Temple Bruer is Australia's largest certified organic winery, boasting over thirty years of experience. The wines remain on the property from picking to bottling under exclusive control of the dedicated team. Temple Bruer has long held to the philosophy that responsible farmers, of which winegrowers are merely one example, should aim to minimize chemical inputs into the environment. Additives-free vinification is applied to Cabernet Sauvignon, Merlot and a component of Cabernet Franc grown to the Temple Bruer estate vineyard. Treated to an open fermentation, gentle pressing and maturation in French oak casks. At bottling, Temple Bruer was filtered to ensure long lived quality.
 
Deep red colour. Opens with sweet bouquets of cassis, gumleaf and cocoa, mulberries, red forest berries and mint, regional characters of earth and musk. The palate is full of flavour, beautifully balanced and well supported by fine, mouth coating tannins. Temple Bruer finishes dry on a note of lingering earth and cedar characters.

A solid backbone of Cabernet Franc and Merlot, with smaller components Cabernet Sauvignon and Petit Verdot. Piero Antinori, the icon vintner who created the concept of super Tuscans in the 1970s, was inspired by unique soils along the Upper Maremma to plant Biserno's specialty, the esoteric Cabernet Franc.

Grapes yielding a mere 1½ bottles are selectively hand picked off vines grown to complex silts, alluvial sands, a high percentage of clay and a conglomerate rich in minerals, all very similar to those found in Bordeaux. Berries are further sorted upon arrival to the wineworks, de-stemmed, gently crushed and vinified for three to four weeks at 28C before being treated to full malolactic in a combination of barrels and fermenters. Matured fifteen months in a selection of French oak barriques before assemblage, bottled and treated to another year of ageing under the Biserno cellars before release. Alcohol 14.5%
 
Intense dark, saturated colour. Fragarances of dark fruit, perfumes of cherried oak, scents of liqueured plums, blackberries and spice, notes of sandalwood and mineral. An exceptionally fine palate exhibiting extraordinary length and great succulence of fruit flavour, sweet berry confit and sustained chocolate. A complex yet brilliantly integrated wine of singular balance and restraint.
Terre a Terre Crayeres Vineyard Cabernet Franc

There's more to the spectacular Terra rosa top soils of Crayeres Vineyard than meets the eye, the propitious limestone strata beneath are being researched by the University of Adelaide for a priceless legacy of ancient fossils. Bunches of Cabernet Franc are picked at optimal ripeness and treated to open top fermenters, hand plunged and pressed off after three weeks into a mix of new and seasoned French oak, for an extravagant twenty eight months of age. Defined by varietal black currants and licorice berry jube, soft velvety tannins in support of the fragrant violet bouquet.

Wantirna Estate Amelia Cabernet Merlot
Yarra Valley
Excellent Langtons Classification. Whilst the cepage of fruit to Amelia may be different each year, a backbone of two thirds Cabernet Sauvignon dominates, a third of Merlot and Cabernet Franc ensues, followed by a soupçon Petit Verdot. Favouring the slow ripening of a long growing season, Petit Verdot grapes are always last to be harvested, usually in mid April. It is the the quietly spoken measure of of Petit Verdot which contributes structure, fine firm tannins and good natural acidity, fully approachable while young, she will age beautifully for more than fifteen years.

Bright, deep red in colour. Luscious nose of currants and bramble with slightly savoury characters of olive, bay leaf and thyme. Complex black, blueberry and red cherry fruits on the palate, garnished by tobacco leaf and kept vibrant by bright, currant acids. Well structured with firm yet malleable tannins, a solid, medium to full bodied Bordeaux styled blend to accompany game meats in red wine jus, venison, wild boar or hare.

The Egans spent many vintages amongst the first growths of Burgundy and Bordeaux, before establishing the illustrious vineyards at Wantirna. Inspired by the sublime excellence of Chateau Cheval Blanc, the Egans molly coddled a precious block of Merlot and Cabernet Franc, with a view to emulating the sublime excellence of the great Crus from St Emilion. Crafted from the fruit of the original estate plantings, treated to the luxury of a completely new Dargaud et Jaeglé oak barrique, a mere twenty dozen bottles are made each year.

Woodlands Matthew Cabernet Sauvignon

Cabernet Sauvignon, Malbec and Franc. Woodlands have observed that some parcels of their vineyard produce aromatic ferments, while others are more structured. The finest pickings are treated to small open fermenters enhancing aromatics. Parcels showing greater structure are vinified in small closed fermenters. The best of both worlds, a Cabernet that retains vibrant aromatic fruit whilst gaining structure and adding weight. After a year in exclusively new French oak, the best barrels of vintage are determined and set aside for the final assemblage.

Fruit is sourced from the original estate plantings of Malbec, Cabernet Sauvignon and Franc, on a south facing, sandy loam over gravel clay slope. These small plots receive the greatest number of sunlight hours at Woodlands, the east west orientation of vines ensures a slow ripening, the last parcels to be harvested each year. Fruit is picked late March to early April, destemmed and passed over a vibrating sorting table, crushed and vinified in small closed fermenters, followed by a term of maceration on skins before being pressed for malolactic. Upon completion, batches are transferred to new French medium toast barrels for nineteen months maturation.
 
