout the world for Australia's most regionally articulate Cabernet wines. Cool and even ripening conditions encourage grapes to concentrate their flavours while developing refined, elegant tannins. The finished wine is treated to a term of age in a selection of seasoned and new French and American oak barrels.
 
Ruby red colour, purple hues. Lifted aromas of red and black berries with hints of chocolate and cedar spice. The palate is medium bodied, a rich mouthfeel is underpinned by focused and fine grained tannins. Bin 56 is brimming with ripe red berries and cassis flavours, supported by dark chocolate and cigar box notes before a long, lingering finish. Perfect with Moroccan lamb, osso bucco, or spicy gourmet sausages.

Art Series continues to be a collector's wine and to command lofty prices at auctions the world over. So what is it that gives Leeuwin Cabernet its ethereal qualities and makes it stand so far above the rest? Great wines are born in great vineyards, at Leeuwin the viticulturist and winemaker work hand in hand throughout the entire process, combining their skills to create wines of distinction. Major focus is placed on the confluence of climate and soil, viticulture and vinification are as of one. Closely monitored ferments, Bucher Pneumatic presses and a cellar of imported French oak barrels are called upon to ensure that the fruit is transformed into the most stately Cabernet wine.
 
Deep garnet colour. Striking blackcurrants and cherry scents combine with aromatics of fragrant violets, bay leaf and anise, clove and dried tobacco. Oak is very fine and pencil like creating an overall complex and fragrant nose. A well appointed palate showing direction, balanced with fine texture, exhibiting plump dark forest fruits. Dried sage, coffee bean, slight char and anise rise to a finish which is characterized by structural cocoa powderlike tannins.

One of the more profound Margaret River constructs of the complex Bordeaux blend, a cépage of Merlot and Malbec, Cabernet and Petit Verdot. Combines the blueberry and blackcurrant fruit characters of Yallingup with the perfumed violets and toothsome red currants of Cowaramup, generous fruit depth with soft oak influence, in fine support with a toasty, spiced background. Full body and sweet round flavours of cherry and other dark fruits, as well as melted chocolate, make Amy instantly appealing and oh so easy to enjoy.

Bunches are destemmed into open fermenters and the juices seeded with pure yeast culture. Temperatures kept to a maximum of 30C and ferments hand plunged up to four times daily. As each batch reaches dryness it is tasted daily for tannin balance and pressed when the optimum has been reached. Skin contact ensues for a period of ten to fifteen days.Wines are racked to tank and allowed to settle before being racked off gross lees and seeded for malolactic. Upon completion all batches are racked, assembled and returned to barrel. After fifteen months maturation in a selection of new and seasoned French oaks, the wine is treated to a light skim milk fining, sterile filtered and bottled.
 
Deep brick red. The classic ripe fruit aromas of each variety in the cepage, Cabernet shows blueberry and cedar, Petit Verdot is dark jube and confectionery, Malbec contributes ripe plum and earth. A very light oak background to exude a perfumed, lifted nose, juicy, sweet red and dark fruit flavours. Firm tannins along the palate to a suitably balanced finish, malt biscuit and spicy oak flavours arise, a palate of balance and great length.

Exceptional Langtons Classification. The low yielding, unirrigated vines at Mount Mary Vineyard are planted to grey sandy clay loams over broken shale soils. The percentage of each varietal included into Quintet every year is determined largely by the vagaries of vintage, factors such as fruit set and quality of harvest. An extravagantly rich cepage of Cabernet and Merlot, Malbec, Verdot and Cabernet Franc, Quintet exhibits an uncanny balance which drinks beautifully, a slight alcohol lift on finish will see it through for many years to come.

Grapes are hand picked and lightly crushed, destemmed and vinified in a mix of closed and open top fermenters for up to ten days while being treated to frequent pumpovers. Upon completion of malolactic and lees settling, the wine is transferred into a selection of new and seasoned oak barriques and larger format 1500L oak casks for a year, followed by a racking into seasoned barriques for a further ten months.
 
Deeply coloured, dark purple red. Lots of bright fruit, complex, a tighter, more savoury wine, earthy aromas and cedar are punctuated by raspberry notes. The palate is structured and linear, offering good weight of fruit, ripe red berry flavours and tobacco characters. A Yarra Valley of richness and length, firm tannins but very much in balance.

The Adelaide Hills hamlet of Paracombe, settled circa 1840 and now booming with a population of 365, was named after the headwaters of Little Para River. Initially a successful sheep station, the site of Paracombe Vineyard was destroyed by Ash Wednesday's Fire before being established to vine. Hand picked grapes from the Drogemuller property in Adelaide Hill, are vinfied alongside choice parcels harvested by neighbouring, specialist local family growers. Fashioned predominately around a backbone of six different clones Cabernet Sauvignon, the assembled Reuben is matured eighteen months in a selection of seasoned and new French oak hogsheads and barriques.
 
Intense colour, deep ruby tones, bright robes in the glass. Lifted aromas of poached rhubarb and plum, delicate hints of oak, leatherwood and licorice spice. The palate is generous, finely structured with rich, sweet fruit driven flavours, fresh raspberries and loganberry, interspersed by savoury, spicy notes.

A profound construct of noble red varietals, Cabernet Sauvignon and Franc drive the palate, tempered by the forward drinking Malbec and plum juicyness of Merlot. The story dates back to a deluge upon the Sevenhill vineyards in 1974. Winemaker emeritus Brother John May was not convinced that the crop was up to standard, so he blended all the grapes together. Impresario Doug Crittenden declared that it was the closest thing to Pomerol he had ever tasted! Named for the founder of the Jesuit Order, St Ignatius remains to this day a wine of immense stature.

While the inspiration for St Ignatius originates within the complex red blends of Bordeaux, the grape varieties are well suited to Sevenhill's cooler, late ripening conditions. The finished wine makes a compelling case for the world class quality of Clare Valley fruit. Vineyard management also contributes to low vigor in the vines and modest yields, achieving a rich wine of impressive concentration and depth. St Ignatius was vinified from the choicest parcels, by separate batches in open slate fermenters for up to a fortnight, capturing intense extraction of colour and flavour. After a traditional basket press, St Ignatius is treated to an extended maturation in a combination of new and seasoned French oak barrels.
 
Malbec infuses St Ignatius with deep colour. Aromas of blackcurrant and chocolate over a subtle expression of oak. Merlot adds violet, Cabernet Franc contributes raspberries, each variety brings it's own character for a wine of great complexity. Cabernet Sauvignon offers intense dark berry flavours and firm, smooth tannins for a seamless finish.
