A single vineyard Chenin Blanc, sourced entirely from mature vines on the Kalleske farm, wild fermented and partially barrel matured to achieve an articulately varietal yet engagingly complex wine. Florentine gets her name from Caroline Florentine Kalleske, the first daughter of Johann Georg Kalleske who migrated to Australia from Prussia in 1838. Florentine is a true hand crafted wine that's been grown, vintaged and matured on the Kalleske estate farm, near the hamlet of Greenock in northwest Barossa.

Florentine is from a single block of Chenin Blanc on the Kalleske property, which was planted in 1988. The vines are low yielding, the soil is shallow sand with clay subsoil. Grapes are harvested throughout the cool of night and whole bunch pressed for a cold settling prior to racking. The juices are completely wild indigenous yeast vinified, half is treated to a mix of French and Hungarian oak hogsheads, the balance is sent to fermenters. A course of partial lees stirring is employed upon completion of ferments for added texture and complexity. The wine final wine is assembled and bottled after several months of barrel age. Florentine is 100% Australian Certified Organic.
 
Pale straw hue. Intriguing nose of fresh apple, cut hay, honeysuckle, quince and a hint of almond. Medium bodied with intense fresh fruit supported by subtle barrel ferment characters. Well structured with crisp acid balanced by a lightly creamy texture and hint of minerality. Fresh finish and persistent length completes a complex and classy wine.

Lindauer Sparkling Brut

A prominent NZ dry style sparkling wine which can be served as aperitif or alongside cuisine, Lindauer is not completely dry, but close enough to be refreshing. It offers aromas of hot baked brioche and light fresh fruit to lay aside its brightly foaming texture. Full on the palate with a pleasant, steady mousse and elegant aroma, yeasty and toasty from prolonged bottle maturation on lees, crisp, complex and well balanced, with a full flavour and lasting finish, cool and delicious, this is the epitome of celebratory wine.

The cuvee stays on lees an average of 15 months and when the cuvee is considered to have aged on lees sufficiently, the yeast is removed and the wine sweetened. The blended base cuvee has sugar and yeast added and is then bottled. The bottles are laid on their sides in bins, inside temperature controlled cellars to undergo a secondary fermentation in the bottle. The fermentation lasts six to eight weeks, during which time the sugar is converted to alcohol and CO2. The CO2 pressurises the bottle and gives Lindauer her bubbles.

An exciting innovation in a Methode traditionnelle, enriched by strawberry. A component of Pinot Noir is treated to extended time on skins for perfect uptake of charming rose colour, to be blended back with Chardonnay after primary ferments. The Cuvee stays on lees an average of fifteen months, sediments are removed and the natural strawberry richness is infused. Gold pink salmon hues, her subtle strawberry bouquet is complexed by underlying yeasty toast notes, a decadent palate of moreish red fruits, elegance, stylishness and finesse.

Grapes are hand picked off vines growing to clay, chalk and silica soils. Parcels are treated to a pneumatic press, the exclusively free run juices are treated to a day or two of cold soak. Batches are vinified in fermenting vats for two months at a controlled 18C, followed by a term of maturation on sedimentery yeast lees before bottling.

The sparkling wines of Valley Loire are known for their vitality, freshness and affable drinkability. Marc Brédif was established 1893, one of the oldest maison in the commune, it remains the largest, a pioneer of the gently pétillant style of Vouvray sparkling.

Parcels of Chenin Blanc are normally harvested around October, off fully mature vines, twenty or more years of age, planted north to south on the clay limestone hillsides of Vouvray and Vernou sur Brenne. Bunches are selectively hand picked and sorted into crates, keeping only the healthiest grapes for vinification. Fruit is treated to a pneumatic press, the finest runs are retained and cold settled for a day or two. Juices are vinified for a month at a controlled 16C, to preserve fruit character while enhancing complexity. A component of reserve wines are included in the assemblage, bottled for two and a half years under cellar at 12C, followed by degorgement and liqueur dosage.
 
Straw gold hue, a supple effervesence. Stonefruits and honeyed citrus notes, light jasmine and apple notes. Creamy palate offering good weight of fruit, a clean, revitalizing sparkling showing developed fig characters behind fresh cut citrus, pear and apple flavours. Marc Brédif have long held access to the finest Chenin Blanc vineyards. Grapes are hand harvested in successive passes through the choicest blocks, off vines up to seventy years of age, planted to the vineyards of Vignes Blanches, Tabourneau and Mialet, growing on the first slope up the banks of River Loire, in the communes of Vouvray and Vernou sur Brenne. Only the ripest and healthiest grapes are considered for inclusion. Parcels are treated to a pneumatic press, the exclusively free run juices are treated to a day or two of cold soak followed by vinification in traditional fermentation vats. Upon completion, the wines are held on sedimentery yeast lees for eighteen months before bottling.
 
Beautiful bright straw green hue. Intense nose develops into ripe bouquets of loquat and white nectarine, gingerbread and floral, nutty fruit notes and pastoral charm. A soft palate exhibiting a balance of evolved fruit characters and lovely freshness, almonds, honey and tinned pear, before a clean acid finish on lingering notes of apple and orange blossoms. Match with fondue and elegantly presented white meat recipes.

Ancient troglodyte cellars, which contain local wines over a hundred years of age, were carved into the underlying chalk during the tenth century, among the finest and most extensive Chais in Valley Loire.
