Medical practitioners are conspicuously over represented statistically amongst the roll call of Australia's boutique wineries and grand, baronial winemaking estates. Is it all about the quest for a healthy mind and healthy body, or is it something rather more indulgent that our physicians are practising? Clearly not a depraved effort by any means, Bittersweet Symphony is a poised and gracious Cabernet wine, brimming with Clare Valley elegance, endowed with fragrant perfumes, layers of clean berry fruit and sleek, cultivated tannins.

Claymore has achieved wide industry acclaim from peers and the wine show circuit. Disparate lots of parched fruit are high maintenance, but Claymore have never compromised in terms of quality. Unirrigated, the vineyard yields only small volumes of no more than two tonnes per acre, but this is more than compensated by the quality of the final wine. The underlying philosophy is to keep things fun, whilst practising an exacting attention to detail. Bittersweet Symphony has spent in excess of eighteen months maturing in a careful selection of new and prior use, predominantly French oak. Time in barrel gives the opportunity for the naturally pronounced tannins of the Cabernet to soften and integrate.
 
Deep crimson red with purple hues. Bright and lively aromatics of sweet berry, bramble and sour cherry dominate. The oak is subtle and lightly applied, showing as notes of cigar box and spice. All those bright fruits continue in the mouth alongside hints of white pepper and cocoa. The finish is all fresh raspberry rounded out by integrated silken tannin that builds gently, glass after glass.

Only ever made in exceptional vintage years, from fruit grown to the old Cabernet vines on Churinga Vineyard just north of Watervale. These dry grown, gnarled old veterans yield the most superlative Cabernet Sauvignon in all Valley Clare. The harvest of this elite block is treated to a spell of extra ripening to further concentrate the intensity of flavour. The extravagance of two years French oak and minimal filtration achieve a wine of spellbinding depth and imposing structure, quite literally a beguiling Clare Cabernet to bewitch the senses.

Plush generosity and a layering of flavours, pretty up front but let the wine breathe and suddenly these dry, fine and lightly chewy tannins build on the back palate, lending a savoury edge to the dark fruit richness. A skerrick of Merlot from a block adjacent the Claymore cellar door, sits in the barrel store until called for inclusion as a finishing aid, bringing structure and softness, achieving a seamless wine that leaps to the beat.

A topical field blend of Tempranillo, Malbec and Cabernet Sauvignon, all hand picked and individually berry sorted prior to a light carbonic maceration and natural ferment in the Beaujolais style. Aged ten months in a single French oak vat, this west coast blend captures and expresses the magnificence of Swan River Valley. A sweet and savoury nose of satsuma plums, rosewater and black olives, a mere sprinkle of aniseed, its fresh and lively palate of pomegranates, cocao and maraschino fruits, supported by the rakish elegance of Tempranillo’s coal dust tannin structure.

The traditional Bordeaux cepage of varietal grapes, mostly Merlot with additions of Cabernet Sauvignon, Malbec and Franc, grown to the Craggy Range estate owned property in the prestigious Hawkes Bay precinct of Gimblett Gravels. The complex mix is finely attenuated each year to accomodate the vagaries of vintage. Craggy Range make an opulent, solidly structured Merlot that's feted by impresarios the world over. Deeply coloured and highly aromatic, Gimblett Gravels is effusive ans profoundly structured, underpinned by signature dusty tannins.

The Craggy Range vines are managed to a system of sustainable ecological viticulture. Every stage of the vine's growth is measured and compared to ensure balance and harmony with the environment. Pruning, removal of excess, thinning and arranging are all done by hand. Fruit is harvested off twenty two blocks on the Craggy Range Gimblett Gravels property. Grapes are completely destemmed and inoculated in fermenters for vinification. Upon completion, Craggy Range is transferred to a selection of new and seasoned French oak barriques for sixteen months maturation, followed by assemblage into the finished wine, a light fining and filtration before bottling. Alcohol 13.0%
 
Very dark red colour. A brooding bouquet of dark plums and blackberry. Wild thyme, rose florals and nutmeg nuances contributing to a lifted complexity. The silken texture unveils an intense core of fruit with cocoa and fresh tobacco characters. A rich palate that's tempered by balanced tannins and kept fresh by bright acidity. Merlot is a traditional accompaniement to lamb, the additions of Cabernet Sauvignon, Merlot and Franc make Craggy Range a superior match.

