Morris of Rutherglen Classic Muscat 500ml

The fifth generation of Morris endure as one of the world’s great winemaking estates, releasing an unbroken lineage of internationally renowned fortifieds year after year. Morris Liqueur Muscats are vinified from precious harvests of Brown Muscat grapes, a clone of the Muscat aux Petit Grains Rouge, which grows in bunches of small red berries. A rich bouquet of the most intense varietal Muscat characters, driven by a palate of wanton, indulgent complexity and beautified by the most beguiling rancio richness.

One of the finest and most interesting wines in Australia are the Morris Muscats. The unirrigated vines rely on natural rainfall. When very ripe at 16–18 baume, the grapes are hand picked, crushed and fermented on skins for 24 hours before draining and pressing the juice. The wine is topped up with spirit, and the fortified Muscat is matured in large oak casks ranging in size from 1,500 to 4,500 litres until blending. When blending occurs many different vintages are used in order to give lusciousness, richness, age and freshness.

The fifth generation of the Morris family continue to make the most memorable Rutherglen Tawny wines. A sublime, oak matured Grenache Shiraz Mourverdre, evolving marvelous complexity after many years under the estate cellars. Grapes are allowed to remain on the vine until high sugar levels and an intense concentration of flavour develop. After crushing, ferments and pressing, the young wine is fortified with a low strength spirit, as opposed to other styles which are fortified with a higher alcoholic spirit, infuse greater complexity and encouraging opulent palate richness.

Rutherglen Tokay grapes, synonymous with Muscadelle, picked off the Morris Mia Mia vineyard. A selection of wines from different vintages is chosen, each contributing special characteristics to make a wine with complexity of age, youthfulness, freshness of flavour and consistency of style. A concentrated nose showing great depth of malty Tokay character. The palate is complex, intense and luscious, combined with freshness. A superb Tokay of real quality and richness.

The illustrious old Rutherglen vines are reliant on natural rainfall only which rewards with lower cropping vines that can produce fruit of high sugar levels and concentrated flavours. Once the desired Baume level 15° to 16° is reached, pressing occurs, then a high strength neutral spirit is added to arrest the fermentation. The wine is then pumped into casks for the maturation process to occur.

Only the best vintages are selected for the Premium Rare Old Muscat, all releases win significant awards at major international competitions. The ripening grapes are left on the vine late into the autumn harvest season, as long as possible to obtain maximum sugar level before selective picking by hand. On arrival at the winery, the grapes are crushed and allowed to partially undergo fermentation, before draining and pressing, then a high strength neutral spirit is added to arrest the fermentation and fortify to 18% v/v alcohol. The grapes are then transferred into oak casks and barrels to slowly mature for many years.

One of Australia's most internationally renowned wines, a superb Tokay of opulence and splendour. Its heady, fruit laden, honey and butterscotch nose, underpinned by the sweetness of raisin and aged vanilla, an exquisite concentration, smooth, silky textures and soft, warmth of spirit on the middle palate, a graciously drying finish over lingering length of mellowing, festive fruit characters. Assembled from a range of vintages, the older wines bringing an intensity of flavour, rancio and grape tannins, gently imparting the influence of time, as the wines evolve within a selection of seasoned casks and fine oak barrels.

The grapes are left to hang on the vine to concentrate in flavour and sugar. Hand picked, a partial fermentation, before draining, pressing, and fortification with high strength neutral spirit. The wine is then transferred to casks and barrels for many years of maturation, where the wine will concentrate in flavour and gain more texture and lusciousness. When blending the Premium Tokay only the best wines from the best vintages are chosen, all of which have won awards at major Australian Wine Shows.

Noilly Prat is the classic French aperitif, an essential for every cocktail enthusiast, and a natural work of art. The marque was born when Louis Noilly joined forces with Claudius Prat to establish Noilly Prat & Cie in 1855. Masterfully handcrafted at Marseillan for over two centuries to a unique, natural process. The technique replicates the production of the rich, fuller flavoured wines created centuries ago, when stocks were transported in barrel on the decks of ships, exposed to the natural elements for many months at a time.

The historic cellars used for ageing Noilly Prat Vermouth are adorned by a graceful spiral metal staircase built by Gustave Eiffel. Gustave went on to architect and construct Paris's Eiffel Tower. In the small village of Marseillan on the Mediterranean coast, the base wines are contained separately in some impressive century old Canadian oak vats were they are aged for eight months to develop a fully rounded palate and to achieve clarity. The wines are then racked and aged for a further six months before assemblage. Herbs and spices are then added and treated to a process called dodinage, stirred by hand every day for three weeks, gently infusing Noilly Prat with its unique characters.
 
A cool, crisp shade of pale straw. Expressions of sweet and bitter herbs, citrus, vanilla bean and juniper. The perfect drying palate to enjoy on it's own or to include in the finest cocktails. Noilly Prat is created exclusively from blancs de blancs wines, made with the Languedoc varietals of Picpoul and Clairette, enhanced by the addition of Mistelles, a natural grape juice fortified with alcohol, and a mix of fruit liqueurs. A blend of twenty herbs and spices gives Noilly Prat its distinctive aromatic quality. The list includes camomile from Italy, orange peel from Spain, coriander from Bulgaria and nutmeg from Indonesia. The complete recipe and precise quantities however are a closely guarded secret.
Peter Lehmann The King Vintage Port 500ml

Every now and then, Peter Lehmann releases a rare jewel from deep within the cellar. The King is a superb fortified wine of great distinction which has laid undisturbed in the bottle for many years under the Peter Lehmann Tanunda Cellars. Twelve years old upon release, The King is showing the benefits of extended bottle age. A rich and mature cepage of Shiraz with Touriga Nacional, grown to good Barossa vineyards, the King must be decanted carefully, as a vintage Port of this distinction will show some sediment and crust. A treasure of a wine.

Peter Lehmann maintains the tradition of reserving a few barrels of fortified from each vintage and cellaring the bottled contents to mature. A beautifully made wine which has developed a deep velvet appearance and luscious characters with a lift of spirit on the nose. Shiraz and Touriga Nacional are vinified on skins for three to four days, a neutral brandy spirit is then added to arrest fermentations. Following a further ten days maceration on skins, batches are pressed, clarified and aged twelve months in a selection of older oak barrels. Components are racked and assembled, bottled and held under the Peter Lehmann Tanunda cellars for maturation until ready to release. The King is a vegan friendly wine. Alcohol 19.0%
 
Deep mahogany colour, brick robes. Deeply complex bouquet showing hints of liquorice and black cherries, almond and festive cake. The palate shows wonderful richness, full of nutty complexity and fine fruited, without being cloyingly sweet. Whilst richly mouthfilling, The King shows a taut structure and finishes remarkably velvety, spicy and dry, as do all the great Ports of the world, an intensely regal wine.

Pirramimma holds amazing stocks of priceless old wines that have been racked and cellared with the sleight of hand which only a master of the Portwine genre can command. Incredible winecraft stemming from the trans generational expertise at handling refined and prior use old wood barrels, the batches are only blended and released when the time for each individually aged wine is right, never before. This richly flavoured Old Digby is assembled from stocks of well aged Shiraz and Grenache wines and, fortified with brandy spirit and matured in small oak cask for many years.

Port was the Duke of Wellington's favourite tipple. He indulged in a glass or two each night before retiring, including the evening before famous battles. Many of Wellington's officers were from the Oporto family of Port producers, they fought alongside Wellington at almost every engagement against Napoleon during the Peninsular war. Their descendants are still in the industry, the Symingtons now operate the most prestigious marques in Vintage Port.
