The illustrious old Rutherglen vines are reliant on natural rainfall only which rewards with lower cropping vines that can produce fruit of high sugar levels and concentrated flavours. Once the desired Baume level 15° to 16° is reached, pressing occurs, then a high strength neutral spirit is added to arrest the fermentation. The wine is then pumped into casks for the maturation process to occur.

Rutherglen is possibly the only productive enclave of world class Durif wines anywhere on earth. Morris draw upon barrels of maturing stock from across several vintages to assemble a generously flavoured yet brilliantly integrated red wine, before initiating a secondary bottle fermentation and liqueur doseage. Historically Shiraz has been the variety used in Australian sparkling reds, but by adding components of the world renowned Rutherglen Durif, extra complexity and balance has been imparted to the flavour. A range of older vintages are balanced against younger wines, which are used to provide the fruit lift. After assembling all components, the wine is bottled with an addition of Rutherglen yeast and allowed twelve to eighteen months contact before disgorging and resealing under tirage.

Crimson, a generous purple mousse. Rich fruit bouquets, Shiraz spice, yeast complexity and a hint of oak maturation. Rich and full flavoured palate, plum and blackberry and fruit jam flavours, chocolates and dusty carob over gentle, soft tannins. The powerful flavours linger long, complex and rich, a strawberry tang and licorice spice balance the excellent sweetness.

The ripening grapes are left on the vine late into the autumn harvest season, as long as possible to obtain maximum sugar level before selective picking by hand. On arrival at the winery, the grapes are crushed and allowed to partially undergo fermentation, before draining and pressing, then a high strength neutral spirit is added to arrest the fermentation and fortify to 18% v/v alcohol. The grapes are then transferred into oak casks and barrels to slowly mature for many years.

Following the crush, a partial fermentation is initiated before pressing. A specially selected low strength spirit (alcohol with character) is added to arrest fermentations and fortify the young wine, followed by transfer into a selection of old, seasoned oak barrels and casks for several years to develop the inimitable aged rancio tawny characters. Only the best casks, some as old as forty to fifty years of age will find their way into Old Premium.