Deep crimson colour. The nose reveals cassis and mulberry, blackcurrant, violet and toasty French oak. The palate shows deep brooding characters of blackberry, mulberry and briar. A very focused wine, with an array of rich fruit flavours and long grained tannins.

Woodlands Wilyabrup Cabernet Franc Merlot
Margaret River
Very few vineyards yield the quality of fruit that merits vintaging into a statuesque wine dominated by the prettily fragrant Cabernet Franc. Woodlands were established from the ground up with a view to achieving limited harvests of the arcane Bordeaux varietals, only a few hundred cases of good red wine per vintage. There are now two estate vineyards, located within two kilometres of each other in Wilyabrup Valley, dry grown and farmed through traditionally organic techniques. The sanctity of soil yields a vividly varietal Cabernet Franc of finite peerage.

An assemblage of fruit harvested off Woodlands Brook Vineyard in the Wilyabrup Valley of Margaret River. Grapes are picked in small batches, row by row as each parcel achieves complete and optimal ripeness. A special hopper lifts fruit into the air before gently shaking the bunches into the destemmer, which in turn removes stems by swinging a cage from side to side. This process is much more gentle on the fruit, ensuring that shot berries, dry and unripe grapes remain on the stems and out of the wine. Upon completion of ferments, batches are filled to a high proportion of new French oak barrels for fourteen months maturation.
Woodlands Wilyabrup Cabernet Merlot

The archetypal west coast Bordeaux style, a vibrant cepage of Cabernet and Merlot, Malbec and Franc, picked off the first vineyards ever planted to Margaret River. A component from the younger Woodlands Brook site contributes structure and aromatics. Woodlands remains an enigma, as the vineyard team place great trust in the quality of fruit, the finished wine can be both pretty and powerful. Vinified exclusively of Wilyabrup parcels, painstakingly hand sorted, berry by berry, the graceful tannins continue to soften, as the fruit begins to sing.

Woodlands Brook is currently planted to six hectares of Merlot, Cabernet Franc, Malbec and Petit Verdot on a north facing slope of loam soils. Grapes are hand picked, batches are gently crushed and separately fermented to retain integrity of varietals, most parcels are treated to a closed fermentation, a process called upon to retain the intensity and power of fruit. Other smaller batches are treated to open ferments, a technique which enhances aromaticness. Some batches can be treated to full or partial malolactic to add complexity and enhance the integration with oak. Woodlands is transferred to a selection of French oak barriques to be aged fourteen months before assemblage.
 
Intense crimson in colour. The nose shows brooding characters of mulberries, blackberries and dark cherry combined with toasty French oak notes. Best described as classic and refined, the palate is very rich and dense, with considerable weight and power. Woodland finishes with ripe fine grained tannins.

The growing conditions around Xanadu's vineyards, in the form of beautifully still Indian summers, cool nights and clear warm days, are second to none for the production of world class Cabernet Sauvignon. The ideal weather patterns at vintage afford vignerons the luxury to harvest each block as grapes achieve full physiological ripeness. Bunches are crushed and destemmed, inoculated to a variety of select yeasts and vinified in a combination of static and sweeper arm fermenters at 26C over the course of a week. Components complete malolactic before being treated to fourteen months maturation in a selection of new and seasoned, predominantly French oak barriques.
 
Deep red with ruby hues. Vibrant aromas of ripe blackcurrants, berry fruits and dark plum entwined with hints of spicy, toasty oak. The generous palate is packed full of juicy fruits of the forest, cassis and chocolate characters. Full bodied, the attractive fleshy fruits fit into a structure supported by supple tannins, a solid acid backbone and a persistent berry fruit finish. The classic Margaret River Cabernet style, drinking very well in its youth.

Zema excel in the construct of multi varietal Bordelais styled reds. The family is proudly traditional in their approach to vineyard practice, favouring hand pruning and limited irrigation to maximise quality. Demetrio and Francesca Zema chose their ground carefully in 1982. Cluny captures the mood of Bordeaux, the feel and the presence of fine Medoc. A masterfully fashioned cépage of pure alchemy, Cabernet Sauvignon, Merlot and Franc, magically brought forward through the addition of Malbec and patient ageing in smaller oak barrels.

The enduring philosophy at tiny Zema is total commitment to a hands on approach. From soil to bottle, the family manages all aspects of the wine's quality. Zema's traditional vineyard practices of selection and minimal irrigation translate into harvests of the richest and most intensely flavoured grapes. Vines are all hand pruned, starting in June and continuing until August of each year. The key to success of the complex mix of varietals in Cluny is a painstaking harvest of the individual blocks of fruit at optimum maturity for each. Components are separately vinified in a mix of fermenters and oak, followed by fourteen months maturation in a combination of French and American hogsheads.
 
Dark red colour with purple hues. Ripe berry characters with a hint of regional mint and nutty vanillin oak. The palate displays attractive ripe red berry flavours, roundness and complexity. Well integrated oak and supportive tannins, an attractive acidity and full but soft tannin finish. Well structured with outstanding depth, the firm backbone of Cabernet is assisted by Merlot, Malbec and Cabernet Franc. Match with a lasagna of layered beef ragu and wide noodles, pork belly or veal.
