Exclusively Mendoza clone Chardonnay, hand picked off the propitious vines at parcel 1 of the illustrious Block 6 at Yabby Lake's Tuerong vineyard on the Mornington Peninsula. Grapes are crushed and pressed along with the complete solids into a selection of seasoned and new, tightly grained 500 litre French oak puncheons, naturally vinified for three weeks through the action of wild indigenous yeasts, followed by eleven months maturation. Block 6 is an elite single parcel of Pinot Noir clone D4V2 Pommard, picked off the most superior rows of low yielding vines. Grapes are hand picked, hand sorted and gently de stemmed into small open fermenters for several days of cold soak maceration. After seventeen days of vinification, batches are pressed off skins into a selection of tight grain, seasoned and new, 500 Litres French oak puncheons for eleven months maturation.

Fruit is hand picked and each block is handled separately to ensure individual parcels achieve their ultimate potential. Bunches are gently whole pressed through small batches into a selection of seasoned and new, tightly grained 500 litre French oak puncheons. Vinification commences naturally through the action of wild indigenous yeasts and is complete in a little over a fortnight. Yabby Lake is matured eleven months on gross sedimentery lees without any malolactic treatments, before identifying the best barrels for assemblage into the finished wine.

Welcome to Block 2 of the Yabby Estate vineyard at Tuerong, the viticulture here is all about persistence and vigilance, coupled with a deep seated passion for making supreme wine. The combination of a warm site in a cool region means that Pinot Gris ripens in good order to produce wines of outstanding quality. Crop levels are carefully managed to produce the consumate Pinot Gris. Fruit is all hand picked, whole bunch pressed and wild yeast fermented, followed by a course of age on yeast lees to infuse textural palate richness.

Pinot Noir clones MV6, G5V15 and DV24, from Blocks 1, 2, 5 and 6, grown to the sandy clay loams of Yabbly Lake Vineyard at Tuerong. Grapes are hand picked, hand sorted and destemmed into traditional open top oak fermenters, a fifth is included as whole bunches. Vinifications are hand plunged up to three times daily as temperatures peak at 32ºC, batches are pressed off skins after a fortnight of ferments into a selection of 500 litre French oak puncheons for completion of malolactic and eleven months maturation.

Great depth of colour. Ripe black cherry, dark forest berries and asian spice with perfumed oak aromas. The palate displays a complex array of ripe small berry characters and spicy oak. Yabby Lake has excellent density, concentration and pin point balance. Yabby Lake begin with a commitment to listen to the land. To grow only the right varieties, the right clones on the perfect sites, row by row, vine by vine. Hand picked grapes and a measure of whole bunches from a single estate vineyard at Teurong are sent to traditional open top fermenters for a fortnight of vinification. Batches are pressed into 500Litres French oak puncheons for malolactic and a year of age. Fully bunch pressed as per traditional methods specialized for the purpose of crafting the finest sparkling wines. A complex and rigorous regimen of procedures takes at least three years to complete. Each bottle is treated individually from the time of tirage to release. The extravagant use of lees ageing, extended period of at least three years resting on it's own sediments in bottle before disgorgement, has contributed marvelous complexity and heightened flavour profiles to the finished wine.
