Buckshot is a reference to the splendid ironstone pebble soils which pervade some of the more propitious Heathcote sites, instrumental in allowing a singular combination of water retention and drainage, while promoting superior root penetration. Small batch winemaker Rob Peebles sources a very special parcel of Shiraz from a unique five acre block, off vines forty years of age, within the eminent Davies Vineyard, an auspicious site which also supplies fruit to the venerable Two Hands and Bindi labels, as well as Domaine Chandon.

Deep garnet hues, dark core. Fully aromatic, pure and intense varietal fruit bouquet, plums, spices and soy, licorice and ferrous characters. Medium bodied palate with bramble and chocolate/ plum flavours kept vital by refined acids and creamy oak textures. Exhibits the classic Heathcote minerality, impenetrable dark fruit and sound tannin structure, culminating in a lingering, long silky finish.

Bobbie Burns has since commanded a peerless reputation for delivering an Australian icon wine that's accessible to all, sharing the power and potency of Rutherglen Shiraz. Showing exquisite balance and structure while drinking brilliantly on release, a splendid red wine to enjoy with confidence, whatever its age, alongside warming meat and potato recipes or spiced and marinated grills.

The Campbells of Rutherglen are a fourth generation winegrowing family dedicated to continuing a tradition established in 1870, of producing artisanal vintages reflecting the distinctive character of Rutherglen. Drawing on their intimate knowledge of local viticulture, Bobbie Burns is a traditional style of wine built around volumes of fruit exhibiting great finesse and subtle use of oak to compliment the full bodied Shiraz fruit flavours. From the eminent Bobbie Burns vineyard in Rutherglen, Shiraz is vinified on skins for a week in a mix of closed and rotary fermenters, followed by transfer to a selection of seasoned and new French and American oak barriques for a year's maturation.
 
Medium red with purple hues. Intense dark plum fruit with hints of ground spice and attractive regional notes of ironstone identify its Rutherglen provenance. Rich, mouth filling blood plum and mulberry on the front palate, fruit tannins and subtle cedar oak add freshness and structure, as firm, fine grained tannins add length to the finish. Delicious upon release, a long history suggests it will continue to evolve for many years.

Parcels of intensely flavoured Shiraz grapes, grown to younger vines on the Chambers Rosewood property, are vinified and barrel aged into a generously flavoured Ruby Port. A spiced cherry, black and blueberry bouquet, complexed by sweetly scented liquorice and the savouryness of tar. Mouthfilling palate of ripe plum and cherry fruits over coffee and dark rich chocolate flavours. An impressive finish of great length and lingering dried festive cake fruit characters. The fortified wine of choice to accompany ice cream based desserts and good coffee.

To maintain the unique qualities in their Sparkling Shiraz, Cofield have chosen to create a more complex and complete wine by blending small amounts of older vintages. Crafted to the traditional Methode champenoise, Cofield is treated to an ancient process called tirage, where sugar and yeast are added to the base wine, initiating a second ferment in bottle. This is what creates the sparkle, infuses complexity and introduces texture.

Dalwhinnie is sited on the most magnificent Shiraz growing terrains. Eagle Shiraz is crafted to traditional Rhone winemaking techniques, foot crushing, whole bunch ferments, extended skin contact and maximum lees contact. The Eagle is a super concentration of unique aromas and flavours, which can only be achieved through some unconventional vinifications. Eagle Shiraz is treated to a traditional Italian basket press and eighteen months in small French oak barriques, Eagle Shiraz evolves sleek, fine tannins and superb integration.

Dalwhinnie is well into its fourth decade of icon Australian Shiraz. Their parched soils atop the inhospitable climes of the Pyrenees yield restricted harvests of parched berries with aromatic, mouth filling spice characters and intense tannins. Just four kilometres along Taltarni Road on the Moonambel valley floor, Dalwhinnie has been pampering younger plantings at the Forest Hut Vineyard established in the 1990s. Now fully mature, these unirrigated and dry farmed, well canopied, vertically shoot positioned vines are producing intensely flavoured Shiraz.

Crafted from parcels of Shiraz grown to the cooler, slower ripening Forest Hut site. The climes are three to four degrees cooler than Dalwhinnie, all year round, so vintage arrives some three weeks later. Vines make the most of the extra time on offer to ripen grapes fully and develop vibrant fruit characters. The Dalwhinnie team know that great Shiraz can only come from a healthy, well pruned vine which has the proper balance of fruit to foliage for even ripening. Grapes are harvested and gently crushed, destemmed and pumped to fermentation tank for two weeks vinification, followed by transfer to a selection of old, well seasoned French oak barriques for maturation.
 
Purple black in colour with a lustre and sheen. Freshly ground black pepper, rosemary, bay leaf and dark plum bouquet with a hint of cinnamon. A big, rich savoury wine, well textured with massive tannin structure. A complex, long and lingering finish.
