Excellent Langtons Classification. The Dalwhinnie vineyard is situated on the 37th parallel, within a unique amphitheatre which has its own unique mesoclime. The poor fragile soils left over from alluvial mining projects in the early 1800s are some of the hardest and hungriest anywhere. The first Shiraz vines, planted to the Grand Piano Block, were rootlings from the eminent Sunraysia Nurseries at Mildura. The site is totally frost free and harvests achieve complete physiological ripeness nine out of ten years, all vintage releases must surpass expectations.

Full bodied, single block Shiraz of controlled power and amazing grace, crafted from a small parcel of precious fruit, picked off a rare clone, transplanted to Moonambel from an ancient Barossa vineyard in 1997. An opaque, masculine wine treated to an extended term of age in an extravagant choice of medium toast Allier French oak, its virile bouquet of musky jube aromas and seasoned sandalwood precedes a voluminious palate of dark berries, bramble and cassis, a wine of intense concentration supported by the splendour of masculine, savoury tannins.

From a single precious block, planted to an inhospitable reef outcrop, dynamited for levelling and planted to the eminent Concongella clone of Shiraz in 1995. The dry and bony soils yield meagre harvests of the most amazing concentration, parched little berries bursting with flavour and lined with velvet tannins. Grampians Shiraz of the highest order and most distinguished peerage, its amazingly rich perfumes and bridled elegance, black fruit characters throughout, black cherries, black raspberries and black roses, salacious yet refined.

The natural endowments of the land and consequence of closely hand managed vines, achieves a bounty of the most exquisite Shiraz, treated to a combination of old world vinification techniques, whole bunch inclusions and boot treading, aged in well seasoned, large format oak. The viticultural team take aim at harvests of Shiraz, showing excellent ripeness, fine tannins and an abundance of flavour. Grapes are hand picked and hand sorted over a triage table. A combination of whole bunch and whole berries are tipped into open fermenters and treated to a course of foot plunging, followed by rack and returns and more foot plunging toward the end of vinication. Batches are treated to three weeks of maceration and ferment through the action of wild indigenous yeasts. Components are pressed, settled overnight and gravity filled to a selection of 500 litre and 2300 litre oak casks for a year's maturation at optimal temperatures of 16C.
 
Garnet red colour. Brightly lit, detailed and perfumed bouquet, graphite and mineral notes. Medium bodied and dry, a finely aromatic, plump palate, seasoned by white pepper notes and exhibiting whole bunch ferment characters, supported by a length of grainy tannins and mere veneer of cedar oak. A match to spicy, country style pork bangers and root vegetable mash, drizzled with truffle oil.

Vines at Section A8 of Dixons Creek are strategically planted in a north to south row orientation. All grapes are hand picked throughout the cool of morning into 8kg buckets and transported to the estate wineworks. Fruit is hand sorted as a combination of whole bunches and whole berries are gravity tipped into open fermenters. Fruit is vinified through the action of wild indigenous yeasts, while treated to a regimen of foot plunging and hand remontage to gently extract colour and flavour. After three weeks of maceration and ferment, musts are pressed and settled before gravity filling to a combination of 500L oak puncheons and larger format 2300L casks for malolactic and a year's maturation.
 
Medium garnet red colour. Fragrant and aromatic, brightly detailed, perfumed characters, wild strawberries and graphite, minerals and cherry spice. A fine, plump and structured palate, brimming with dark berry flavours, smokeyness and pepper spice, supported by a whisper of seasoned oak and textural, grainy tannins. The Syrah of choice to accompany piquant fennel pork sausages with lentils and maghrebi spice.

Domaine Chandon Heathcote Shiraz

Shiraz from the Chandon Colbinabbin Vineyard at Heathcote, an auspicious confluence of terroir and clime unlike any other in the world. Deep ferrous soils punish the vines into digging deep for their moisture, infusing grapes with the most ardent, stately tannins. The peaks of Mount Carmel Range further serve to conduct chilling southerlies along fortuitous longitudes, very like the Mistral winds of Vallee du Rhone. Easterly aspects moderate afternoon heat, so essential for an idyllic ripening of Shiraz grapes with extraordinary concentration of flavour.

