Cariñena is a Mediterranean heritage varietal which the Torres team resuscitated from the last known enclaves on old vineyards in Chile. The Garnacha Tinta component is grown in a region famous since the time of Roman Emperor Augustus, for producing the finest wines in the Mediterranean. This is a provocative wine for Australian tastes, with gritty tannins, tangy acids and a drying palate in authentic old world styling that's sure to stir lively conversation. A torrid, warming red that goes well with fried sardines, stuffed peppers or Iberian styled pizza.

Mostly Garnacha Tinta grown to the Mas Nerola vineyard in Middle Penedes and the Serra d'Almos in Montsant. A third of Cariñena from one of Torres most famous vineyards, the Les Muralles situated around the Conca de Barberà. This superlative vineyard produces Cariñena of exceptional quality. Cariñena is a rough grape from a broken home with many problems, mostly used for blending, ubiquitously grown around the Mediterrannean where it basks in the dry climate. When cultivated under trying conditions to poor soils, it produces robust wines of high alcohol potential, rich pigment and extract. Two weeks skin contact and aged for six months in a mix of American and French oak barrels.
 
Deep ruby colour with a hint of ochre. Rich complex Mediterranean aromas with exuberant notes of blackberry and spice. The fruit flavours are ample and generous, offering an engaging complexity as they develop into savoury, herbaceous characters. Velvety tannins support expressions of licorice and a concentratation of savoury fruit. Superb with pastas and roasts, casseroles or game, Asian and traditional Mediterranean cuisine.

The Turkey Flat vineyards are unique, in that the estate can trace their first plantings back to early settlement in the 1840s. The site was acquired by Gottlieb Ernst Schulz in 1865, a successful butcher who established a thriving business. His descendants are still there to this day, working amongst the vines. Butchers Block is fashioned to a crowd pleasing style, Mourvèdre provides the backbone, Shiraz adds flavour, Grenache brings rustic spice and dark morello fruit. Balance is essential, each grape plays a role, yet nothing competes for your attention.

The original butcher's shop employed by Gottlieb Ernst Schulz is now the Turkey Flat cellar door. It is a place where the Turkey Flat team, assemble to bring together the various components of a wine, they give each part an opportunity to speak, to articulate and define its contribution to the greater whole. Parcels of Shiraz, Grenache and Mourverdre are separately handled, crushed into a mix of seasoned oak vessels and treated to a term of cold soak for optimal extraction of flavour, colour and tannin. Upon completion of ferments, batches are rested for spontaneous malolactic, followed by a term of eighteen months in French oak hogsheads and larger format oak vats before the final assemblage.
 
Bright garnet red. Good fruit on the nose, black berries and plum, spiced olives, bay leaf and savouryness. A fully aromatic, subtly structured wine, Shiraz providing a backbone of solid tannins and luscious depth of flavour, Grenache contributes a dash of spice and cherry sweetness, whilst Mourvedre adds extra layers to the tannin, as well as a measure of fragrance and an element of funk. A match to braised game with herbs, olive and tomato.

The hundred year old Turkey Flat Grenache parcels yield harvests of the most amazing concentration. Rows of traditionally spur pruned vines, husbanded in the goblet style of Vallée du Rhône, produce around two tonnes per acre, translating into intensely flavoured vintages of remarkable eloquence. Aged in a judiciously toasted selection of seasoned and new French oaks barrels, the wine achieves astonishing balance between tannin and fruit, herbaceousness and spice, all due to determining the ideal day of harvest, selective hand picking and careful sorting of the berries.

Aerope is assembled annually from a chosen few of the most exceptional barrels, vinified from grapes that are hand picked off an eighty year old, dry grown vineyard on Radford Road, near the ancient Barossa winegrowing hamlet of Greenock.

Grapes are all hand picked, most are crushed and destemmed into five tonnes open top fermenters, a quarter of the fruit is processed as whole bunches. After several days of cold maceration the musts are allowed to warm for vinification. Throughout the peak of ferment, batches are pumped over a minimum four times daily to extract colour, flavour and tannin. After a fortnight on skins, each fermenter is drained off, skins are pressed and returned to the free run. Batches are then racked to a selection of well seasoned French oak hogsheads for malolactic and seventeen months maturation.
 
Bright red with subtle brick red hues. Fragrant and inviting, full of red berries, bright Asian spice, lavendar, savoury charcuterie and great steely minerality. The palate is highly refined, an extremely attractive entry of red berries, lavendar and creamy rosewater. The juicy mid palate tightens up to the late palate finishing with fine tannins and mouth watering charcuuterie and savoury mint notes.

Batches are de stemmed and crushed into open top fermenters, a portion are added as whole bunches, Shiraz is pumped over three times daily through the peak of ferments, Grenache and Mourvèdre are cold soaked and lightly plunged. Components spend a fortnight on skins, all pressings are rack and returned to the free run, some barrels are treated to extended lees contact. Batches are filled to a selection of older French oak foudre, hogsheads and puncheons for a year's maturation.
 
Bright red colour. Bright raspberry bouquet, dark cherrie and rose petal, jelly crystals and the sweet savouryness of deli meats. Bright and vibrant on the palate, jellied fruits, cherry drops and strawberries cream, rose water notes, a lovely interplay of creamy/ leesy textures, the gentle, chalky tannins run the length of palate, finishing with hints of white pepper, aromatic cedar oak and hints of smoked meats.