The Cullen success story revolves around the quality of wine made from biodynamically grown grapes, sourced exclusively from the Cullen and Mangan Vineyards. Western Australia's wine industry acknowledged estate matriarch Diana Cullen by naming an award in her honour. A decidely Bordeaux mix of varietals, Cabernet Sauvignon and Petit Verdot, Merlot and Malbec, fashioned into a comely pink style of fresh, juicy characters, strawberries, currant and plum. Redolent and ripe and with vibrant varietal complexities, an ingratiatingly savoury, adults only, piquantly drying finish.

Langton's Exceptional Classification. Diana Madeline is one of Australia's great icon wines, crafted from fruit grown to one of Margaret River's earliest sites. The vines, planted in 1971, provide a scant two tons per acre, yielding grapes of amazing concentration. Cullen have returned to the old world practice of basket pressing. To their delight, they have found that this leads to the extraction of only the finest tannins. In accordance with biodynamic principles, all fruit is hand harvested from vines up to forty years of age. A patented Mistral® apparatus removes the leaf material and infertile berries from the vineyard, providing cleaner bunches. A luxurious cepage of Cabernet Sauvignon and Franc, Malbec, Merlot and Petit Verdot, the grapes are carefully sorted before fermentation to indigenous yeasts and malolactic bacteria. No acid or cultured yeasts are added, achieving a wine with a sense of place through a completely natural process. Components are separately vinified before being treated to nineteen months maturation in a selection of new and seasoned French oak barriques.
 
Delicate crimson, garnet ruby hue. Plum, mulberry and blackcurrant aromas cascade out of the glass accompanied by elevated notes of violet and rose. Savoury ironstone and tobacco complete the classic aroma profile of Diana Madeline. Fine grained tannins with uplifting and sustained fruit notes. Red fruit and plum flavours connect with the ironstone minerality, providing backbone and structure. Medium bodied, elegant, the depth and length are profound, proverbial fist in a velvet glove.

A national wine show champion, recipient of the 2008 Jimmy Watson. Flametree is a young and most remarkable little estate which is enjoying a meteoric rise to fame, transpiring solely on the basis of quality and unprecedented trade show successes. A mostly Cabernet Sauvignon wine with a third of Merlot from fruit grown to the Karridale and Carbunup appellations of the Margaret River region. The very special sites produce the most intense wines with ripe dark berry fruit characters, the greatest depth of flavour and soundest structure.

A lifelong friendship between local winemaking identities lead to the establishment of one of the Margaret River's most successful estates. The Flametree wineworks are located on the picturesque shores of Geographe Bay, whence some of the new world's finest Cabernet wines originate. Flametree can lay claim to retaining some of Margaret River's most auspicious vines. Parcels of Cabernet and Merlot grapes are placed into open pot fermenters for several days of cold soak. Fruit is treated to a wild indigenous yeast vinification with gentle plunges and pumpovers, followed by a course of malolactic and a year's maturation in a mixture of seasoned and new French oak barrels.
 
Deep red in colour with a bright purple rim. Classic Cabernet nose of cassis and blackberry with notes of freshly dusted cocoa and subtle spice. The palate is beautifully concentrated, packed with dark fruits and bitter chocolate characters. A juicy, almost sweet mouthfeel with fine tannins and a savoury finish. Aged in tight grained, quality French barrels, the oak has pulled the fruit into line and provided the framework for a classic Margaret River Cabernet Merlot.

Mount Barker shares an uncanny confluence of soils and clime with the world's great Malbec regions, the unique gravelly terroirs of Bordeaux, the nether latitudes and invigorating elements of Mendoza. Malbec was planted at Forest Hill in the 1990s, now in their third decade of productivity, they yield the rare quality of Malbec that merits bottling as a pure varietal wine. Multi dimensioned and structured, an intensity of blackcurrant, cherry and cloves, its well proportioned palate lined with mocha, supported by the softest tannins, resolving on a lingering, black olive finish.
