Minimal chemical input in the vineyard is the priority with a move towards organic viticulture. Block 6 is an elite single parcel of Pinot Noir clone D4V2 Pommard, picked off the most superior rows of low yielding vines. Grapes are hand picked, hand sorted and gently de stemmed into small open fermenters for several days of cold soak maceration. After seventeen days of vinification, batches are pressed off skins into a selection of tight grain, seasoned and new, 500 Litres French oak puncheons for eleven months maturation.
 
Deep crimson colour. Dark forest berries, black cherry, Asian spice with a brooding density of dary fruit characters dominating the bouquet. Multi dimensional palate, concentrated and deeply saturated with dark berry fruit, remarkable for its superb silken textures, Yabby Lake offers great intensity, persistence and a long seamless finish.

It is while grapes are still growing on the vine that great vintages are made, the focus at Yabby Lake is to translate the fruit into a wine without any distortion. The viticulture at Yabby Lake is all about realizing minimal harvests of small bunches and tiny berries, more quality and just a little less quantity. Pinot Noir clones MV6, G5V15 and DV24, from Blocks 1, 2, 5 and 6, grown to the sandy clay loams of Yabbly Lake Vineyard at Tuerong. Grapes are hand picked, hand sorted and destemmed into traditional open top oak fermenters, a fifth is included as whole bunches. Vinifications are hand plunged up to three times daily as temperatures peak at 32ºC, batches are pressed off skins after a fortnight of ferments into a selection of 500 litre French oak puncheons for completion of malolactic and eleven months maturation.
 
Great depth of colour. Ripe black cherry, dark forest berries and asian spice with perfumed oak aromas. The palate displays a complex array of ripe small berry characters and spicy oak. Yabby Lake has excellent density, concentration and pin point balance. It is the texture and mouthfeel of this wine that is most exciting, rich and velvety with intense varietal fruit flavours and a powerful long finish.

Upper Valley fruit, known for it's aromaticness and delicacy, has been combined with components of richer and riper grapes picked off vineyards lower down the valley floor at close proximities to the Yarra Ridge wineworks. The emphasis here is on ageing in seasoned French oak to enhance the fruit, showcasing the velvety nature and sublime cherry, barnyard and rhubarb characters of truly satisfying and memorable Yarra Valley Pinot Noir.

Standards for inclusion into Yarra Ridge Pinot Noir are set to the most exacting specifications. Fruit must express luscious berry characters and distinctive varietal flavours while displaying ripe tannins and favourable acid profiles. Grapes are cold soaked to extract the maximum colour and flavour. Inoculation and vinification is followed by small parcels completing their fermentations in French oak. All parcels underwent full malolactic which softened any harsh acids. Each vineyard parcel is kept separate throughout the winemaking process and reviewed prior to the final assemblage. Yarra Ridge was treated to an extended maturation in a combination of tight grained French oak barrels.
 
Dark cherry red in colour. Lifted aromas of strawberry and spice, a touch of cranberry, earthiness and hints of subtle oak, leafyness and whisps of cedar. Ripe plums and subtle five spice flavours on the tongue, the palate is soft and generous with doses of sweet and sour red and black cherries, the smoothest tannins are fully integrated with background oak.

Yarra Valley is internationally renowned for ultra fine Pinot Noir. The Yering Station team's particular passion for the variety is only matched by the specially trained vines great affinity to the region. The slightly undulating property is planted to some carefully tailored clonal selections. Foot stomping, boots on, is an ancient technique still employed for its uniquely gentle extraction of juices and flavour. The finishing touch to Yering Station's Pinot Noir is an extravagant maturation under the finest French oak foudres, a portion of which are always new.

Grapes are crushed and kept on skins for seven to fourteen days, extracting just the right amount of colours and tannins. Some of the components are wild yeast fermented, as opposed to the easily handled cultured yeast, enhancing the complexity. Batches receive a combination of whole bunch and oak barrel vinification, open and steel roto fermenters for a week or more. As the fermentation begins to gain momentum, a cap of skins and solids forms above the juice, containing much of the flavours which produce exceptional Pinot Noir. The full complement is treated to a course of malolactic and a year's maturation in a selection of 228 and 500 litres French oak foudres.
 
