A firm press of grapes for textural sauvage and phenolic grip, is followed by vinification at higher temperatures on gross solids for complexity and charm. Deeply oyster shelled bouquet, brimming with smoky florals, calico and bouquet garni, its juicily drying palate, resolving on a finish of crystaline jube, wet pebbles and savouriness of grilled smoky nuts.

An artisanal emulation of the great white Bordeaux, grown along the left bank of Garonne around the illustrious appellation of Graves. Mostly Sauvignon Blanc, a fifth of Semillon et soupcon de Muscadelle, each row of vine picked just as the intensity in the grapes peaks. An outstanding parcel of Chardonnay, picked off the superlative Drive Block at Funder & Diamond Vineyard, has been treated to the full extravagance of French Grand Cru techniques, big boned, opulent and textural, in uncannily Burgundian styling.

$8499each $1019DOZEN EACH DOZEN Drive Block was established to Chardonnay clone P58 in 1990, closely planted to the red volcanic soils of Wandin East on a north facing slope at 240 meters above sea level. Grapes are all hand picked and sorted prior to whole bunch pressing directly to a selection of seasoned and new French oak puncheons for a naturally wild, indigenous vinification. Upon completion, batches are retained on gross sedimentery solids for ten months, followed by a further six months, a single filtration and the final assemblage. The extended term on fermentation lees builds layers of rich flavour, creamyness and mineral complexity, infusing luxurious textural richness.

Straw colour, greenish hues. Ripe white stone fruit, flints and toast, vanilla and brioche, poached quince, ripeness throughout, fullness, an opulence of fruit. Established to deep red basalt soils by family Shelmerdine in 1985, Lusatia Park at Woori Yallock in the upper reaches of Yarra Valley, is a very demanding site. Vines are all closely planted and require a lot of work but the quality of harvest is spectacular, consistently yielding vintages of urbane, mineral infused Chardonnay. Fruit is all hand picked and whole bunch pressed, treated to full malolactic and battonage. Its voluble palate of oatmeal, almonds and brioche, is tightly structured, taintless and refined, defined by its crystal elegance and briny, lingering finish.

One of the Yarra Valley's original vineyards dating back to 1862, St Huberts currently operates four blocks of distinguished Chardonnay vines. Planted on a gentle slope of well drained grey loamy soils, the fruit from these parcels provides the backbone to one of Victoria's most stately Chardonnay wines. The princely berries translate into a beautifully aromatic bouquet and rich palate, slightly citrus, set against a background of grapefruit, apple and melon flavours all bound together by suggestions of cool climate mineral and French vanilla oak.

$2799each $335DOZEN EACH DOZEN St Huberts Vineyard is gently sloping, thus maximizing drainage and preventing the vines from getting wet feet. Careful management using three trellis systems ensures that each block of vines fully ripens, but also adds complexity to the finished wine. Chardonnay is sourced from the St Hubert property and mature mature Yarra Valley vineyards. A high solids juice, extracted from the pressing of whole bunches and destemmed grapes, is fermented in a mix of new and seasoned French oak. Minimal handling ensures that the fresh varietal fruit and integrated oak characters remain in balance. Batches are treated to maturation on yeast lees, a small component completes malolactic to add texture and palate weight.

Light to medium straw, hues of green. Nutty barrel ferment aromas with lifted notes of peach and pear, given complexity by hints of citrus peel and toasty, nougat oak. Generous and rich on the palate, stonefruits, honeysuckle and spicy oak, even and restrained. The finish is tight, with lingering citrus and creme caramel notes.
