Chrismont have been growing the King Valley's finest fruit and crafting exceptional wines for over three decades. Somewhat of a specialist at the high altitude styles, Chrismont have fashioned an immensely popular sparkler with pleasingly drying palate in the delightfully food friendly, fruit forward character of Proseccos from the Friuli region of northeastern Italy.

Chrismont are well positioned with the most splendid vineyards and ideal locations on the beautiful King Valley, all of which combine for that sense of place known as terroir. With a similar climate and landscape to Piemonte and Tuscany in Italy, long summer days enable the grapes to achieve genuine flavour ripeness which gives lovely fruit richness to the wines, while cool nights allow elegant cool climate characters to emerge. La Zona are designed to drink any day, at any time, for any occasion. Crafted to the true Methode traditionelle which ensures richness of palate and fullness of texture, La Zona has been treated to a second fermentation within it's own bottle.
 
Pale straw coloured with green hues, a lovely bead and fine mousse. Nose of melons and citrus, green apples, almond and honey. The front palate bursts with dry, delicately flavoured bubbles. A crisp but not overly acid palate supports the bubbles through to the finish. A great aperitivo and ideal accompaniment to oysters, scallops, and crab. Drink young and fresh.

Hillcrest Road was established to one and a half hectares I10V clone Chardonnay in 1993, with a view to creating a limited release, flagship Mornington sparkling Cuvée. Over two decades later, the cosseted vines are yielding a harvest of the most exquisitely balanced fruit, intensely tropical in nature, invigorate by the most refined chalky acidity. Treated to the luxury of full Methode traditioneele, an extravagant three years bottle maturation and remuage on yeast lees, brimming with the finest mousse and articulating the opulence of autolysis richness.

Fine bead and elegant mousse. Puff pastry, custard and citrus tart autolysis behind the purity of cut green apple, white flowers, lemon and almonds. Linear, energetic and driven yet its intensity is cloaked in a pillowy mouthfeel. Plenty of extension through a drying, faultless finish.

Cofield Sparkling Shiraz

To maintain the unique qualities in their Sparkling Shiraz, Cofield have chosen to create a more complex and complete wine by blending small amounts of older vintages. Crafted to the traditional Methode champenoise, Cofield is treated to an ancient process called tirage, where sugar and yeast are added to the base wine, initiating a second ferment in bottle. This is what creates the sparkle, infuses complexity and introduces texture.

Dark ruby with crimson edges and a creamy mousse. Bouquet exhibits sweet red fruit and chocolate with hints of nutmeg. The palate reflects the nose and shows rich red fruit with dark chocolate and spice. Mouthfilling with great complexity and length.

Cofield practice careful hand picking of fruit and rigorous barrel selection to enhance the ultimate quality in their wines. The careful culling of fruit and barrels also leads to smaller production, limiting quantities of each wine from between 100 to 600 dozen, dependent on vintage quantities and quality. Cofield take aim at assembling one of Australia's most essential sparkling red wines each year, based on the best stocks from the finest vintages.

Francois Coueslant was a pioneering viticulturalist who made a major contribution to bringing Australian wines to the world. Winemaker manager at Tahbilk from 1877 to 1886, described in the Australasian at the time as a practical vigneron from France, a gentleman of progressive ideas, ever ready to adopt new and improved methods. Coueslant successfully lead the fight against the vine killing phylloxera louse, built the iconic estate tower and added Chateau to the Tahbilk label, a moniker which remained in use until 2000.

Australia has borrowed Prosecco from the Italians. Prosecco comes from grapes you probably never heard of (Prosecco mostly, but can also contain Verdiso and splashes of Pinot Bianco or Pinot Grigio). Cuttings have been planted in the King Valley in Victoria, where the Dal Zotto family have produced Australia's first sparkling Prosecco.
 
Brilliant straw yellow, enlivened by its perlage, strands of tiny bubbles. It's aromatic quality is fresh and rich, fruity aromas of apple and pear with a hint of citrus fruit which fades into the floral bouquet. In the mouth it is soft, yet at the same time dry thanks to its good acidity. This wine from the Dal Zotto family is austere, subtly flavoured and has a finish as dry as a wind-blown leaf.

Dominique Portet grew up amongst the vineyards of France and appreciates the rejuvenating qualities of blush coloured wines. The vibrance of Yarra Valley Chardonnay is dominated by a slightly larger component of savoury Pinot Noir, all grown to good local vineyards and fashioned into the cultivated French interpretation of Rosé. The tide has turned in Australia towards the refreshing, savoury styles which have always been heralded in France. Ready to drink when slightly chilled, Dominique Portet is the pink sparkler of choice to enjoy at every occasion.

Portet is the ninth generation of his family to be committed to winemaking, yet he is the first to establish a winery and label bearing the family name. Brut Rose is a cepage of Pinot Noir and Chardonnay, grown exclusively to fine vineyards in the cool districts of Yarra Valley. Brut Rose draws on centuries of French tradition, bottled fermented and disgorged shortly before release, receiving only a small amount of red wine and a light addition of liqueur tirage. Grapes are all hand picked, gently pressed and vinified before being treated to secondary fermentation inside its own bottle. Aged and tiraged for two years under the Dominique Portet cellars, disgorged and lightly dosed prior to resealing and release.
 
Deep salmon pink colour with a a creamy mousse and persistent bead. Fresh strawberries and rose petals on the nose, nuances of stonefruit and hints of light bread spice. Red berry flavours and tangy rhubarb characters, peaches and red delicious apple follow through to the fresh and dry, creamy finish. Without a doubt, this sparkling sensation will add something special to boardroom luncheons, long languid dinners and discrete soirées.
