The long slow ripening produces an exceptionally well balanced style of Pinot Gris with heightened acidity and brisk natural fruit characters. Parcels of Pinot Gris grown to a splendid site, high up the Eden Valley, atop bony, rocky soils, are picked a little later in the season to make a more textural style of wine. Following harvest, grapes are crushed and the juices drained immediately away to ensure a finished wine of delicacy and softness. A small portion is inoculated in French oak hogsheads to create a Pinot Gris of characteristic barrel ferment richness, the balance is treated to vinification in chilled fermenters to retain the urgency of Eden Valley fruit. After a few weeks on sedimentery yeast lees, components are assembled, stabilized and bottled early to preserve freshness. Alcohol 13.0%
 
Delicate colour with a green tinge. Bouquet of freshly cut pear, blossoms and pine nut, nashi and quince. The palate is rich and soft, offering lemon zest stonefruit flavours, hazelnut and vegetable, textural with a mineral crunch, before a pleasingly dry finish. Drinking beautifully now, serve lightly chilled alongside pan fried salmon or prawns, roast pork or chicken mushroom pie.

The hamlet of Lenswood in Adelaide Hills produces wines of outstanding quality and distinctive character. Two eminent and long established winegrowing families have come together to nurture a distinguished vineyard amongst the undulating aspects. Pike & Joyce construct a brightly lit Pinot Gris without the oiliness or fatness that's sometime associated with the variety, drinking beautifully upon release.

The Pike & Joyce vineyards are amongst the highest in Adelaide Hills at five hundred metres above sea level, giving the wines excellent natural acidity. The steep sloping terrain reduces the risk of frost. Vines are all hand pruned and handpicked, the fruit is chilled overnight in the Joyce cool rooms, before being transported to Pike's Clare Valley winery for vinification. Traditional old world techniques and modern Australian winemaking are incorporated to produce a style which reflects the variety and region. The fruit is lightly crushed and destemmed prior to pressing and fermentation. A brisk bottling upon completion captures and preserves the lovely Pinot Gris fruit character and Adelaide Hills charm.
 
Medium to pale green hue. Subtle notes of yellow peach and nectarine, nashi pear and nutmeg along with a little of the river stone minerality for of Adelaide Hills Pinot Gris. Medium bodied palate showing the flavours of stone fruits over a gentle creaminess which contributes texture and length. Well balanced acidity maneuvers the wine away from finishing heavy or cloying.

From vines planted in the 1990s, to estate vineyards in Tamar Valley and around Pipers Brook. The fully ripe expressions of West Tamar are balanced by the naturally high, flavoursome malic acidity derived from Pipers Brook, achieving a tight, refreshing and complex style. The vines are meticulously hand tended, maximizing exposure of the bunches to the sun, realizing harvests with the most intense flavours. A generously complex wine of remarkable intensity, courtesy of the natural skin tannins, so ideal with antipasto, oven roasted turkey or white game.

Pinot Gris ripens quickly in all but the coolest of climates, it's ideally suited to the temperate Tasmanian season. Crop levels are kept low by selective bunch thinning to maximize intensity of flavour. Grapes are hand harvested throughout the chill of early morning. Fruit is crushed and immediately processed, the philosophy being to capture and retain the delectable characters of Pinot Gris while still on the vine. Parcels are pressed and treated to a short period of skin contact, extracting additional flavours which are locked away in the skins, this creates a more complex, rich and savoury style of Pinot Gris. Juices are slowly vinified at lower temperatures in a mix of barrel and fermenters, followed by early bottling.
 
Copper straw hue. Complex bouquet with a lovely depth of aroma, blooming with fragrant pear, jonagold apple, tangelo zest and goji berries. Jasmine and potpourri, subtle nutmeg notes. The palate is generous, full bodied and dry, poached pear flavours, strudels and paw paw, ginger and cinnamon spice, finishing with a fine chalky, mineral dryness.

Pooley Estate Gewurztraminer

From parcels of toothsome Tasi Traminer, selectively harvested off the pick of fully mature vines. Bunches are destemmed and treated to an overnight soak before a course of well chilled ferments on gross solids. A stretch of rest on fine sedimentery lees tightens the palate and softens the tangy white grape tannins. The adorable auras of rose petal, pot pourri and fragrant caravan spice, juicily ripe quinces, orange fruit gums and a beam of sunshine. It's the topical tryst of Traminer that's full of flesh and bedecked with oodles of more moreish Turkish delights.

An assemblage of parcels Pinot Gris from the Home and Rocky Point vineyards, two warmer sites of Central Otago which yield a magnificently aromatic Pinot Gris. Hand picked grapes are whole bunch pressed and treated to an Alsace style of vinification, wild yeast ferments in small vessels followed by an extended term of age on sedimentery lees for texture and palate richness. Listed on Heston Blumenthal’s Fat Duck winelist and Winner Air New Zealand Fine Wine, Prophets Rock Pinot Gris is defined by its wonderful quince perfumes, mineral structure and remarkable freshness.

Rabbit Ranch Central Otago Pinot Gris

Rabbits and livestock coexisted on the Central Otago sheep station for many years, but the four legged grazers couldn't keep up with the nocturnal activities of wild bunnies and became hopelessly outnumbered. They were driven off the land and were last seen heading north. The owner of Rabbit Ranch tried a number of measures to clean the property of rabbits but was unsuccessful. In the end, Mr McGregor decided to find a recipe for rabbit, appetizing to all, which would rid him of his rodent problem, while providing a suitable culinary match to his own, home grown Pinot Gris wine.

Being a mutation of Pinot Noir, Pinot Gris revels in the same growing conditions which have made Central Otago known around the world for rich Pinot Noir wines. A long slow ripening period with cool nights and warm days, ripens grapes to the fullest. Rabbit Ranch was once a high country sheep station with an acreage or two of productive vines. The property fell into decline after the second world war, until direct descendants of the original proprietor, Warren and Betty McGregor decided to replant the vineyard, the rest as they say is history. Rabbits still run wild on the property, fuelled by high altitude Pinot Gris grapes, some are reputed to be the size of ponies, but that could be another tall story.
 
Pale straw colour with citrus hue. As soon as you lift the glass this wine will literally leap into your senses like the startled rabbit it is. It is bounding with fresh fruit aromas and flavours of the vegetable garden, apples, pears and honeysuckle. This wine is a veritable smorgasbord of tastes. A mineral acidity backbone and an off dry finish that gives the wine a delicious structure and refreshing style. Apparently it is the energizer bunny's favourite tipple.
