Cofield Sparkling Shiraz
Rutherglen
Available in cartons of six
To maintain the unique qualities in their Sparkling Shiraz, Cofield have chosen to create a more complex and complete wine by blending small amounts of older vintages. Crafted to the traditional Methode champenoise, Cofield is treated to an ancient process called tirage, where sugar and yeast are added to the base wine, initiating a second ferment in bottle. This is what creates the sparkle, infuses complexity and introduces texture.

A totally edifying drink to acccompany ripe, tasty cheeses or char flamed grills, heaven sent for rare sirloin, the perfect match to venison and gourmandise game.

The finest parcels of Rutherglan Durif are harvested and crushed into open fermenters. The small berries yield a great concentration of flavours with high alcohol, dark colour and soft tannins, making a style of wine that's renowned for structure and longevity. Vinification is controlled, initially at cooler temperatures to maintain fresh varietal fruit characters, gradually rising to warmer temperatures, for optimal extractions of good colour and fine tannins. After several days of open ferments, batches are pressed into an equal balance of seasoned and new, American and French oak hogsheads for completion of malolactic and two years maturation before the final assemblage.

Deep brickish red with purple hues. Lifted fresh aromas of ripe blackcurrant and spicy fruits, complexed by a subtle influence of cedar. Rich, supple, concentrated berry flavours integrated with fruit and oak tannins, a very good length of flavour.

One of the finest and most interesting wines in Australia are the Morris Muscats. The unirrigated vines rely on natural rainfall. When very ripe at 16–18 baume, the grapes are hand picked, crushed and fermented on skins for 24 hours before draining and pressing the juice. The wine is topped up with spirit, and the fortified Muscat is matured in large oak casks ranging in size from 1,500 to 4,500 litres until blending. When blending occurs many different vintages are used in order to give lusciousness, richness, age and freshness.
