The team have assembled harvests of the most amenable Sauvignon Blanc, to be vinified into a refreshing post modern style, brimming with citrus, bright herbaceousness and a touch of quenching minerality. Swan Bay is a real place, located on the Bellarine Peninsula, originally surveyed by Commander Matthew Flinders in 1803. Scotchman's Hill specialize in the pursuit of the best cool climate fruit, grown to vines lashed by the sobering maritime winds of Port Phillip Bay, to be vinified at their renowned wineworks. Swan Bay is an fully approachable style that's generously flavoured, to be enjoyed in it's youth. Harvests of Sauvignon Blanc, grown to good vineyards around the finer viticultural precincts of Geelong, are cool fermented to preserve freshness and vital crisp varietal expressions, bottled to be vigorously fruit driven, completely unwooded and unoaked.
 
Straw green hues. Fragrant and complex, aromas of gooseberry, herbaceousness and tropical fruit. Crisp and dry, balanced by firm acidity, south sea guava flavours dominate the mid palate richness, supported by gooseberry, grassy notes and a touch of honey, mineral background gives the wine an overall balance and freshness. A lovely crisp and clean fruit driven wine, designed to be enjoyed chilled while vital and young.

Made exclusively of Sauvignon Blanc, the trick is to set aside a few parcels of grape for extended skin maceration, infusing just the right amount of tannin complexity. Batches are treated to a wild, natural vinification at lower temperatures in French oak barrels, enhancing perfumery and palate richness, striking the perfect balance between upfront fruit character and textural largess, building structure and encouraging finesse. Sauvignon Blanc is harvested throughout the chill of early morning hours to preserve optimal freshness. Harvested early for the zesty citrus characters and slightly later for blackcurrant passionfruit flavours. Fruit is whole bunch pressed to optimal skin contact, batches are fermented at lower temperatures to retain fragrant aromatics. Components are aged on sedimentery yeast lees while treated to regular battonage, infusing elegance and subtle complexity. A short term of age is followed by assemblage into the finished wine.
 
Pale straw, bright green hues. Fresh and lively nose of lemon and passionfruit notes, guavas, herbaceousness and straw. The refreshingly zesty natural acidity is perfectly accompanied by persistent, sweet fruit flavours, grapefruits and lime, a textural mid-palate from lees contact. An outstanding combination of vibrant tropical fruit and green vegetable characters, before a refreshingly crisp finish.

The Cumming family have farmed in the Bendigo region for fifty years. Ron and Peter have a strong background in horticulture and place a strong emphasis on vineyard management. The emphasis is on producing high quality, fruit driven wines with strong varietal definition and a generous palate. Three new vineyards have been planted at Bridgewater -On- Loddon to enhance complexity and improve overall quality. A conspicuous performer, Water Wheel is one of Bendigo's most highly decorated and internationally renowned winemaking estates.

Sauvignon Blanc vines are planted on light, well drained soils and cropped at three tonne to the acre. Vines are hedged trellised, exposing grapes to the sun achieving maximum ripeness. All blocks are irrigated from the nearby Loddon River through the use of ground level mini sprays. Fruit is harvested to a timetable determined by full physiological ripeness. Parcels are delivered to the winery in pristine condition, crushed and inoculated to select yeasts followed by a temperature controlled vinification in tank. Fermented at 12C to 15C over the course of several days, batches are cold stablilized and earth filtered followed by the final assemblage and sterile filtration to bottle.
 
A bright green straw colour. Water Wheel exhibits grass, lime and lemon citrus overtones on the nose, vegetable characters, asparagus, green bean and kiwi are in the background. The palate shows strong citrus flavours with some mineral characters in the middle, good fruit and acid balance. The wine has a clean, crisp and persistent finish, the ideal aperitif, well suited to seafood, risotto and lighter summer dining.

Grapes are predominantly sourced from good vineyards in the Yarra Valley. Yarra Ridge retains a large inventory of reliable growers, ensuring the highest quality of fruit. Many viticultural innovations have been introduced, among them are trellising systems such as the geneva double curtain, Scott Henry and Lyre. A combination of relatively low yields and limited rainfalls translate into smaller harvests of higher quality Sauvignon Blanc. A cool vinification takes place in refrigerated fermenters with choice yeasts. Juices are kept separate from skins to reduce phenolics and ensure clean varietal flavours are preserved. A prompt and early bottling retains all the fresh fruit characters.

The nose displays bright, fresh aromas of snow pea and green bean, fragrances of honey and spice, hints of nettle, lifted citrus and fresh cut grass, followed by rich tropical nuances. The exciting bouquet leads onto a refreshing palate, showing citrus and gooseberry, flavours of lychee combined with a zesty acidity to produce a refreshing and elegant wine. Yarra Ridge is always outstanding as a food wine, easily mated to Al fresco cuisine, just perfect on it's own or with good company.

Three quarters Semillon, the balance in Sauvignon Blanc, from fruit selectively hand picked and sorted off dry grown estate vines at Gruyere. Grapes are gently crushed to encourage skin contact and infuse flavour, batches are manually basket pressed with minimal settling time before filling to seasoned French oak barriques for primary ferments and a rich course of malolactic, followed by eleven months maturation. A generously proportioned Semillon Sauvignon of ample palate weight and profound generosity of oak developed fruit.