Rich, cherry red colour. Aromas that are bright and dark, cherries and raspberry, vanilla bean spice with a soft dusty, earthy complexity. Medium bodied, delicate soft tannin with well balanced fruit expressive of the cool climate terroir, a beautifully balanced and structured, exemplary Yarra Valley wine, characterized by elegance and grace.

The flagship Pinot Noir by one of Australia's most eminent Pinot specialists, from the best parcels grown to the most precious blocks. The near perfect climes and terroir produce concentrated, intense Pinot Noir berries with profound articulation and remarkable structure. Tiny yields of less than 1½ tonnes to the acre translate into a pure and distinguished wine. As with all Yering Station's Reserves, an edition that's suitably rare and extremely limited, whatever the vintage, the first growth in Australian Pinot Noir.

The vigor of exceptional Yarra Valley Pinot Noir and the enduring expressions of the vineyard are enhanced by sensitive winemaking. Pinot Noir clones MV6 and D5V12, 114 and 115, G8V7 and D2V4 are hand picked off vines up to thirty years of age, trained to trellis vertical shoot positioning, grown on black loam soils covering white and yellow clays. Grapes are whole bunch pressed and cold macerated, inoculated with yeast type Lalvin BGY and vinified in open fermenters to retain fruit. Eighteen days vinification are followed by a term on skins before completion of malolactic and a year of age in a selection of seasoned and new 228L French oak barriques and 500L puncheons.
 
Medium garnet red. A perfumed nose of intense black cherry and spice with subtle charry oak and lovely complex whole bunch characters. An elegant and rich Pinot Noir with flavours of cherry kernel and plum enriched by savoury, spicy oak. Yering Reserve reveals excellent balance, before finishing silky, long and fine. Drinking brilliantly upon release and will continue to evolve beautifully.
Yering Station Village ED Pinot Rose

Winsome and engaging, a tawny salmon hued wine, crafted exclusively from estate grown Yarra Valley Pinot Noir, one of Australia's finest. The grapes are treated to skin contact in open fermenters, infusing the wine with colour and tannins in the traditional Tavel style. Yering Station then spends a brief spell ageing in larger seasoned oak barrels where it integrates and mellows. Slightly less acid than most other Rose, whilst the strong for its style oak character and complex Pinot Noir fruit, contribute to the mature, extra dry, adults only styling.

Pinot Noir clone MV6 hand picked off mature vines, yielding 2½ to 3½ tonnes/acre, grown to grey clay over yellow clays, trained to trellis vertical shoot positioning. Inoculated with yeast type Lalvin BGY, bunches are given up to a day of maceration on skins, soaking up the distinct colour which makes the attractive Rosé hues, taking on board just the right amount of tannin. Treated to a whole bunch carbonic maceration, the temperature is allowed to peak at 22C, fermented to dry over the course of a day or two. Components are sent for a short spell, typically one to four months of age, in a combination of 228 litres Vosges and Bourgogne Chatillon French oak foudres.
 
Salmon pink in colour. Elegant lifted red fruit aromas of cherry and red currant with a touch of rose hip, Turkish delights and spice. Delicate fruit flavours on the palate, complemented by floral notes and subtle tannins. Mouth watering softness with the crisp and trademark, extra-dry finish. A mouth watering wine to be enjoyed slightly chilled over smoked salmon, goats cheese and hors d'oeuvres.

A harvest of Pinot Noir, clones MV6 and 777, much of it hand picked off fully mature vines up to fourteen years of age, are collated from good Yarra Valley sites which can yield the quality of fruit requisite of Yering Station. Grapes are treated to a cold soak for the extraction of colour and tannin before inoculation to choice cultured yeasts. Batches are vinified on skins in traditional five tonnes open fermenters over the course of a fortnight, followed by transfer to a selection of new and seasoned 228 litre French oak barriques for the completion of malolactic and a year's maturation.
 
Crimson colour, cherry robes. Bouquet of red and black cherry fruit complimented by brooding earthy undertones, hints of violet and lavender, briars and licorice elements over subtle savoury spice. Velvet textured palate that's rich in black cherry spice flavours, savoury varietal rhubarb and cherry tomato characters are surrounded by vanillin oak. A lovely concentration on the middle palate is supported by sleek and supple tannins.