Bunches of estate grown grapes are destemmed and crushed, chilled and treated to three days of cold soak. Regular pumpovers are applied to ferments throughout the course of vinification, gently extracting colour, flavour and tannin while building body in the wine. A portion is transferred to oak and fermented to dryness, another is set aside and settled for several days of rest, a third remains on skins for an extended maceration. After pressing, all parcels are run to a mix of seasoned and new French oak barriques for completion of malolactic and maturation. After fourteen months, the best barrels are assembled into the finished wine and sent for a further six months of age before bottling.
 
Deep red colour, bright purple hues. Radiant perfumes of berry compote, blueberries and blood plum fruits, liquorice and liqueurs, seasoned by Asian five spice, cacao and carob. Juicy berry fruit flavours flood the palate, piquant spiced plums, cured meats and savoury complexity. Fine, silky tannins throughout, a memorable, everlasting finish. A match to game roasts and corned beef.

Dominique Portet is the ninth generation of his family committed to winemaking, yet he is the first to establish a winery and label bearing the family name. His training began early, at one of the world's most illustrious estates. Portet's father was regisseur (vineyard and winery manager) of the great Chateau Lafite Rothschild. Shiraz is harvested as the fruit reaches the desired levels of physiological ripeness. Following selection and sorting, grapes are inoculated and macerated in fermenters, followed by transfer to a selection of the most luxurious Allier, Nevers and Tronçais French oak barrels for an extended maturation and term of bottle age underneath the Dominique Portet cellars.
 
Deep garnet colour. Nose of bright, ripe red and black fruit, liquorice and freshly milled spice over red and black cherry notes. Delightfully approachable in its youth, the distinctive plum and spicy pepper flavours are supported by smooth but firm tannins. New French oak enhances the complexity of flavour, Portet is a master in the fine art of handling oak without destroying the fruit. A match to duck, steak and the finest cheese.

Euroa Creeks Reserve Shiraz

Euroa Creeks is a hand crafted single vineyard Shiraz, only sixty cases of the inaugural vintage were available in Australia. The eight acres of vine are nourished by a number of creeks that have traditionally brought just enough water to make the land arable. In recent years the area has been drier than usual, vines have truly struggled and tonnages are at their lowest, but the grapes have been packed with flavour. Vintage 2006 was an almost perfect growing season and 110 cases of Reserve were produced. Vintage 2007 was totally wiped out by frost.

Exclusively Goulburn Shiraz, grown by Jo and Andrew Gall, vinified by David Lloyd, owner operator of Mornington's Eldridge Estate. Lloyd was keen to see what happens when a cool climate winemaker delves into warm climate Shiraz. Located a little east of the township of Euroa, the vineyard produces intensely flavoured grapes which are hand picked and crushed in the field over the course of several days. The batches of juices and skins are then brought back to the winery at Red Hill for fermentation, pressing, ageing and bottling. Treated to an extended maturation, Euroa Creek wines are aged in a selection of American and French oak barrels, a high proportion of which are always new.
 
Dark brooding red colour, plum and dark berry hues. An intensely flavoured and perfumed Shiraz in the Rhone style, rich red berry nose with a little cinnamon, vanillan and spice, flavours of plum which follow through to the palate. Euroa Creeks is always rich and powerful, endowed with the classic blackberry Shiraz characters, firm tanins and great length. Vintage 2006 claimed Gold Medal at the 2008 Great Australian Shiraz Challenge.

Fashioned from the fruit of some distinguished old Shiraz vines, what a remarkable Rosé they do make. Picked early at harvest time to retain vitality of fruit and crisp, adolescent tannins. Grapes are pressed off skins during a judicious term of cold soak to infuse the comely blush hues, before being fermented to dry. An adults only style of Rosé, dressed in lipstick hues and adorned by the piquant pink precociousness of strawberries, monte carlo and turkish delight. A gift from the Grampians, to accompany salty pork, seared salmon or recipes calling on prosciutto and fig.
